A to-die-for take on the usual olive tapenade. Don't use California sundried tomatoes because they are too sweet! Every time I make this I get requests for the recipe! I've never actually had the patience to chill this and always end up serving it right away. It's a huge hit! Serve with your favorite crackers.

2 tablespoons balsamic vinegar
1 tablespoon olive oil
¼ teaspoon cayenne pepper
1 (8 ounce) jar Mediterranean sun-dried tomatoes packed in oil, drained and chopped
⅓ cup chopped pitted Kalamata olives
⅓ cup chopped pitted green olives
3 cloves garlic, minced
freshly ground black pepper to taste
1 (8 ounce) package cream cheese, halved lengthwise

Steps:

  • Stir balsamic vinegar, olive oil, and cayenne pepper together in a bowl; fold in sun-dried tomatoes, Kalamata olives, green olives, and garlic. Season with black pepper. Cover bowl with plastic wrap and refrigerate for flavors to blend, at least 2 hours to overnight.
  • Arrange cream cheese halves on 2 serving dishes; spoon tapenade over cream cheese.

This is a great tapenade to serve Italian garlic Parmesan toasted pannitini. It's also wonderful baked on top of chicken for a uniquely flavored meal.

1 cup sun-dried tomatoes, packed in oil, drained and oil reserved
⅓ cup reserved sun-dried tomato oil
3 tablespoons finely chopped red pepper
5 cloves garlic, finely chopped
6 ounces crumbled feta cheese
2 tablespoons dried basil
½ teaspoon ground black pepper
2 teaspoons balsamic vinegar

Steps:

  • Finely chop sun-dried tomatoes and place in a large bowl. Stir in the reserved tomato oil, red pepper, garlic, feta cheese, dried basil, black pepper, and balsamic vinegar and mix well. Cover and chill for at least four hours before serving.

Grilled Lamb Sandwiches with Grilled Spring Onions with Sage Aioli and Sundried Tomato Tapenade image

Number Of Ingredients 21

1 (3 pound) butterflied boned leg of lamb
6 cloves garlic, finely sliced
2 tablespoons finely chopped fresh thyme
1 tablespoon finely chopped fresh rosemary
1/2 cup olive oil
2 bunches spring onions, trimmed
2 French bread baguettes, each cut crosswise into five 4-inch pieces
Salt and freshly ground black pepper
6 cloves garlic
3 tablespoons extra virgin olive oil
6 sage leaves
2 cups mayonnaise
1 tablespoon fresh lemon juice
3 ounces oil packed sun-dried tomatoes, coarsely chopped
1 tablespoon capers, drained
5 ounces pitted Nicoise olives
1 clove garlic, finely chopped
1 teaspoon lemon zest
1 teaspoon fresh lemon juice
3 tablespoons extra virgin olive oil
Salt and freshly ground pepper

Steps:

  • Using a sharp knife, cut 1/2-inch slits all over lamb. Insert garlic slices into slits. Brush the lamb with 1/4 cup of the olive oil and sprinkle with herbs. Place in a baking dish, cover and let marinate in the refrigerator overnight.
  • Preheat grill. Brush green onions with some of the remaining oil and and season with salt and pepper to taste. Grill for 2 to 3 minutes on each side until almost cooked through. Remove to a plate.
  • Remove lamb from marinade and season with salt and pepper to taste. Grill the lamb until the thickest part registers 135 degrees F. for medium rare, turning occasionally, about 30 minutes. Transfer to a platter and tent with foil. Let stand 10 minutes.
  • Brush bread with some of the olive oil and grill, cut side down for until lightly golden brown, about 1 minute.
  • Chop onions. Cut lamb diagonally into thin slices. Serves with green onions, aioli and tapenade.
  • Sage Aioli: Puree garlic, oil and sage in a food processor until smooth. Add the mayonnaise and lemon juice and process until combined. Season with salt and pepper to taste.
  • Sun-dried Tomato-Black Olive Tapanade: Combine all ingredients in a food processor and process until smooth. Season with salt and pepper to taste.

GHOSTINIS WITH BLOODY MURDER SUNDRIED TOMATO TAPENADE

The ghost-shaped crostini--ghostinis--make as eerie accompaniment to this tomato-ey tapenade. But even without its ghostly companions, it's still a hit.

1/2 cup fresh parsley leaves
1 loaf sourdough bread (about 1 1/4 pounds)
1/4 cup plus 1 tablespoon olive oil
Kosher salt and freshly ground black pepper
1/2 cup pitted kalamata olives
1/2 cup sundried tomatoes in oil, plus 1 tablespoon flavored oil from the jar
2 tablespoons drained capers in brine
1 tablespoon fresh lemon juice
Grissini and/or seeded flatbread crackers, for serving

Steps:

  • Preheat the oven to 400 degrees F. Trim the hard crusts from both ends of the loaf of bread. Slice the remaining loaf into 1/2- to 3/4-inch slices; you will have between 14 and 16 slices. Using the cookie cutter, cut 1 to 2 ghosts from each slice of bread, depending on the size. Reserve the scraps for making fresh breadcrumbs, stuffing or bread pudding.
  • Lay the ghosts on a rimmed baking sheet and lightly brush with 1 tablespoon of the olive oil. Season all the slices with 1/4 teaspoon salt and 1/4 teaspoon pepper. Bake in the oven until toasted, flipping halfway, 10 to 12 minutes. Set aside to cool.
  • While the bread toasts, put the olives, parsley, sundried tomatoes, flavored oil, capers, remaining 1/4 cup olive oil, 2 tablespoons water and 1/4 teaspoon pepper in the bowl of a food processor. Pulse until chunky and then process until mostly smooth. Add the lemon juice and pulse a few times to incorporate.
  • Serve with the ghostinis on the side plus additional grissini breadsticks and/or flatbread crackers.

1 cup sundried tomatoes from a jar (drain off oil)
1 garlic clove, pressed
1 small can minced black olives (can is 1.5" - 2" tall)
¾ cup kalamata (Greek) olives
1 tablespoon balsamic vinegar
3 teaspoons capers
Salt and pepper to taste

Steps:

  • Combine ingredients in a food processor. If too tart, add a bit of honey. Serve with bagel chips
