This is great for someone with little time and money. I couldn't find anything this simple when I was looking so I thought I would add it. You can add or substitute many different things. My sister puts chopped sweet pickles. My grandma would put cucumber and canned crab meat and shrimp instead of ham.

2 cups macaroni (I use whatever is in my cupboard)
1/2 cup cubed cheese (I prefer cheddar or co-jack)
1/2 cup cubed ham
1/2 cup Miracle Whip (can sub mayo your choice)
1 tablespoon mustard

Steps:

  • Cook,drain and rinse macaroni and put in fridge while you dice up cheese and ham.
  • Mix together cold macaroni, cheese, and ham in a bowl.
  • In a separate bowl mix miracle whip and mustard. (If it is too tangy my mom would put a little sugar in it about a tsp.).
  • Mix it all together and chill or serve immediately.

1 stalk celery, diced
1 medium tomatoes, chopped
1/2-3/4 cup Italian salad dressing (to taste)

  • Bring a large pot of lightly salted water to a boil.
  • Add pasta and cook for 8 to 10 minutes or until al dente.
  • Drain and pour pasta into a large dish.

5 ears sweet corn, shucked
1/2 cup minced red onion (1 small onion)
3 tablespoons apple cider vinegar
3 tablespoons extra virgin olive oil
1/2 teaspoon salt (or to taste)
1/2 teaspoon fresh ground black pepper (or to taste)
1/2 cup fresh basil leaf, sliced into ribbons

Steps:

  • Cook the ears of corn for about 5-7 minutes in a large pot of boiling salted water.
  • Drain and place into a bowl of ice water to stop the cooking.
  • When corn is cooled, cut kernels off of the cob.
  • Mix corn in a large bowl with red onions, oil, vinegar, salt and pepper.
  • Toss in fresh basil ribbons right before serving.
  • I usually taste to see if more salt and pepper is needed.
  • Can be served cold or at room temperature.

1 pound of Turkey burger
1 packet of taco seasoning
3/4 cup of water
1 can of light red kidney beans (drained)
half of onion chopped up
1 bottle of light catalina honey dressing
1 package of shredded lettuce
box of grape tomatoes chopped
1 package of shredded monterey jack cheese
1 large bag of doritoes
Sour cream

Steps:

  • in a fairly large skillet fry up the turkey burger until well done. add the kidney beans, the taco seasoning, water and onion. Bring to a simmer. When done put meat mixture in freezer for quick cooling time. Next we start the salad, In a Large bowl add the lettuce, chopped up tomatoes, cheese, some crushed up doritoes (not the whole bag, save some for your plate) set aside until the meat mixture is cool. Once the meat mixture is cool add it to your salad mixture...add the doritoes and the dressing. Stir up really good. Let your guests plate their own. We put doritoes on bottom, then salad, then a dollop of sour cream to top it all off!! ENJOY!!

A refreshing, flavorful salad with just a hint of smokiness. My 3 year old and I were looking to make a quick and healthy lunch with what we had on hand. This was the tasty result. We've been experimenting with garbanzo beans (chickpeas) over the last year and she giggles whenever we eat them because her pronunciation is "chickie-peas". Since she helped create this dish and then had two helpings, I named it after her. :)

1 (15 ounce) can garbanzo beans, drained
10 black olives, roughly chopped
2 green onions, sliced
2 tablespoons fresh parsley, chopped (dried will work also)

1/8 teaspoon smoked paprika

1 large bag Tri-Colored Rotini Pasta
1 Lg. Bottle Zesty Italian Dressing
1 can each: Peas, green beans, corn (white & yellow), medium olives, chopped olives (whatever canned vegetables you like, throw them in!)
1 lg. Red onion, chopped lengthwise (not diced)
1 entire bulb garlic, crushed
1 red pepper, chopped
1 yellow pepper, chopped
1 jar artichoke hearts, lightly chopped
1 cup sweet banana peppers, lightly chopped
2 cups dry salami, cubed
dill weed
coarse salt
fresh cracked black pepper
italian seasoning
red (chili) peppers
sugar
vinegar
olive oil

Steps:

  • Prepare pasta as per package instructions, DO NOT OVER COOK! Rinse in cold water, drizzle small amount olive oil over noodles to inhibit sticking, place in refridgerator to cool. While pasta is cooking, chop garlic, red onions and bell peppers. As Pasta is cooling, into large bowl, combine all ingredients except for sugar, vinegar and oil. Mix Well and season to taste. If base is too tart, add sugar in small amounts - if it becomes too sweet, add vinegar to balance sugar. Add pasta and mix well again. Season to taste and repeat sugar or vinegar process to balance taste combination.

2 cup(s) kraft ranch dressing
1 - green pepper, chopped (or 1/2 red and 1/2 green is also good)
1 medium red onion, chopped (must be red)
1 can(s) whole kernel corn
1 can(s) red kidney or pinto beans
2 medium tomatoes, chopped
2 cup(s) cheddar cheese, shredded
1 pound(s) bacon, fried crisp

Steps:

  • Prepare cornbread, bake and set aside to cool. Once cool, crumble into dish.
  • Drain and mix together corn and beans. Put this over cornbread.
  • Chop and mix together onion, tomato and pepper. Put this over beans/corn.
  • Cover with the cheese.
  • Pour Ranch dressing over this. Crumble crisp bacon over this. Cover and refrigerate overnight. It won't taste right until it sits overnight!
  • You can also use Mexican cornbread and chili style beans for this recipe, if you want a spicier version. You can even throw in a bit of chopped Jalapeno!

1/4 cup mayo
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup green olives (pitted and sliced)
2 Celery stalks

Steps:

  • Open the canned chicken with a can opener.
  • Drain and rinse the chicken in the can.
  • Then, add the chicken and washed celery stalks into a food processor.
  • Pulse until the chicken and celery are broken up into small bits.
  • Remove the chicken and celery from the food processor and add them to mixing bowl.
  • Next, add in the 1/4 cup of mayo along with salt and pepper.
  • Mix the ingredients together.
  • Slice pitted olives and add on top.
