Here's a good old-fashioned recipe for Sunday Meatloaf, with saltine crackers to make it moist and a catsup glaze that is probably my favorite part. I've been making this recipe for years. Ever since my husband and I married, which is now over 30 years.

2 large eggs
1/4 cups whole milk
1 1/2 cups crushed saltine crackers
1/4 cup chopped onion
2 tablespoons dried parsley
1 teaspoon liquid smoke
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 1/2 pounds lean ground beef or ground venison (90/10)
1/4 cup ketchup
1 tablespoon yellow mustard
3 tablespoons brown sugar
3/4 cups ketchup (for glaze)

Steps:

  • Preheat oven to 350 degrees. Begin by gathering your ingredients so that you have them at hand on the counter or table. Prepare the ingredients.
  • Crush the saltine crackers. To do this, I place one sleeve of crackers in a large freezer bag. Close it up squeezing out all the extra air. Then using my rolling pin, I'll crush the crackers until they are a nice fine crumb. This will make just short of 1 1/2 cups. Next, using a Chef's knife and cutting board, chop the onion.
  • In a large glass or stainless bowl, combine the eggs and whole milk. Stir into the egg mixture the crushed crackers, chopped onion, dried parsley, liquid smoke, kosher salt and black pepper. Add in ground beef (or venison), ketchup, mustard, and brown sugar. Mix well, using a large spoon or your hands.
  • Spoon the meat mixture into a greased 9x11 loaf pan. I've used both metal and glass pans to make this meatloaf. I think the glass pans are a little easier to clean up in the end. Plus, if it's pretty, you can serve the meatloaf directly from oven to table.
  • Cover with tinfoil. Bake in preheated oven for 45 minutes. Remove the tinfoil, and pour 3/4 cups ketchup over meatloaf.
  • Bake uncovered for another 10 minutes. Serve warm. This recipe will serve 4-6 people.

We love meatloaf. It's such a homey, warm, comfort food. It makes the perfect Sunday meal. There are so many variations to meatloaf. This one is basic, but not lacking flavor. Serve with homemade mashed potatoes and a green vegetable, such as peas, green beans, or Brussels sprouts. The best part of this meal? The people you spend it with.

2 pounds ground beef (80% lean)
½ cup mayonnaise
¼ cup Italian-style bread crumbs
2 tablespoons Dijon mustard
1 teaspoon granulated onion
½ teaspoon kosher salt
½ teaspoon ground black pepper
2 tablespoons steak sauce (such as A.1.®)
2 tablespoons ketchup
1 tablespoon brown sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix ground beef, mayonnaise, bread crumbs, mustard, onion, salt, and pepper together in a large bowl until well combined. Transfer mixture to a 9x5-inch loaf pan with high sides. Form into a loaf by picking it up and forcing it down into the pan, making sure to knock out any air and square off all sides.
  • Bake in the preheated oven for 30 minutes. Spin pan and bake for an additional 30 minutes.
  • Mix steak sauce, ketchup, and sugar together in a small bowl.
  • Remove from the oven and spoon sauce over top. Bake until no longer pink in the center, about 10 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Remove form the oven and let rest for 5 minutes. Remove meat loaf to a serving platter and slice into 8 slices.

A delicious family recipe! This easy meatloaf has a flavorful stuffing filling and is topped with a mouthwatering tomato sauce and bacon.

2 lb ground beef
1 tsp salt
1/4 tsp pepper
1 cup evaporated milk
1 tsp Worchestershire sauce
2 cups Stovetop stuffing mix, uncooked
1/2 cup tomato soup
3 strips bacon, uncooked

Steps:

  • Preheat oven to 350F. Grease a loaf pan.
  • In a large bowl, mix together ground beef, salt, eggs, pepper, evaporated milk and Worcestershire sauce. Spread 1/2 mixture into loaf pan.
  • Spread stuffing mix on top of meat mixture in loaf pan. Top with remaining meat mixture.
  • Spread tomato soup on top. Place strips of bacon on top of tomato soup.
  • Bake for 1 hour.

