BAKER'S ONE BOWL SUPER CHUNK COOKIES

Use the same chocolate you use in your favorite brownies to make these super-delicious BAKER'S ONE BOWL Super Chunk Cookies.

Yield 24 servings, 1 cookie each

Number Of Ingredients 10

1 cup flour
1 cup quick-cooking oats
1/2 tsp. baking soda
1/2 cup butter or margarine, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 egg
1 tsp. vanilla
2 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate, coarsely chopped
1/2 cup chopped pecans

Steps:

  • Heat oven to 375°F.
  • Combine flour, oats and baking soda; set aside. Beat butter and sugars in large bowl with mixer until light and fluffy. Blend in egg and vanilla. Gradually add flour mixture, beating well after each addition. Stir in chocolate and nuts.
  • Drop rounded tablespoonfuls of dough, 2 inches apart, onto baking sheets.
  • Bake 10 min. or until lightly browned. Cool on baking sheets 2 min. Remove to wire racks; cool completely.

Everyone loves these at Super Bowl parties. A couple years ago I brought them to the Orlando Brewing Company's party and two enormous platters were completely finished. You can buy the colored M&M's at http://shop.mms.com or at M&M's World in Orlando, Las Vegas or New York. I make two batches, one for each team's colors. These could be considered "good" treats for people avoiding bad carbs since they have oatmeal instead of white flour, but "healthy" may be a stretch!

Number Of Ingredients 11

1 cup brown sugar
1 cup sugar
1/2 cup butter, softened in microwave
3 eggs
1 teaspoon vanilla
1 teaspoon light corn syrup
1 1/2 cups peanut butter
2 teaspoons baking soda
4 cups oatmeal
1/2 cup chocolate chips
6 ounces M&M's plain chocolate candy, in team colors

Steps:

  • Mix all ingredients in a food processor or mixer, except for chocolate chips and M&M's which could get crushed; stir in the chocolate chips by hand.
  • Drop by tablespoons on an ungreased cookie sheet (I use a scoop which makes it so easy); then press 4-6 M&M's on the top of each cookie.
  • Bake at 350 degrees for 12-15 minutes or until just starting to turn brown; cool for 5-10 minutes before removing from cookie sheet to avoid breakage.
