I have made this many times it's an wonderful easy fudge to make and no a candy thermometer needed, this is rich so a small piece goes a long way, this freezes well:)

Number Of Ingredients 8

1 1/2 cups sugar (use nothing less than this amount)
2/3 cup evaporated milk
2 tablespoons butter or 2 tablespoons margarine
1/8 teaspoon salt
2 cups mini marshmallows
1 1/2 cups semi-sweet chocolate chips (9 oz)
3/4 cup chopped walnuts (or use pecans or macadamia nuts)
1 1/2 teaspoons vanilla

Steps:

  • Line a 8-inch square pan with foil.
  • In a heavy-duty sauce pan, combine sugar, evaporated milk, butter and salt; bring to a full rolling boil over medium heat, stirring constantly.
  • Boil stirring constantly for 4-5 minutes (this must be timed nothing less than 4 minutes!).
  • Remove from heat; stir in the marshmallows, chocolate chips and vanilla, stirring vigorously until marshmallows are completely dissolves.
  • Stir in nuts.
  • Pour mixture into prepared foil-lined pan.
  • Refrigerate for 2 hours or until firm.
  • Lift from pan (with foil) remove foil; cut in squares.

This recipe comes from my DH's grandmother. Over Christmas she gave me two recipes one for old fashion fudge and then this super simple recipe. I made both and the super simple recipe was voted most delicious by the entire family. Thanks for the recipe Grammie!

2/3 cup evaporated milk
2 cups miniature marshmallows (or 16 regular marshmallows)
1 1/3 cups sugar
1/4 teaspoon salt
1/4 cup butter
1 teaspoon vanilla extract
2 cups semisweet chocolate pieces
1 cup chopped walnuts

Steps:

  • Butter 8x8 inch pan or line with parchment paper slightly overlapping pan edges for easy removal after cooling.
  • Mix first 5 ingredients in a sauce pan stirring constantly.
  • Heat to boiling and boil for about 5 minutes.
  • Remove from heat.
  • Add chocolate and stir until melted.
  • Add vanilla and walnuts and stir until incorporated.
  • Spread into buttered pan.
  • Cool until firm (If you are impatient you can place covered in the refrigerator to speed up the process).
  • Cut into 1 or 2 inch pieces.
