A very easy very yummy taco soup. This version is vegetarian but you can add shredded chicken very easily.

Steps:
- Do not drain the cans!
- Put in slow cooker until warm.
- That's pretty much it.
- Top with sour cream, chives, tomatoes, etc. or eat with blue corn tortillas.

Steps:
- In a mixing bowl put the ranch dressing.
- Add 1/4 cup salsa and stir. Add 1 Tble. of salsa at a time until you have the desired kick to your dressing. Add as much or as little as you wish.
- Stir in the minced cilantro. This is optional but I love it myself.
- Check for salt and pepper.
- Serve with taco salad. I especially like this dressing on a chicken taco salad.

- 1. Saute ground beef or ground turkey. Drain. Add taco seasoning. Let cool.
- 2. In large bowl mix ground beef or ground turkey, lettuce, onion, sharp cheddar cheese, kidney beans and 1/2 bottle of Wishbone Italian dressing. Crush Doritos Tortilla chips. Add to mixture.
- 3. Mix well. Add Pace Picante Sauce, sour cream and olives if desired. Enjoy
SUPER BOWL TACO DIP
This is any easy dip and a favorite where ever I happen to take it, but I always make it for the Super Bowl. Be sure to use a shallow large platter. This dip can easily be doubled for a large group.

- Soften cream cheese and whip with sour cream with mixer until smooth. mix in taco seasoning.
- Spread onto shallow platter and chill. This step can be done ahead before the event.

- Serve with tortilla chips or corn chips.

- Heat oven to 425°F; grease a 9 x 9" baking dish. Place in oven to heat.
- In small bowl, combine egg, milk, cornbread mix, 1 cup cheese and creamed corn; mix well.
- Pour batter into baking dish and bake 20 - 25 minutes until golden brown.
- Sauté the ground beef with the taco seasoning mix and 1/2 cup onion until beef is browned and onion is tender; drain.
- Remove cornbread from oven.
- Slice into 9 squares.
- Place lettuce, tomato, onions, black olives, salsa, cheese, sour cream and avocados in individual small bowls and let everyone top the cornbread with their desired toppings.

- in a fairly large skillet fry up the turkey burger until well done. add the kidney beans, the taco seasoning, water and onion. Bring to a simmer. When done put meat mixture in freezer for quick cooling time. Next we start the salad, In a Large bowl add the lettuce, chopped up tomatoes, cheese, some crushed up doritoes (not the whole bag, save some for your plate) set aside until the meat mixture is cool. Once the meat mixture is cool add it to your salad mixture...add the doritoes and the dressing. Stir up really good. Let your guests plate their own. We put doritoes on bottom, then salad, then a dollop of sour cream to top it all off!! ENJOY!!
SUPER EASY TACO SOUP
Another great recipe from my sister who swears by Weight Watchers. This recipe can easily be swtiched up to fit your personal taste and can be doubled or tripled for the freezer. I am always adding a bit of this or a touch of that. It always turns out great. I like to serve it with cornbread to sop up the juice. Enjoy!:)

- 1. In a large skillet saute the ground beef, turkey or pork until browned. Drain fat and set aside.
- 2. In a large stock pot over medium heat, add canola oil, garlic, onions, green chilies, and taco seasoning mix. Saute until onions are translucent. Add the cooked and drained meat and the remaining ingredients (including the stock) to the stock pot and stir well to combine. Salt and pepper to taste. Cook over a low heat for 30 minutes. (Add water or stock if soup is too thick) To serve, ladle into bowls and garnish with green onions, cheddar cheese and sour cream. Serve with a spicy cornbread.
SUPER EASY TACO SOUP
This is a great soup for cold weather and feeds a crowd so the more the merrier! You can change up the beans you use according to your own taste. I have mixed and matched according to what I have on hand and haven't went wrong with this yet! Enjoy I know we always do!

- 1. In a large soup pan brown the beef/turkey with the minced onion and garlic. Drain and add the taco seasonings and ranch seasoning mixs. Mix well.
- 2. Add the remaining ingredients to your soup pot and heat through. Takes maybe 15-20 minutes to heat then serve. This is great over fritos and topped with cheese and sour cream!

- Put hamburger back into pan and add taco season,as directed.
- Remove from heat and let cool while prepping salad.