Making this with parmigiano mashed potatoes and stir fry vegetables. I make a big loaf for the sake of leftovers. (Hope, hope)!!! I added 2 packages of seasonings because it's a lot of meat. Scale yours back as needed.

1 lb ground turkey
1 1/ 2 lb ground chuck
4 links turkey italian sausages
1 medium yellow onion, minced
1 / 2 bell pepper, minced
2 pkg 1. 5 oz french's meatloaf seasoning and roasting bag
2 medium eggs
3/4 c milk
1 c bread crumbs

Steps:

  • 1. Gather your ground chuck, turkey, and turkey italian sausages. Remove the sausage from casings and place in large mixing bowl.
  • 2. Add the two eggs, panko, milk. Then add seasoning bag mix, onion, bell pepper and milk. Mix all together well and refrigerate for 30 minutes so it is easier to handle.
  • 3. After taking from the fridge, shape into loaf form. I had to do this because I don't own loaf pans. If you have loaf pans this amount will easily fill 2.
  • 4. Put your loaf in an 8x11" pan , spray the top of loaf and cover with foil, this will keep the meat from sticking to the foil. bake in the oven for 1 hour to and hour and a half. Checking for doneness after 1 hour 10 minutes.
  • 5. After removing from the oven, let loaf rest 15 to 20 minutes before glazing. We love the combination of famous Dave's devil's spit, dijon mustard and ketchup. Hope you like it.

1 tablespoon olive oil
3 celery ribs, finely chopped
1 medium onion, finely chopped
1 carrot, peeled and finely chopped
2 garlic cloves, finely chopped
salt and pepper
3/4 cup Guinness draught
4 -6 slices white bread, stale
1 cup whole milk
1/2 lb deli corned beef, chopped
1 1/2 lbs ground beef
1 cup sharp cheddar cheese, grated
1 tablespoon dried mustard
1/2 teaspoon cayenne pepper
3 tablespoons Worcestershire sauce
2 large eggs, lightly beaten
3/4 lb bacon, thinly-sliced

Steps:

  • Pre-heat the oven to 350°F.
  • Line a baking sheet with parchment paper.
  • Heat the olive oil in a medium size skillet over medium to medium-high heat. Add the celery, onion, carrot and garlic; season with salt and pepper and sauté to soften, about 10 minutes, stirring frequently. Pour in the beer and stir. Let the beer reduce by half. Turn off the heat and let cool.
  • Meanwhile, soak the bread in milk and finely chop the corned beef. Place the corned beef and ground beef in a bowl and add the cheese. Wring out the bread and add it to the meat, crumbling it over the bowl. Pour in the beer mixture. Season with salt, pepper, mustard, cayenne and Worcestershire sauce. Add the eggs and mix with your hands.
  • Form the meat into a brick about 4 inches high on the baking sheet. Wrap the bacon slices across the top and around sides of the loaf. Bake for 1 hour in the middle of the oven, then switch on the broiler for about 5 minutes to crisp the bacon.

1 1/2 lbs lean ground beef
1/2 cup coarse breadcrumbs
2 lightly beaten eggs
1 cup spaghetti sauce
1 tablespoon Worcestershire sauce
1/4 cup onion, chopped
1/2 red capsicum, chopped fine
1 tablespoon of any fresh herb (like basil or marjoram or thyme or dried combination of these herbs)
1/4 teaspoon cracked black pepper
1/4 teaspoon salt

Steps:

  • Preheat oven to 350°F.
  • Set aside about ¼ of the spag sauce to go on top of meat loaf.
  • Add all seasonings into the beaten eggs, then add remaining ingredients, meat last.
  • Mix with hands until well combined. It should not feel too wet or sloppy otherwise it won't serve well, but not too stiff either or it will be dry and tough.
  • Use bread crumbs or more spag sauce to adjust.
  • Press into a medium loaf pan, spread remaining spag sauce on top and bake for about an hour or 1 ¼ hours
  • Will be cooked when juices are bubbling clear. Let completely cool before removing from pan.
