1 lb. elbow macaroni noodles (uncooked)
1/4 cup diced celery
1/4 cup diced red onion
1/2 cup diced red bell pepper
1/2 cup frozen peas
1 cup cubed sharp cheddar cheese
1 cup mayo
1/4 cup distilled vinegar
3 tbsp sugar
1 tbsp dijon mustard
2 tbsp sweet pickle relish
1 tsp salt
1/2 tsp black pepper

Steps:

  • Cook the noodles according to package instructions, then drain and rinse with cool water. I like to add a few ice cubes to the noodles while running cool water over them to help cool the noodles faster. Drain and add pasta to a large bowl.
  • Add in the diced celery, red onion, red bell pepper, peas and cheese.

4 cups uncooked elbow macaroni
1 cup mayonnaise
¼ cup distilled white vinegar
⅔ cup white sugar
2 ½ tablespoons prepared yellow mustard
1 ½ teaspoons salt
½ teaspoon ground black pepper
1 large onion, chopped
2 stalks celery, chopped
1 green bell pepper, seeded and chopped
¼ cup grated carrot
2 tablespoons chopped pimento peppers

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Rinse under cold water and drain.
  • In a large bowl, mix together the mayonnaise, vinegar, sugar, mustard, salt and pepper. Stir in the onion, celery, green pepper, carrot, pimentos and macaroni. Refrigerate for at least 4 hours before serving, but preferably overnight.

1/3 cup frozen peas
1/3 cup cubed cheddar cheese
1/4 cup mayonnaise
3 tablespoons chopped celery

1 teaspoon diced pimientos
1 teaspoon finely chopped green pepper
1/8 teaspoon salt

Steps:

  • Cook macaroni according to package directions, adding peas during the last 2 minutes of cooking. Drain and rinse in cold water. , In a small bowl, combine the remaining ingredients. Stir in macaroni and peas. Chill until serving.
