SUNNY'S EASY AND CHEESY STUFFED SLIDER BAKE-TWO WAYS



Sunny's Easy and Cheesy Stuffed Slider Bake-Two Ways image

24 savory or sweet dinner rolls, attached at the hip!
1 1/2 cups shredded rotisserie chicken
1 cup crumbled blue cheese
1 1/2 to 2 cups wing sauce
1 1/4 cups shredded Italian cheese blend
1 cup marinara sauce
3/4 cup shredded mozzarella
12 frozen meatballs, defrosted
1/2 cup grated Parmesan (the sandy kind in a canister)

Steps:

  • Preheat the oven or a grill for indirect cooking to 350 degrees F.
  • Prepare the rolls: Place the rolls on a nonstick-foil-lined baking sheet. With a serrated paring knife, carve out a circle on the top of each, cutting down about 1 inch deep. (You need to keep the bottom sturdy, so you don't want to cut all the way to the bottom. Get your fingers in there and pull out the plug of bread, leaving room for your filling. Save the excess bread for breadcrumbs!)
  • For the buffalo chicken sliders: Mix the chicken, blue cheese, 1 1/2 cups wing sauce or to taste and 1/2 cup of the shredded Italian cheese blend in a medium bowl. Set aside.
  • For the Italian meatball sub sliders: Assemble 12 sliders by spooning into the cavity of each: 1 tablespoon marinara sauce followed by 1 tablespoon mozzarella, then a meatball, then a teaspoon of marinara. Sprinkle the tops of the meatball sliders with the Parmesan.
  • For the buffalo chicken sliders: Assemble the remaining 12 sliders by stuffing 2 to 3 tablespoons of the buffalo chicken mixture into each cavity. Top with the remaining shredded Italian cheese blend.
  • Bake the sliders in the oven or over indirect heat until the cheese is melted and the tops are golden, about 25 minutes.

12 savory or sweet dinner rolls, attached at the hip! (I like Hawaiian's here)
Cooking spray (optional)
10 strips cooked bacon, chopped
1/4 cup habanero nacho cheese sauce (I like Mrs. Renfro's Ghost Pepper Nacho Cheese Sauce here)
1/2 cup shredded Cheddar and pepper jack blend (regular Monterey Jack is fine), then chopped
12 medium eggs
4 tablespoons salted butter, melted
1 tablespoon everything bagel seasoning
2 tablespoons grated Parmesan
Hot sauce, to serve (I like Texas Pete or chipotle flavored Tabasco here)

Steps:

  • Preheat the oven to 350 degrees F.
  • For the rolls: Place the rolls on a nonstick-foil-lined baking sheet or in a baking dish with the sides and bottom coated with cooking spray. With a serrated paring knife, carve out a wide circle on the top of each, cutting down and leaving about 1/2-inch of bread at the bottom. (You need to keep the bottom sturdy, so you don't want to cut all the way to the bottom.) Get your fingers in there and pull out the plug of bread. Press down the bottom with your fingers, leaving room for your filling.
  • For the filling: Evenly divide the bacon into the recesses in the bread. In a medium bowl, mix the nacho cheese sauce with the Cheddar-jack blend. Divide evenly and spoon or pipe into each recess above the bacon. Crack an egg into each cavity.
  • For the topping: Brush the tops of the rolls with the butter, then sprinkle with the everything bagel seasoning and Parmesan.
  • Bake until the eggs are done and the rolls are golden, 20 to 25 minutes. Allow to cool for a few minutes, then cut apart and serve with a shake of hot sauce.

CUBAN SLIDER BAKE

1 stick (8 tablespoons) unsalted butter
2 teaspoons chopped fresh parsley
1 teaspoon chopped fresh oregano
1/2 teaspoon ground cumin
2 cloves garlic, minced
Zest of 1 orange
Zest of 1 lime
Kosher salt and freshly ground black pepper
12 ounces pulled or shredded pork (from the hot bar of the grocery store)
One 12-count package potato rolls, halved
12 ounces thinly sliced deli ham
8 ounces dill pickle slices
8 ounces Swiss cheese slices
1/4 cup yellow mustard

Steps:

  • Preheat the oven to 375 degrees F.
  • Melt the butter in a small saucepan over low heat. Add the parsley, oregano, cumin, garlic, orange zest and lime zest and cook, stirring, until fragrant, about 1 minute. Season with salt and pepper.
  • In a medium bowl, combine the pork and about 3 tablespoons of the butter mixture and toss to coat.
  • Spread some of the remaining butter mixture in the bottom of a 9-by-13-inch baking dish, then place the bottom half of the rolls on the butter. Top the roll bottoms with the ham, then the pork, then the pickle slices and finally the cheese. Spread the mustard on the underside of the roll tops, then lay the roll tops on top of the cheese. Pour the remaining butter mixture over the top of the rolls.
  • Cover the baking dish loosely with foil and bake for 20 to 25 minutes. Uncover and bake until the top is golden brown, about another 5 minutes.

SUNNY'S GRILLED CHICKEN AND AVOCADO BACON SLIDERS

6 boneless, skinless chicken thighs
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1/4 cup vegetable oil
1 teaspoon ground cumin
Zest of 1 lime plus 1 tablespoon fresh lime juice
1/4 cup loosely packed fresh cilantro leaves
4 strips crisp-cooked bacon, chopped
3 avocados, flesh mashed
2 Roma tomatoes, seeded and chopped
1 tablespoon hot sauce (I like Cholula here), optional
Kosher salt
2 onions, thinly sliced
1/4 cup olive oil
4 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
12 slider buns
3 slices pepper Jack cheese, cut into quarters to make 12 squares

Steps:

  • For the chicken and marinade: Gently press each thigh between 2 pieces of plastic wrap to flatten (do this with a rolling pin, it's less brutal than pounding). Season the chicken on both sides with salt and pepper. Place the chicken in a large resealable plastic bag with the oil, cumin and lime zest and juice. Seal the bag and squish everything around until everything is coated by everything. Rest on the counter for 1 hour.
  • For the spread: In a medium bowl, add the cilantro, bacon, avocado, tomatoes and hot sauce if using. Fold to combine gently so the tomatoes don't get mashed, then taste and season with a pinch of salt if needed. Cover by placing plastic wrap directly on the top of the spread and refrigerate until using.
  • For the caramelized onions: In a large pot on low heat (or in a pot over the indirect heat area of a grill), add the onions, olive oil, butter, a pinch of salt and a few grinds of pepper. Cook, stirring every other minute or so, until the onions are tender and a deep golden brown, about 30 minutes.
  • Preheat a grill or grill pan to medium-high heat.
  • Remove the chicken from the bag, shaking off excess marinade. Place the chicken over the direct heat of the grill (or on the grill pan). Once the chicken releases from the grill and can be flipped, flip it to the indirect heat side of the grill (or lower the heat on the grill pan) and grill until cooked through, just 3 to 4 minutes more. Remove the chicken to a cutting board and cover with aluminum foil for 10 minutes. Roughly chop the chicken.
  • To assemble and serve. Build each burger in this order, starting at the bottom with: the bottom bun, slice of cheese, big scoop of chicken and caramelized onions and the top roll slathered with tons of avocado spread.
