SUMMERTIME CUCUMBER AND COTTAGE CHEESE SALAD

My grandmother used to make this healthy summertime salad to help use up extra cukes from the garden. My husband works outside and loves coming home to this during the heat of the summer. The cottage cheese and mayo can be subbed with low fat for a healthier version.

1 large cucumber (i prefer english)
1 small sweet onion
24 ounces cottage cheese
2 tablespoons mayonnaise
salt and pepper

Steps:

  • Dice cukes and onion into small pieces.
  • Mix cottage cheese, cukes, onions, mayo and salt/pepper in medium mixing bowl.
  • Refrigerate for at least 30 minutes.

These are a summertime favorite at my house. Fresh cucumbers are sliced along with onions, salt and pepper, and vinegar.

1 cup creamy salad dressing (such as Miracle Whip®)
½ cup white sugar
¼ cup vinegar
salt and ground black pepper to taste
4 cucumbers, sliced
1 large onion, sliced

Steps:

  • Stir salad dressing, sugar, and vinegar together in a bowl until smooth; season with salt and pepper. Pour dressing over cucumbers and onion in a larger bowl and stir gently to assure vegetables are coated.

2 medium cucumbers
2 medium zucchini
1/2 cup white vinegar
4 tablespoons sugar
1 cup hot water
1 tablespoon salt
1 teaspoon coarse black pepper (fresh ground if available)
1 teaspoon crushed red pepper flakes

Steps:

  • For the dressing: Dissolve sugar in hot water then blend with the vinegar, salt, and peppers. .
  • Arrange in alternate layers: 2 medium CUCUMBERS, scored with a fork, not peeled but sliced very thinly and 2 medium ZUCCHINI, raw, same size as cucumbers, prepared the same way.
  • Drain any water formed from cucumbers before adding the dressing.
  • Allow vegetables to marinate in the dressing at least 1 hour before serving.
  • Serve with meat, fish, or poultry.
