This artichoke soup is hearty and heavenly in taste and texture. It is simple to make and full of flavor. Serve it with a main dish, or make it your light and healthy meal.

2 tablespoons extra-virgin olive oil (more for serving)
1 white onion, chopped
1 clove garlic, minced
1 teaspoon fresh or dried thyme
1 teaspoon fresh or dried rosemary
1 shallot, minced
1 small potato, peeled and chopped
1 (8-ounce) package frozen artichoke hearts, thawed
3 cups vegetable or chicken stock
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup of parsley for garnish

Steps:

  • Heat olive oil in a heavy, large pot over medium heat. Add the onion, shallot, and the garlic and stir. Add the potatoes and cook for 5 minutes, stirring often. Add the artichokes, 2 cups of the stock (reserve 1 cup), herbs, salt, and pepper and cook until the vegetables are tender, about 20 minutes.
  • Using a handheld immersion blender, or in a blender in batches*, puree the soup. Add more of the stock as you blend the vegetables. Keep blending and use remaining stock.
  • At this point you can blend until you reach your desired consistency. I like mine a little chunky to taste piece of artichoke. You can keep blending until it is more smooth if you desire.
  • Serve with a drizzle of olive oil, a few springs of parsley, and toasted bread.

1 pound Italian sausage
1 clove garlic, minced
2 (14 ounce) cans beef broth
1 (14.5 ounce) can Italian-style stewed tomatoes
1 cup sliced carrots
1 (14.5 ounce) can great Northern beans, undrained
2 small zucchini, cubed
2 cups spinach - packed, rinsed and torn
¼ teaspoon ground black pepper
¼ teaspoon salt

Steps:

  • In a stockpot or Dutch oven, brown sausage with garlic. Stir in broth, tomatoes and carrots, and season with salt and pepper. Reduce heat, cover, and simmer 15 minutes.
  • Stir in beans with liquid and zucchini. Cover, and simmer another 15 minutes, or until zucchini is tender.
  • Remove from heat, and add spinach. Replace lid allowing the heat from the soup to cook the spinach leaves. Soup is ready to serve after 5 minutes.

1 ½ pounds sweet Italian sausage
2 cloves garlic, minced
2 small onions, chopped
2 (16 ounce) cans whole peeled tomatoes
1 ¼ cups dry red wine
5 cups beef broth
½ teaspoon dried basil
½ teaspoon dried oregano
2 zucchini, sliced
1 green bell pepper, chopped
3 tablespoons chopped fresh parsley
1 (16 ounce) package spinach fettuccine pasta
salt and pepper to taste

Steps:

  • In a large pot, cook sausage over medium heat until brown. Remove with a slotted spoon, and drain on paper towels. Drain fat from pan, reserving 3 tablespoons.
  • Cook garlic and onion in reserved fat for 2 to 3 minutes. Stir in tomatoes, wine, broth, basil, and oregano. Transfer to a slow cooker, and stir in sausage, zucchini, bell pepper, and parsley.
  • Cover, and cook on Low for 4 to 6 hours.
  • Bring a pot of lightly salted water to a boil. Cook pasta in boiling water until al dente, about 7 minutes. Drain water, and add pasta to the slow cooker. Simmer for a few minutes, and season with salt and pepper before serving.

1 pound mild Italian chicken sausage (or pork)
3 carrots
1 stalk celery
1 tablespoon extra virgin olive oil
8 cups chicken broth (or 8 cups water and 4 tablespoons chicken bouillion)
1 tablespoon dried Italian seasoning
15 ounce can cannellini beans ((white beans), rinsed and drained )
14.5 ounce can fire roasted diced tomatoes
8 ounce can tomato sauce
6 ounce can tomato paste
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon black pepper
1/2 pound dried orecchiette pasta (or shells)
2 cups fresh basil leaves (rough chopped)

Steps:

  • Heat a 12 quart pot over medium high heat. Add olive oil and sausage. Peel and chop carrots, add to pot. Wash and chop celery. Cook sausage until browned on each side and stir vegetables. Once sausage is browned on each side remove from pot and add all remaining ingredients except pasta and basil. Bring soup to a boil.
  • Meanwhile slice sausage into coins and add to soup. Once soup comes to a boil add pasta and basil. Cook until pasta is cooked through stirring occasionally, about 10 minutes.
  • Serve and enjoy!

2 cans diced tomatoes with basil and garlic
2 cans artichoke hearts in brine
2 cans water

Steps:

  • 1. Remove sausage from casings. Brown in a soup pot. DO NOT DRAIN! There will be very little grease and it will be the flavoring for the soup. Add drained artichokes (I chop them up a bit. Add diced tomatoes. Add 2 cans of water. DONE! It is ready to eat as soon as the vegetables are heated up.

2 tablespoons plus 1/3 cup mascarpone cheese

  • Heat olive oil in a heavy, large pot over medium heat. Add the leeks and the garlic and stir. Add the potatoes and cook for 5 minutes, stirring often. Add the artichokes, stock, salt, and pepper and cook until the vegetables are tender, about 20 minutes.
  • Using a handheld immersion blender, or in a blender in batches*, puree the soup. Add the 2 tablespoons mascarpone and blend again to combine. In a small bowl, stir the remaining 1/3 cup mascarpone to soften.
  • Ladle the soup into serving bowls. Dollop the top of each of the soups with a spoonful of the softened mascarpone cheese and top the cheese with chives.
  • * When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.
