1 small yellow onion, cut into chunks
3 garlic cloves
1/4 cup fresh parsley leaves, plus more for garnish
3 basil leaves, plus more for garnish
1 cup marinara sauce, divided
1 cup Italian seasoned breadcrumbs
1/2 cup grated parmesan cheese
1 egg, beaten
2 teaspoons italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 lbs ground chicken
1/2 cup shredded mozzarella cheese
2 1/2 tablespoons unsalted butter
1/2 cup panko breadcrumbs
1 teaspoon garlic powder
2 tablespoons grated parmesan cheese
1 tablespoon chopped parsley
1 tablespoon chopped basil

Steps:

  • Preheat oven to 350 F and line a sheet pan with parchment paper.
  • Add the onion, garlic, parsley and basil to a food processor and pulse until finely chopped. Transfer to a medium sized bowl.
  • Add 3/4 cup of marinara, bread crumbs, parmesan, egg, Italian seasoning, salt and pepper. Stir to combine. Add the ground chicken and mix to combine.
  • Transfer the mixture to the prepared sheet pan and shape into an 8x4 inch loaf.
  • Bake for 45 minutes.
  • Remove from the oven and brush with remaining 1/4 cup marinara sauce. Top with the shredded mozzarella and continue baking for 10-15 minutes.
  • Meanwhile, melt the butter in a medium skillet over medium heat. Add the panko and garlic powder. Toast, about 3-4 minutes. Transfer to a small bowl and let cool several minutes, before stirring in the parmesan, parsley and basil. Season with salt and pepper.
  • Garnish the meatloaf with some of the bread crumb mixture and a sprig of basil. Serve remaining bread crumb mixture and more marinara sauce on the side.

Nonstick cooking spray (olive oil or butter), for coating the baking sheet and chicken
4 boneless, skinless chicken breasts, gently pounded to an even thickness
Kosher salt and freshly ground black pepper
1 1/2 cups seasoned Italian breadcrumbs
1/4 cup grated Parmesan
1 cup prepared pizza sauce (not tomato sauce)
Four 1/4-inch-thick slices fresh mozzarella

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper or nonstick aluminum foil and spray with cooking spray.
  • Season each chicken breast with salt and pepper, then coat each breast with cooking spray. In a shallow bowl, mix the breadcrumbs and Parmesan. Press the chicken breasts into the mixture 1 at a time to coat on all sides, shaking off the excess. Transfer to the prepared baking sheet. Bake, flipping halfway through, until the juices run clear, 20 to 25 minutes.
  • Remove the chicken from the oven and turn on the broiler. Spoon the pizza sauce evenly over the top of each chicken breast and top with a slice of mozzarella. Place under the broiler and watch for the cheese to melt and bubble. Serve.

1 1/2 cups ketchup
1 1/2 teaspoons apple cider vinegar
2 tablespoons sriracha hot chili sauce
2 tablespoons Worcestershire sauce
1 egg
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 teaspoon sweet paprika
4 cloves garlic, grated (on a rasp)
8 sprigs fresh thyme, leaves stripped and chopped
1/2 cup chopped Vidalia onion
1 scallion, minced
1 pound ground chuck, divided
1 pound ground dark meat turkey, divided
2 slices potato bread, lightly toasted and cut into 1/4-inch cubes, divided
Special equipment: 9 by 5-inch loaf pan

Steps:

  • Preheat the oven to 375 degrees F.
  • For the spicy ketchup sauce: Add the ketchup, vinegar and hot chili sauce to a bowl and stir. Reserve 1/2 cup for the meatloaf.
  • For the meatloaf: In a large bowl, whisk together the Worcestershire sauce, egg, salt, pepper, paprika, garlic, thyme, onions, scallions and reserved spicy ketchup sauce. Crumble half the chuck into the bowl, followed by some bread, then half the turkey pile on some more bread cubes. Repeat with the other half of meat and remaining bread. (So a half pound of crumbled chuck, some bread, then a half pound of ground turkey, some bread and repeat until done. Adding this way will make mixing easier and lighter for a juicier loaf.) Gently mix with 1 hand, bringing the egg mixture from the bottom to the top and around until everything is gently combined. Place into a 9 by 5-inch loaf pan, flatten the top and pour the remaining spicy ketchup sauce over the top evenly. Bake in the oven for 60 minutes. Remove and allow to rest for 10 minutes.
  • Tilt the loaf pan slowly to 1 corner and discard any excess fat or juices from the pan while holding the loaf inside. Don't worry, the meatloaf will still be juicy! Slice into 1-inch thick portions. Serve warm and if there's anything left, refrigerate it and enjoy a meatloaf sandwich for leftovers the next day.

1 pound ground chicken
1/2 cup lightly packed chopped fresh basil
1/2 cup lightly packed chopped fresh parsley
1/3 cup finely chopped white onion
2 tablespoons plain breadcrumbs
1 teaspoon Hungarian paprika
1 teaspoon kosher salt
Freshly ground black pepper
4 ounces shredded Parmesan
3 cloves garlic, grated on a rasp
2 scallions, finely chopped (white and green parts)
1 slice white bread, cut into tiny cubes
1 large egg white, whisked until frothy
1 cup pizza sauce
2 tablespoons honey
1 tablespoon hot sauce
Freshly ground black pepper
One 1.5-pound bag steamable sweet potatoes
2 cups fresh broccoli florets (from about 1 head broccoli)
Zest of 2 lemons plus lemon wedges, for spritzing
Zest of 1 orange plus orange wedges, for spritzing
1/2 teaspoon garlic powder
1/8 teaspoon freshly ground nutmeg
3 tablespoons olive oil
Kosher salt and freshly ground black pepper

Steps:

  • For the meatloaves: Line a sheet pan with nonstick aluminum foil and set aside.
  • Add the ground chicken to a large bowl and break it up. Set aside. Combine the basil, parsley, onion, breadcrumbs, paprika, salt, pepper, cheese, garlic, scallions, bread and egg white in a medium bowl and stir until everything is blended. Add to the chicken and gently mix with your less dominant hand, turning the bowl with the dominant hand and using your fingers on the less dominant hand as a pitchfork, folding as you go, until mixed well. Form into 4 equal parts and and place on the lined sheet pan. Form into bricks of a similar size. Set aside.
  • For the meatloaf topping: Heat the pizza sauce, honey, hot sauce and plenty of black pepper in a small saucepot on medium heat until it comes to a simmer. Simmer until it reduces and thickens slightly, about 10 minutes. Set aside.
  • For the veggies: Preheat the oven to 375 degrees F. Steam the sweet potatoes according to the package instructions, about 6 minutes. Slice into 1-inch-thick coins.
  • Combine the sweet potatoes in a large bowl with the broccoli, citrus zests, garlic powder and nutmeg. Drizzle with the olive oil and toss. Sprinkle with salt and pepper and toss again.
  • Add the vegetables to the sheet pan with the meatloaves by placing the sweet potatoes on first, surrounding the meatloaves, then pouring over the broccoli. Bake for 30 minutes, then remove and brush the meatloaves with the topping. Spritz the vegetables with juice from the orange and lemon wedges. Continue to bake until the internal temperature of the meatloaves registers 165 degrees F, about another 15 minutes.
