all of my family loves this chili. If I have a lot left over, I put it in a freezer zip lock bag and froze it. Sometimes I would take it out in the morning and have for lunch on the week end.

Number Of Ingredients 12

4 lb 80% lean ground beef
1 large onion chopped
5 clove garlic chopped
2 c tomato juice
1 large can(s) chili beans
1 large can(s) kidney beans
2 pkg chili o seasoning
2 Tbsp cumin
2 can(s) hot rotel tomatoes and chilis
1 can(s) southwest tomatoes and chilis
2 Tbsp cider vinagar
1 large can(s) tamales

Steps:

  • 1. In a large dutch oven, brown beef and onions. drain. add garlic and cook 3 more mins.
  • 2. Add all tomatoes, chili seasonings, and tomato juice. Bring to a simmer.
  • 3. Add both beans and Cider Vinagar. stir. Bring back to a boil.
  • 4. Cook in crock pot .
  • 5. Cut each tamale into 3 pieces. last 15 mins of cooking, add tamales. Stir slowly so not to break up tamales. Serve..

Until his recent retirement, I worked with a man who taught me much of what I know about my job and much that I've had to ignore because of my upbringing (ha)! He also makes a mean pot of chili that is a "must have" at each year's work Christmas party. He shared the recipe with me, as best he could, although his method is more "throw it in the pot and taste it 'til it works." Enjoy!

1 1/2 pound(s) round steak, cut into cubes
1 pound(s) sausage, hot (we use jimmy deans)
1 large onion, chopped
5-6 can(s) chili beans (we use bush's)
1 can(s) rotel tomatoes, hot
1 can(s) tomatoes, diced
1 can(s) tomato sauce
SPICES TO TASTE - CUMIN, GARLIC & CHILI POWDERS, TABASCO, CAYENNE PEPPER, CHIPOTLE SAUCE

Steps:

  • Brown the meats with the onion and drain.
  • Throw meats and remaining ingredients into a large pot and cook until it's ready.
  • This really is one of those "taste it as you put it together" recipes but it is so worth the little bit of angst you may feel over not having exact measurements. Serve it with cheese, sour cream, or try it over rice for a different twist ... but don't forget the crackers or Mexican cornbread!
