SUPER EASY PEANUT BUTTER FUDGE
I absolutely take no credit for this recipe. I found it floating around Facebook and it sounded so easy that I just HAD to try it. Guess what? It's not only easy, but it tastes delicious! Mom always had trouble making any kind of fudge. It either didn't cook long enough & we ended up with "spoon candy" or it cooked too long &...

Steps:
- 1. Butter an 8 x 8" baking dish or any dish of similar size. I used a pie plate for this photo. Have all ingredients measured out before starting since you'll be stirring constantly once you start.
- 2. In a saucepan over MEDIUM heat, bring the sugar and milk to a boil, stirring constantly. Once it's bubbling all over, boil for EXACTLY 2 1/2 minutes. (I set the timer on the microwave. Really.)
- 3. Remove from heat. Stir in the vanilla extract. Then stir in the peanut butter. Blend well, but quickly, until smooth.
- 4. Pour into buttered dish and smooth out. Cool before cutting into pieces.
SUPER EASY PEANUT BUTTER FUDGE
This recipe is very simple, but if you do not know how to make candy then please follow instructions precisely. I have altered the instructions after a few reviews that it was crumbly. This is not the recipes fault, it is inexperience. Proper candy making is about temperatures. 4 minutes of boiling (from the time the first small bubbles form) bring this candy up to proper fudge/softball temperature as long as you are cooking over medium heat. When in doubt, use a thermometer.

Steps:
- Prepare a 9x11 glass dish by buttering the bottom.
- In heavy bottom sauce pan combine sugar and milk.
- Measure and set aside remaining ingredients.
- Cook over MEDIUM HEAT (temperature too high will cause it to reach temperature sooner and lead to overcooking) stirring occasionally till it comes to a boil then stir constantly.
- Let boil for 4 minutes EXACTLY, over cooking leads to crumbly fudge as it has moved past softball stage and into softcrack (measure from the first sight of littlest bubbles or use a thermometer - softball stage) I use a stop watch. Remove from heat.
- Stir in remaining ingredients till all melted and smooth.
- Pour into prepared dish and refrigerate until firm.
SUPER EASY & DELICIOUS FUDGE
If you like fudge and you like easy, this is the recipe for you! My grandma used to give this to us for Christmas served in circular tins, separated by wax paper. I prefer plain chocolate fudge, but have been known to insert some Andes mints in here or there. I went through a phase in high school where I made this almost bi-weekly.

Steps:
- Spray a large bread pan (or two small bread pans) with a non-stick spray. Also, prepare a double boiler by getting the water boiling. Also, this is a recipe which requires constant stirring, so have a spoon handy!
- In the double boiler, add the butter, vanilla and sweetened condensed milk and melt together. Note: if you don't have a double boiler, create a makeshift one by boiling water in a pot and placing another similar-sized pot over it. It keeps you from burning the chocolate by providing an even heat source.
- Once the mixture is blended and easy to stir, add the chocolate chips, stirring constantly.
- Stir until the mixture is glossy and well blended with no chunks.
- Pour into the prepared bread pan(s). If desired, insert Andes chocolate mints throughout the fudge by pushing it into the top. Let cool completely before serving. (Don't put into the refrigerator to cool either.) Enjoy!

SUE'S SUPER EASY HALLOWEEN CANDY CORN FUDGE
Please read reviews. This recipe worked for me but perhaps differences in types of peanut butter or what is in the candy make a difference. I think if the mix isn't stirring smooth enough, add extra butter before you mix in the sugar. Or perhaps add the sugar a little at a time? Otherwise I don't know what to tell you. --Sue

Steps:
- Butter a 9x9 brownie pan (I use a silicone pan but still butter it) and set it aside.
- In a deep skillet over low heat, melt butter and marshmallows, stirring constantly, until marshmallows melt.
- Add peanut butter and stir until mixed in and melted. Then add powdered sugar, stirring until smooth. Don't add candy and nuts until these are mixed and smooth.
- Fold in candy corn and peanuts, stirring until nicely mixed. Some of the candy may start to melt, and that's fine. The candy corn really don't need to melt so don't worry about that.
- Pour mixture into the buttered brownie pan, and using a buttered pancake turner, flatten mixture completely.
- If you like, sprinkle with extra candy corn or Halloween "cupcake sprinkles", pressing them down with a sheet of waxed paper to keep your hands clean. Be careful not to burn yourself!
- Allow mixture to cool, then cut into small squares (you can put them into small cupcake papers and keep them in a cookie tin if you want.
