3 Italian turkey sausage links, casings removed
1 medium onion, chopped
4 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
6 cups reduced-sodium chicken broth
1 jar (24 ounces) pasta sauce
1 can (15 ounces) crushed tomatoes
2 tablespoons tomato paste
2 teaspoons dried basil
2 teaspoons balsamic vinegar
1 teaspoon dried parsley flakes
1-1/2 teaspoons sugar
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/2 teaspoon pepper
2 cups frozen cheese tortellini
Shredded Parmesan cheese, optional

Steps:

  • In a Dutch oven, cook sausage and onion over medium heat until sausage is no longer pink and onion is tender, 5-7 minutes, breaking up sausage into crumbles; drain. Add the garlic and pepper flakes; cook 1 minute longer. Stir in the broth, pasta sauce, crushed tomatoes, tomato paste, basil, vinegar, parsley flakes, sugar, oregano, salt and pepper; bring to a boil., Add tortellini; cook, uncovered, until tortellini are tender, 3-5 minutes, stirring occasionally. Serve immediately. If desired, top with cheese.

4 clove(s) garlic, minced
2 box(es) (32 1/2 oz.) box or can of chicken broth
1 tablespoon(s) olive oil
2 package(s) (19 oz.) frozen tortellini (beef, sausage, chicken or cheese)
2 can(s) (14 1/2 oz.) tomatoes
1/4 cup(s) fresh chopped parsley
2 tablespoon(s) fresh chopped basil
1 package(s) frozen chopped spinach
1 package(s) grated, fresh parmesan

Steps:

  • In a large saucepan over medium heat, cook garlic in olive oil for 2 minutes, add broth, tomatoes, herbs and tortellini.
  • Heat to a boil; reduce heat; simmer 10 minutes. Add spinach and simmer 5 minutes more. Serve with parmesan cheese and crusty bread. Makes 6 servings.

1 tablespoon olive oil
1 small red onion, chopped
1 zucchini, chopped
1 tablespoon minced garlic
1 (28 ounce) can crushed tomatoes
2 (14.5 ounce) cans chicken broth
1 tablespoon white sugar
1 tablespoon Italian seasoning
¼ cup red wine
1 dash hot pepper sauce
1 (11 ounce) can white corn, undrained
½ cup freshly grated Parmesan cheese
8 ounces cheese tortellini

Steps:

  • In a large pot over medium heat, cook onion, zucchini and garlic in oil three minutes, until onion is translucent. Stir in crushed tomatoes, broth, sugar, Italian seasoning, wine and pepper sauce and bring to a boil.
  • Reduce heat and stir in corn and Parmesan. Simmer 30 minutes.
  • Stir in tortellini and simmer 10 minutes more, until pasta is tender.
