Serve hot or cold for a tasty vegetarian snack. Great for picnics, packed lunches, kids meals etc. PLEASE NOTE: THESE ARE BEST GRILLED/BROILED. Spray them with oil & under med/high heat.

Number Of Ingredients 9

800 g drained canned chick-peas
2 teaspoons cumin
2 tablespoons fresh coriander, chopped (cilantro)
2 garlic cloves, crushed
1 fresh green chile, deseeded and finely chopped
oil (for frying)
1 cup Greek yogurt
salad leaves
4 pita breads, to serve

Steps:

  • Mash the chickpeas or puree coarsely in a food processor. Mix with the cumin, coriander, garlic and chilli. Season and divide into 24 pieces of equal size. Shape each piece into a ball.
  • Heat a little oil in a frying pan and cook the balls for approximately 6 minutes each or until crisp and golden. This will probably have to be done in batches unless you have a huge pan!
  • Toast the pitta breads and slit the tops. Fill with the falafel and salad leaves, spoon a little yogurt on to the top too.

Super quick and easy - you will probably have all the ingredients in your pantry already! Serve with your favorite sauce! I served mine with spicy mayo, made by mixing 3 tablespoons mayo with 1/2 tablespoon sriracha. It would also be great with tzatziki or spicy mustard.

1 (16 ounce) can garbanzo beans, drained
¼ cup panko bread crumbs, or as needed
¼ cup chopped onion
¼ cup olive oil
1 egg
2 tablespoons dried parsley
1 tablespoon curry powder
1 tablespoon garlic powder
1 tablespoon lemon juice
½ tablespoon ground black pepper
¼ cup panko bread crumbs, or as needed
1 cup olive oil for frying, or as needed

Steps:

  • Place garbanzo beans, 1/4 cup panko bread crumbs, onion, 1/4 cup olive oil, egg, parsley, curry powder, garlic powder, lemon juice, and black pepper in a food processor or blender. Puree until coarse crumbles form. Blend more panko crumbs into mixture if it is too moist.
  • Roll mixture into balls about the size of a golf ball; place on a plate.
  • Press into patties and coat in panko bread crumbs.
  • Heat about 1-inch olive oil in a skillet over medium heat.
  • Pan-fry patties until crispy, about 3 minutes on each side.

Easy and super quick pan-fried falafel recipe. I had everything in my pantry already. I love this as a snack with a tzatziki cucumber sauce, or try with a spicy sriracha sauce.

Number Of Ingredients 10

1 (16 ounce) can garbanzo beans, drained
1 cup olive oil, divided, or more as needed
½ cup panko bread crumbs, divided, or more as needed
¼ cup chopped white onion
1 egg
2 tablespoons dried parsley
1 tablespoon curry powder
1 tablespoon garlic powder
1 tablespoon lemon juice
½ tablespoon ground black pepper

Steps:

  • Place garbanzo beans, 1/4 cup olive oil, 1/4 cup panko bread crumbs, onion, egg, parsley, curry powder, garlic powder, lemon juice, and pepper into a food processor or blender. Puree until coarse, adding bread crumbs if needed as you don't want mixture too moist.
  • Take 1 tablespoon of mixture, roll into a ball, and coat with panko bread crumbs. Place on a plate. Repeat with remaining mixture.
  • Heat remaining olive oil (about 1 inch) in a deep skillet over medium heat. Pan-fry bites until crispy golden brown, 2 to 3 minutes per side, working in batches if necessary. Remove and drain on paper towels.
