Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

This recipe came from the Barefoot Contessa and I have made it several times. It's very creamy and satisfying. If you are going to make it with the fresh banana slices, you must eat it the same day. I always use 1% milk, because I never have whole milk on hand. The stir-ins, fruits, nuts, are flexible, whatever you like, and whatever you have on hand.

1 1/2 cups whole milk
1 1/2 cups quick oats
1/2 teaspoon kosher salt
1 banana, sliced
1/2 cup dried cherries
1/2 cup golden raisin
2 tablespoons maple syrup or 2 tablespoons brown sugar, to taste

Steps:

  • Heat milk plus 2 cups of water in a medium saucepan until it starts to simmer. Add oatmeal and salt, bring to a boil. Reduce heat and simmer 4 to 5 minutes, stirring occasionally until thickened.
  • Remove from heat. Add your stir-ins: banana slices, cherries, raisins, or whatever you are using. Cover, and let stand 2 minutes. Serve hot with a drizzle of maple syrup or sprinkle of brown sugar to taste, cinnamon if desired. You may also add extra milk to taste.
  • Suggestions for stir-ins: chopped walnuts, slivered almonds, minced dried apricot, chopped apple (dried or fresh) etc.

FRENCH TOAST BREAD PUDDING

1 challah loaf, sliced 3/4-inch thick
8 extra-large eggs
5 cups half-and-half or milk
3 tablespoons honey
1 tablespoon grated orange zest
1 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
Confectioners' sugar and pure maple syrup, for serving

Steps:

  • Preheat the oven to 350 degrees.
  • Arrange the bread in two layers in a 9 by 13 by 2-inch baking dish, cutting the bread to fit the dish. Set aside.
  • In a large bowl, whisk together the eggs, half-and-half, honey, orange zest, vanilla, and salt. Pour the mixture over the bread and press the bread down. Allow to soak for 10 minutes.
  • Place the baking dish in a larger roasting pan and add enough very hot tap water to the roasting pan to come an inch up the side of the baking dish. Cover the roasting pan tightly with aluminum foil, tenting it so the foil doesn't touch the pudding. Make two slashes in the foil to allow steam to escape. Bake for 45 minutes, remove the aluminum foil, and bake for another 40 to 45 minutes, until the pudding puffs up and the custard is set. Remove from the oven and cool slightly.
  • With a small sieve, dust lightly with confectioners' sugar and serve hot in squares with maple syrup on the side.

1/3 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 medium apples, peeled and sliced
3/4 cup dried cranberries
2 tablespoons butter, cubed
2 cups old-fashioned oats
2 cups water
2 cups cranberry-apple juice
1/2 teaspoon salt
Optional toppings: Chopped pecans, dried cranberries or sliced apples

Steps:

  • Combine brown sugar, cinnamon and nutmeg. Add apples and cranberries; toss to coat. Transfer to a 3-qt. slow cooker. Dot with butter., In a large bowl, combine oats, water, juice and salt; pour over apple mixture. Cook, covered, on low until liquid is absorbed, 7-8 hours. Serve warm; top as desired.
