PICNIC MARINATED SUMMER SLAW
Oh, such a summertime taste. This easy-to-prepare slaw was given to me by a neighbor who said a little lady from her church gave it to her! A refreshing and delightful change for slaws. Tastes delicious after allowing to marinate for several hours. Enjoy!

SUMMER APPLE SLAW
From Southern Living May 2009 "Summer Living" Special Section, this is a nice combination of red and green fruits and veggies. Great as a side for bar-b-ques. You could probably use the short-cut of buying prepared slaw mix with the cabbages already shredded and ready to use - could even include matchstick carrots. NOTE: Prep time includes 1 hour chill time.

Steps:
- 1. Cut cabbage in half and core. Slice thinly and put in bowl; repeat with other head of cabbage.
- 2. Shred carrots and add to bowl. I use 5 or 6, but you can use more. This is a colorful salad so add until you think there's enough orange to mix with the bright purple and green.
- 3. Drizzle EVOO over salad - as much or little as you like. I use about a half a cup. Then slice and squeeze 1 or 2 lemons, depending on size, and how much lemon you want.
- 4. Season with salt and pepper. I think Kosher salt and fresh ground pepper taste brightest. Sprinkle with sliced almonds, mix and let sit in the frig for an hour or so so flavors blend. This slaw salad is refreshing and delicious.
