SUNNY'S EASY ROSEMARY AND THYME TOASTED NUTS



Sunny's Easy Rosemary and Thyme Toasted Nuts image

Number Of Ingredients 8

2 tablespoons roughly chopped fresh rosemary
9 to 10 sprigs fresh thyme, leaves stripped and chopped
1/4 teaspoon hot Hungarian paprika
1 cup almonds
2 cups pecan halves
1 cup walnut halves
Kosher salt and freshly ground black pepper
1 tablespoon olive oil

Steps:

  • In a large pan set over medium heat, add the rosemary and thyme and toast until fragrant but not browned. Remove to a small bowl and add the paprika.
  • In the same pan, add the almonds and toast for 1 minute. Add the pecans and toast for an additional minute. Add the walnuts and continue to toast until the nuts are fragrant and feel warm to the touch, about 5 minutes.
  • Pour the nuts into a large bowl and season with salt and a few grinds of black pepper. Sprinkle with the herb/paprika mixture, drizzle with the olive oil and toss to coat. Serve warm.

SUNNY'S BANANA PUDDING "JAR-FAITS"



Sunny's Banana Pudding

1 cup creamy peanut butter
2 tablespoons creamed honey
One 8-ounce tub whipped topping
2 cups mini vanilla wafers
2 bananas, peeled and sliced into 1/4-inch slices
2 cups prepared vanilla pudding

Steps:

  • In a large bowl or stand mixer, add the peanut butter and honey and blend. Add the whipped topping and fold until combined.
  • Layer the ingredients evenly in 6 canning jars in this order: wafers, bananas, pudding, wafers, bananas, peanut butter mixture, then repeat. Reserve a few banana slices and use them to top each jar. Refrigerate at least 4 hours until set and chilled. Serve cold.

6 ounces limoncello (recommended: Toschi Italian Lemon Liqueur)
3 ounces dark rum
3 ounces tequila
1 (24-ounce) bottle sweetened iced tea
Ice
Lemon slices, to garnish

Steps:

  • Pour the limoncello, rum, tequila and tea into a pitcher filled with ice and stir vigorously. Serve in ice filled highball glasses with a straw. Garnish with a lemon slice on the rim.

2 black tea bags
8 black peppercorns
4 cloves
1/2 cup milk
Generous pinch pumpkin pie spice
2 cinnamon sticks, for garnish

Steps:

  • Bring 2 cups of water to a boil. Add the tea bags, peppercorns and cloves and let steep for 5 minutes. Strain into 2 large mugs. Top with the milk and pumpkin pie spice. Garnish with the cinnamon sticks.

BLUEBERRY ICED TEA



Blueberry Iced Tea image

1 cup fresh or frozen blueberries
5 cups brewed and cooled black or green tea

Steps:

  • Combine blueberries and about a cup of iced tea in a blender and puree until smooth. Strain through a fine sieve into a pitcher and add remaining iced tea. To serve, pour into glasses over ice.
