3 cups chopped cooked chicken
1 (10 ounce) can condensed cream of chicken soup
1 cup sour cream
½ cup milk
1 (6 ounce) package dry bread stuffing mix
½ cup melted butter
hot water as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Arrange chicken in the bottom of a 2-quart casserole dish.
  • Combine cream of chicken soup, sour cream, and milk in a small bowl; mix well. Pour over the chicken.
  • Toss stuffing mix with melted butter in a bowl, adding hot water to moisten. Sprinkle stuffing over chicken in the casserole dish.
  • Bake in the preheated oven until bubbly, about 30 minutes.

2 medium carrots, diced
3 cups chopped cooked chicken
1 (6.0 ounce) package UNCLE BEN'S® Long Grain & Wild Rice Original Recipe
1 (8 ounce) package fresh mushrooms, chopped
½ medium onion, diced
1 cup fresh or frozen peas, thawed
1 cup packed fresh spinach, chopped
2 ½ cups chicken broth
1 (10.75 ounce) can reduced fat condensed cream of mushroom soup
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9x13-inch baking dish.
  • Place carrots in a microwave-safe bowl. Add 1 tablespoon water. Cover tightly with plastic wrap; poke holes in wrap to vent. Microwave on High for 1 minute. Drain.
  • Combine chicken, rice and contents of seasoning packet, carrots, mushrooms, onion, peas, and spinach in a bowl. Stir in broth and soup. Pour mixture into prepared baking dish. Cover with foil.
  • Bake, covered, 45 minutes. Remove foil and bake until hot and bubbling, about 45 more minutes. Top with shredded cheese just before casserole is done.

I modified a recipe on the back of a new type of Campbell's soup-- Creamy Chicken Verde, one of their Southwest Style Cooking line. (Verde is spanish for green, referring to the poblano pepper in the soup) Try it, you'll like it!

1/2 cup water
1/2 teaspoon garlic powder

1/2 cup shredded cheese (like Kraft Mexican Style 4 cheese blend, or plain old cheddar)

This is a recipe I found on the back of a Campbells soup can years ago and have made this recipe many, many times and it is without a doubt a family favorite. Simple, quick and very tasty. Definately a meal to make if your pressed for time( I can usually get it on the table in under an hour from start to finish). In order to make this in a timely fashion, only use boneless, skinless chicken breasts or chicken tenderloins. I think these cook up more tender and quicker than breasts with the bone still in. 4 boneless skinless chicken breasts
10 3/4 ounces condensed cream of celery soup
1/2 cup milk
6 ounces Stove Top low-sodium chicken stuffing mix
1 cup sharp cheddar cheese
3 tablespoons butter, to fry the chicken in. add more throughout cooking process if needed
salt and pepper

Steps:

  • On your stove top, melt butter in frying pan and cook chicken breasts until done.Remove chicken from pan and set aside.
  • While chicken is cooking combine soup and milk in a bowl and mix together. Set aside.
  • In the same frying pan (just clean it out a bit) prepare the chicken stuffing according to package directions.
  • Once the stuffing is done, place chicken breasts on top of the stuffing that is still in the frying pan. Pour soup mixture over the chicken and sprinkle the cheese over the soup. Cover the pan with a lid and cook on medium low heat. Not to high or the stuffing will burn. Meal is ready when all the cheese is melted and the soup is hot and bubbly.

1 1/2 c chicken broth
3 Tbsp butter/margarine
3 c stove top stuffing
1 can(s) cream of chicken soup with herbs
1/2 c milk
1 15oz can(s) sweet peas
24 oz chicken tenders
1/2 c shredded cheese

Steps:

  • 1. Combine chicken broth, butter, and Stove Top in bowl and microwave 4 minutes.
  • 2. In 2 qt casserole dish mix: cream of chicken soup, milk, and peas. Salt and pepper to taste.
  • 3. Cut up chicken tenders into bite-size chunks. Put in layer on top of soup mixture.
  • 4. Sprinkle cheese in a layer on top of chicken chunks.
  • 5. Fluff stuffing with fork and spread over cheese layer.

Most of my friends don't even know that it is a ligher version of a rich calorie laden recipe because it is so tasty. I usually serve with a mixed green salad and my version of Mexican rice. This is great left over cold or hot!

1 cup reduced-sodium fat-free chicken broth
2 (4 1/2 ounce) cans canned diced green chiles, divided
1 3/4 lbs boneless skinless chicken breasts
2 teaspoons olive oil
1 cup chopped onion
1 cup evaporated skim milk
1 cup shredded monterey jack cheese
1/4 cup tub-style light cream cheese
1 (10 ounce) can enchilada sauce
12 (6 inch) corn tortillas
1/4 cup shredded extra-sharp reduced-fat cheddar cheese
1 ounce tortilla chips, crushed
cooking spray

Steps:

  • Preheat oven to 350 degrees.
  • Bring broth and 1 can of chiles to a boil in a large skillet. Add chicken, reduce heat and simmer for about 15 minutes or until chicken is done turning once. Remove chicken to a plate and reserving cooking liquid for later. Allow chicken to cool and shred meat.
  • Saute 1 can of chiles and onion in heated olive oil for 3 minutes or until soft. Add reserved liquid, enchilada sauce, milk, cream cheese, Monterey Jack and stir well. Stir in shredded chicken, cook for 2 minutes. Remove from heat.
  • Coat a 2-quart casserole with cooking spray and place 4 tortillas in the bottom. Spread 2 cups of chicken mixture over tortillas. Repeat layers twice ending up with the chicken mixture on top. Top with crushed tortillas and cheddar cheese.
  • Bake at 350 degrees for 30 minutes or until throughly heated. Let stand for at least 10 minutes before serving.

1 tablespoon olive oil
2 cups chopped chicken

  • PREHEAT oven to 350°F.
  • Prepare stuffing mix as directed on package and set aside.

2 whole chicken breasts, cooked and cut up
3 (10 1/2 ounce) cans cream of chicken soup
3/4 cup long grain rice
2 cups celery, chopped
2 cups Hellmann's mayonnaise
2 cups chicken broth
3/4 teaspoon salt
3/4 cup frozen peas
3/4 cup frozen carrots
1 1/2 cups corn flakes
2 tablespoons margarine, melted

Steps:

  • Cook the celery and rice in the chicken broth for 12 minutes. Drain off the extra broth. Mix the chicken, mayo, soup, salt, rice, celery,peas and carrots together. Pour into a buttered 13x9 inch casserole dish. Cover with crushed cornflakes and drizzle with the melted butter. Bake, uncovered at 350* for 1 hour.
