I have used this recipe for years, mostly for big dinners or potlucks. I often get requests for the recipe; it's easy to make as well as delicious. Even people who don't like vegetables discover that this dish is pretty tasty! I love finding new recipes to try in cookbooks - this one's a real winner.

Number Of Ingredients 10

2 cups finely shredded carrots
2 cups cooked rice
2 large eggs, beaten
1-1/2 cups diced American cheese
1 can (16-1/2 ounces) cream-style corn
1/4 cup 2% milk
1 tablespoon butter, melted
1 tablespoon dried minced onion
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Combine all ingredients in a 2-qt. baking dish. Bake, uncovered, at 350° for 35-45 minutes or until set.

Number Of Ingredients 11

1 layer of tater tots
1 layer of ham or sausage or crumbled bacon
1 layer grated cheddar cheese
6 eggs, beaten
1/2 t. salt
1/2 t. pepper
1 t. dry mustard
1/2 cup chopped onion
3 cups milk
2 t. Worcestershire sauce
1/2 cup butter, melted

Steps:

  • In 9x13 pan layer tater tots, meat choice (cooked) and then shredded cheddar cheese. Mix together eggs, salt, pepper, dry mustard, onion milk and Worcestershire sauce. Pour egg mixture over the layers. Drizzle melted butter over top. Bake 1 hour @ 350 degrees uncovered.

1 medium onion, chopped
4-6 yellow squash, sliced
1 10 oz package of white corn, cooked & drained
1 10 oz package of yellow corn, cooked & drained
2 C sharp cheddar cheese, grated
Seasoned bread crumbs
2-4 T butter
1 garlic clove, minced
1/4 tsp cumin
1 tsp pepper

Steps:

  • 1. Preheat oven to 350 F 2. Heat 1-2 T of butter in large skillet. Add onion and saute. 3. Add squash to onions; cover and steam until squash is tender. 4. Drain and add corn, cumin, garlic, and pepper to the mixture. Cover and cook for five more minutes. 5. Stir in cheese and scoop mixture into a 1 1/2 quart casserole dish. Top with seasoned bread crumbs. 6. Bake for 25-30 minutes

1 (20-ounce) package frozen hash brown potato
1/2 pound sausage links, cooked and cut into 1/2-inch slices
1 1/2 cups shredded Monterey Jack or Cheddar cheese
6 eggs
4 cups milk
4 tablespoons finely chopped onions
2 teaspoons Dijon style mustard
paprika
2 medium tomatoes, sliced (for garnish)

Steps:

  • Grease a 9x13-inch baking pan. Cook hash browns according to package directions. Spread them in a single layer in the prepared pan. Spread sausage and cheese evenly over the potatoes. Combine the eggs, milk, onion, and mustard in a large bowl; pour the mixture over the top. Sprinkle with paprika. Cover and refrigerate for at least one hour or overnight. When ready to cook, heat oven to 325°. Bake the casserole, uncovered, for about one hour or until a knife inserted in the center comes out clean. Let stand for 10-15 minutes before serving. Garnish with tomato slices and serve.

6 eggs
1 C. milk
6 oz. cheddar cheese, grated
1 lb. sausage or bacon, crumbled
4 hash brown patties, frozen
1 tsp. salt.
1/2 tsp. pepper
1/2 tsp. dry mustard
1/2 C. chopped onion

Steps:

  • Line an 8x8 baking dish with frozen hash browns. Sprinkle hash browns with crumbled sausage or bacon. Mix together eggs, milk, salt, pepper, and dry mustard. Pour over meat and hash browns. Top with grated cheddar cheese. Refrigerate overnight. Bake in a preheated oven at 350 degrees for 45 minutes to 1 hour.
