I clipped this recipe out of a coupon flyer and made a couple of modifications. This is the recipe I use for our Christmas morning breakfast casserole.

1 lb roll pork sausage
2 slices bread, toasted, buttered and cut into 1/2 inch cubes (about 2 cups)
1/2 cup onion, diced
1/2-3/4 cup green and red pepper, diced
1 cup shredded sharp cheddar cheese
6 eggs
2 cups milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dry mustard

Steps:

  • Preheat oven to 350 degrees F. Grease an 11X7 baking dish.
  • Crumble and cook sausage and onion in medium skillet over medium heat until browned. Drain off fat.
  • Spread bread cubes in dish; top with sausage, peppers, and cheese.
  • Whisk eggs, milk, salt, pepper, and mustard until well blended; pour over cheese.
  • Bake 30 to 40 minutes or until set. Let stand 5 minutes before cutting into squares; serve hot. Refrigerate leftovers.
  • Note: This may be made the day before and refrigerated overnight. Baking time should be increased to an hour.

This colorful breakfast is a great way to entertain out of town guests. Just make it the day before, or take it to go by placing squares between the halves of toasted English muffins.

1 pound Bob Evans Original Recipe Sausage Roll
6 slices bread, cut into 1/2 inch cubes
3/4 cup diced green and red peppers
1 cup shredded sharp Cheddar cheese
6 large eggs
1 1/2 cups milk
1/2 teaspoon salt
1/2 teaspoon dry mustard

Steps:

  • Preheat oven to 350F. Crumble and cook sausage in medium skillet over medium heat until browned. Drain sausage. Spread bread cubes in greased 9 x 13 inch baking dish; top with sausage, peppers and cheese. Whisk eggs, milk, salt and mustard until well blended; pour over cheese. Bake 30 to 35 minutes or until set. Let stand 5 minutes before cutting into squares; serve hot. Refrigerate leftovers.
