SUNNY'S T-BONE STEAK WITH ANY HERB SAUCE



Sunny's T-Bone Steak with Any Herb Sauce image

2 to 4 tablespoons red wine vinegar
3 cloves garlic
1 bunch fresh mint (1 handful)
1 bunch kale (3 handfuls)
1/2 small red onion
Kosher salt and freshly ground black pepper
1/3 to 1/2 cup olive oil
Four 1-inch-thick T-bone steaks
Kosher salt and freshly ground black pepper
Olive oil, for drizzling

Steps:

  • For the sauce: In a food processor, add the red wine vinegar, garlic, mint, kale, red onion and a pinch of salt and pepper. Pulse to chop gently, then add the olive oil in a slow stream while still pulsing to get a chunky sauce consistency. Rest at room temperature for about 30 minutes before using.
  • For the steaks: Heat a grill or grill pan to medium-high heat.
  • Season the steaks on all sides with salt and pepper, then drizzle with olive oil. Grill the steaks over indirect or direct heat, flipping once, until desired doneness. Remove to a plate and rest under aluminum foil for a real 10 minutes before serving. Serve with the sauce.

Four 1 1/2-inch-thick bone-in pork chops
Kosher salt and freshly ground black pepper
4 corn muffins, crumbled (about 2 cups)
1/4 cup finely chopped celery
1/4 cup chopped dried cranberries
1/4 cup finely chopped red onion
1/4 cup finely chopped fresh Italian parsley (loosely packed)
2 tablespoons unsalted butter, melted
1 teaspoon hot Hungarian paprika
1 teaspoon dry rubbed sage
2 to 4 tablespoons chicken broth, depending on moisture
Kosher salt and freshly ground black pepper
2 cups all-purpose flour
2 cups buttermilk
Kosher salt and freshly ground black pepper
One 14-ounce can jellied cranberry sauce
1/2 cup chicken stock
1/4 cup creamed honey
4 to 8 sprigs fresh thyme, leaves stripped and gently chopped
2 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
Peanut or vegetable oil, for frying

Steps:

  • For the chops: Insert a knife at the top end of each chop with the blade facing away from the bone and towards the fat rim. In a sweeping motion, make a pocket inside each chop without carrying the knife completely through the rim of fat, leaving about a 2-inch hole. Season the chops on both sides with a pinch of salt and pepper. Set aside.
  • For the stuffing. In a large bowl, gently combine the crumbled muffins, celery, cranberries, onion, parsley, butter, paprika, sage and enough stock to moisten it. This should not be drippy wet or cakey dry. Taste and season with a pinch salt if needed and a few grinds of pepper.
  • Put the stuffing in a piping bag with the largest tip (or use a plastic bag and cut a corner). Squeeze the stuffing into the center of each pork chop and secure the hole with a toothpick.
  • For the dredge: Set up a dredging station with the flour in one shallow dish and the buttermilk in a second shallow dish. Season each with a pinch of salt and a few grinds of pepper. Dredge the chops in the flour first, then in the buttermilk and finally back in the flour. Rest the chops in the flour or on a wire rack for 15 minutes.
  • For the sauce. In a small saucepot on medium heat, add the jellied cranberry sauce, chicken stock and honey. Cook until the cranberry dissolves and the liquid reduces and becomes slightly thicker, about 5 minutes. Add the thyme and stir in the butter until it melts. Taste and season with a pinch of salt and a few grinds of pepper. Keep warm.
  • To fry and serve: Using a Dutch oven, your heaviest pot or a deep fryer, bring at least 4 inches of oil to 370 degrees F. Gently place the chops into the oil without overcrowding; you may need to do this in batches. The temperature will lower while frying; hold it at 350 degrees F. Cook until the chops reach an internal stuffing temperature of 150 degrees F, 10 to 14 minutes. Remove to a wire rack, sprinkle with a pinch of salt and gently cover with aluminum foil, allowing for air to escape so the chops don't steam. Rest the chops 5 minutes like this.
  • Serve with a drizzle of the sauce.

2 cups cranberry juice
1/2 cup agave syrup or honey, or more as needed
1/4 cup packed fresh mint leaves, plus more for garnish
2 1/2 cups white rum, such as Cruzan Aged Light Rum
1/2 cup fresh lime juice
1/2 cup fresh or frozen cranberries
1 cup sparkling water or ginger ale

Steps:

  • Combine the cranberry juice, agave and mint in a medium saucepan over medium heat just until it comes to a boil. Whisk to combine, then cover and steep until the cranberry juice tastes like mint, 3 to 5 minutes. If not sweet enough for your liking, add a bit more syrup. Strain out the mint and pour the liquid into a pitcher.
  • Stir the rum and lime juice into the pitcher and refrigerate until cold.
  • To serve, add 3 to 4 mint leaves, a few cranberries and ice to lowball or wine glasses. Pour in the chilled drink, then top off with a splash of sparkling water or ginger ale. Enjoy!

PROSCIUTTO-WRAPPED BEEF CUBES WITH MUSTARD PAN SAUCE



Prosciutto-Wrapped Beef Cubes with Mustard Pan Sauce image

1 pound tender cut beef, cut into roughly 2-inch cubes to make 12 pieces
Freshly ground black pepper
1/4 pound prosciutto
1 tablespoon olive oil
1 tablespoon butter
1 small shallot, diced
1/2 cup chicken stock
1 tablespoon coarse-grain mustard
2 tablespoons heavy cream
2 tablespoons freshly chopped parsley leaves

Steps:

  • Sprinkle beef on all sides with black pepper. Wrap beef cubes with enough prosciutto to cover entirely. Be sure that prosciutto doesn't overlap more than once. Place wrapped cubes seam side down on a plate. In a large skillet over medium heat, add oil and butter. When butter has melted add beef cubes, seam-side down to seal, then saute until crisp on all sides, about 8 to 10 minutes for medium rare. Remove beef and let rest 5 minutes before serving. Add shallots to pan and saute 1 minute to soften. Add chicken stock and scrape up brown bits stuck to the bottom of the pan with a wooden spoon. Whisk in mustard and heavy cream and cook 1 minute more to thicken sauce. Remove from heat. Season, to taste, with salt and pepper and garnish with parsley.

Two 1-inch-thick T-bone steaks
Kosher salt and fresh ground pepper
3 tablespoons canola oil
2 large egg yolks
3 teaspoons lemon juice
1 stick unsalted butter, melted
Kosher salt and freshly ground black pepper
1 tablespoon minced fresh chives
1 tablespoon minced red onion
1 teaspoon fresh thyme leaves

Steps:

  • For the T-bone steaks: Heat a large cast-iron griddle or skillet over medium-high heat. Generously sprinkle both sides of the steaks with salt and pepper.
  • Add the oil to the griddle. Add the steaks and cook until nicely browned, 3 to 4 minutes per side for medium-rare. Remove from the heat, then tent with foil and let rest for 5 minutes before slicing.
  • For the easy bearnaise sauce: Add the yolks and lemon juice to a blender. Turn on the blender and slowly stream in the melted butter. Once all the butter is incorporated, season with salt and pepper. Remove the sauce to a bowl over a bain marie (hot water) and keep warm. Add the chives, red onion and thyme and stir to combine. Taste and adjust the seasoning with a little more salt and pepper. Remove from the heat and add to a serving bowl.
  • Serve the bearnaise sauce over the steaks.
