Super Easy Corn Crusted Baked Salmon image

Crunchy on the outside, and tender on the inside with just a hint of garlic, this easy to make dinner goes perfectly with a nice green salad and/or some roasted potatoes. Recipe adapted from one I found on the back of a frozen fish filet package some years ago. ***note*** You may substitute low fat caesar dressing if you are watching calories.

1/3 cup cornmeal
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried Italian seasoning
3 tablespoons caesar salad dressing (creamy)
1 tablespoon lemon juice
16 ounces salmon fillets (four 4 oz fillets, fresh or frozen)

Steps:

  • Stir together cornmeal and seasonings in a shallow dish.
  • In separate shallow dish, combine dressing and lemon juice.
  • Dip each salmon fillet in Caesar mixture, then dip in cornmeal mixture to coat well on both sides.
  • Place on a baking sheet (that has been sprayed with non-stick cooking spray) in single layer.
  • Bake at 450 F for 6 to 8 minutes or until fillets flake easily with a fork. Depending on your oven, you may need more or less time. (so keep at eye on the fish).
  • ***note*** If using frozen salmon filets, allow to thaw in refridgerator before continuing with recipe.

3 lemons, juice of
4 cloves minced garlic
1/4 cup olive oil
1/2 cup white wine
1/4 cup fresh parsley, chopped
salt and pepper

Steps:

  • Combine all ingredients except salmon.
  • Place salmon in a lightly greased baking dish and pour mixture over salmon.
  • Sprinkle with salt and pepper and bake at 350° for approximately 25 minutes or until fish is flaky and done.

1 1/2 lbs salmon fillets (rinsed)
5 tablespoons olive oil
2 onions (sliced into rings)
2 -3 garlic cloves (minced)
4 tablespoons fresh tarragon (chopped)
4 tablespoons fresh dill weed (chopped)
2 lemons
garlic powder
salt
pepper

Steps:

  • Add salt, pepper and garlic powder to to fish, squeeze the juice of one lemon and set aside to marinade in a foil lined shallow baking pan. Preheat oven to 350. In a pan heat olive oil, add garlic, onion, herbs and the juice of one lemon. Saute until onions are soft. Pour onion mixture including any liquid over fish and bake for 35 minutes.

3 garlic cloves

Steps:

  • pre-heat oven to 350.
  • Grease a glass baking dish with olive oil.
  • cut thick slices of onion, and slice the garlic the same.
  • place salmon in dish, lay the slices of onion and garlic evenly over fish. any amount that suits you.
  • top with salt and pepper to taste, and drizzle with more olive oil.
  • bake for 20-25 min depending on how well done you like your fish, and how much your baking at once.

I created this recipe one weeknight. It's quick to make, but has a nice crunchy topping. I used ground almonds to lower the carb count.

1 tablespoon mayonnaise
1/2 cup ground almonds
1 tablespoon chopped garlic
1/4 cup grated parmesan cheese
1/4 teaspoon salt
1/2 teaspoon smoked paprika

Steps:

  • Preheat oven to 400.
  • Place salmon in baking pan, skin side down.
  • Spread mayonnaise on top of the salmon.
  • Mix the rest of the ingredients to make the topping.
  • Spread topping evenly over salmon.
  • Bake until fish flakes easily - about 20 min for a 1 inch fillet.

This is great on grill, but works equally well in the oven. If you can't find the garlic butter, you can always make your own by combining garlic powder with butter or margarine. I use one large salmon filet, which is usually between 2-3 lbs. The salmon filet and the Tones Citrus Grill can be found at Sam's Club.
