4 large boneless chicken breast halves
3 Tbsp olive oil
1 1/2 tsp smoky paprika
2 Tbsp fresh lemon juice
3 clove garlic, minced
1/2-3/4 tsp sea salt
dash(es) pepper, to your taste
1 c bbq sauce, your favorite

Steps:

  • 1. How to Make it: Remove skin from chicken breasts and place them in a large Ziploc bag.
  • 2. Combine olive oil, smoked paprika, lemon juice, and garlic in a small bowl.
  • 3. Pour over chicken.
  • 4. Let chicken marinate for at least an hour, up to 24 in the fridge.
  • 5. Preheat oven to 350 degrees. Remove chicken from bag and place on a baking sheet. Season with salt and pepper.
  • 6. Bake for 20 minutes.
  • 7. Brush a layer of BBQ sauce on the chicken. Return to the oven.
  • 8. Repeat brushing with BBQ sauce every 5 minutes until the chicken is cooked through, about 15 to 20 minutes longer.
  • 9. Chicken is done when it reaches an internal temperature of 165 degrees F when read with a thermometer inserted into the thickest part of the breast. Enjoy with your favorite side dishes and some BBQ sauce for dipping.

I read some place that if you put strips of bacon over the top of a chicken before baking it would be very moist. So tonight I tried it. The chicken was so good and extremely moist and juicy everyone enjoyed it.I placed a small cut up apple and a stalk of celery into the cavity, which gave it a wonderful taste.

4 lb whole chicken
1 tsp old bay seasoning
1/2 tsp dried thyme
1/2 tsp herbes de provence
1 small apple, cored but leave peeling on, cut into quarters
1 stick celery, cut into 3-4 pieces
2 Tbsp soft butter
4-6 slice center cut bacon, the amount of slices depends on the size or the chicken
2 c chicken broth

Steps:

  • 1. preheat oven to 450 degrees
  • 2. Rub chicken with the softened butter. sprinkle the Old Bay, thyme, and herbes de provence evenly over chicken and rub in lightly. Place cut up celery and apple into the cavity of the chicken
  • 3. lay bacon strips over the top of the chicken and secure with toothpicks. Place chicken breast side up in roasting pan.
  • 4. pour chicken broth into pan (do not pour over the bacon)
  • 5. Roast for 15 minutes at 450 degrees and then lower oven temp to 350, continue to roast for about 1 1/2 hours or until meat thermometer is 180 degrees. Baste every 20 minutes.
  • 6. When done, remove bacon and toothpicks. You can eat the bacon if desired. Serve with your favorite vegetables. I did make a little gravy from the broth that is left over in the pan, it was not greasy and had good flavor

These chicken fingers may not be the healthiest, but are super easy to make and turn out tender, moist and delicious! I watch 3 toddlers under 2 1/2 (including my own!) and they all devour these chicken fingers with glee. They are great served plain, cut up over salads, and in Chicken Parmesan. Also delicious reheated in the oven.

4 thin chicken breasts
1 cup bread flour
2 cups seasoned bread crumbs
1 egg
1/2 cup water
1/4 cup half-and-half
1/2 cup canola oil (for frying)
1 pinch salt (to taste)
1 pinch pepper (to taste)

Steps:

  • 1. Cut chicken breasts into bite sized strips or nuggets. Place in bowl of water and set aside.
  • 2. Pour the bread flour in a bowl and season with salt and pepper. Set aside.
  • 3. Pour the bread crumbs in another bowl and set aside.
  • 4. In another bowl, beat the egg, 1/2 cup water and half and half together.
  • 5. Heat oil in large frying pan over medium heat.
  • 6. Take a chicken strip from the water and dip in the seasoned flour, then in the egg mixture, and finally in the bread crumbs, making sure the chicken is fully coated in each step.
  • 7. Set the coated chicken aside to dry and repeat step 6 with the remaining pieces.
  • 8. As pieces dry, you can begin to fry them until they are well browned on all sides, approximately 2 minutes per side, depending on the size of the piece.

1 (355 ml) can diet ginger ale
1/4 cup soy sauce

Steps:

  • Combine the ingredients in a zip lock bag and add the chicken.
  • Marinate for 8 hours or overnight.
  • Barbecue for 20 - 25 minutes or until done.
  • Options: Sprite or 7-Up can be used instead of the Ginger Ale.
