1 (10 ounce) package shredded cabbage
1 cucumber, peeled and chopped
1 green bell pepper, chopped
1 large tomato, peeled and chopped
1 bunch green onions, chopped
½ cup white sugar
½ cup vegetable oil
¼ cup white vinegar
salt and ground black pepper to taste

Steps:

  • Combine cabbage, cucumber, green bell pepper, tomato, and green onions in a large bowl.
  • Cook and stir sugar, vegetable oil, vinegar, salt, and pepper together in a saucepan over medium heat until sugar dissolves, about 5 minutes. Remove from heat and allow to cool. Pour marinade over vegetables and stir to coat. Marinate slaw in the refrigerator for at least 2 hours.

1/4 cup of finely shredded carrot (approx 1 large carrot)
1/4 cup raisins
1 cup pineapple chunks in heavy syrup (approx 1 small can, cut chunks into smaller pieces)
3 tablespoons of freshly squeezed lime juice (approx 1 small lime)
1 cup mayonnaise (not miracle whip)
1/4 cup honey

Steps:

  • In a large bowl mix mayonnaise, honey, lime juice, (and if you want pineapple syrup. Don't add the pineapple syrup if you want a creamier consistency).
  • Incorporate coleslaw, carrots, raisins, and pineapple chunks.
  • Mix well cover and refrigerate.
  • Mix again just before serving.

4 Ritz or saltine crackers, coarsely crushed
1 medium zucchini, coarsely grated (1 1/2 cups)
1/2 small fennel bulb, trimmed and thinly sliced
1 tablespoon olive oil

Steps:

  • Whisk together mayonnaise, 1 teaspoon lemon juice, chives, mustard, cayenne, and 1/4 teaspoon each of salt and pepper in a medium bowl.
  • Stir together salmon, crackers, 3/4 cup zucchini, and half of mayonnaise mixture in another bowl.
  • Add fennel and remaining zucchini and lemon juice to mayonnaise mixture in medium bowl and toss to combine slaw.
  • Form salmon mixture into 2 (3-inch) patties. Heat oil in a small nonstick skillet over medium heat until hot, then cook salmon cakes, carefully turning once, until golden and salmon is just cooked through, about 6 minutes total.

1 teaspoon celery seeds
1 teaspoon sugar

3 medium yellow or green zucchini, or a combination, spiralized or coarsely grated (6 cups)
3 medium carrots, peeled and spiralized or coarsely grated (2 cups)
1 yellow, orange, or red bell pepper, stem and seeds removed, very thinly sliced (1 1/2 cups)
1/2 sweet onion, such as Vidalia, very thinly sliced (1 1/2 cups)

1 cup julienned chayote squash
1 cup julienned canary melon

2 ounces orange reduction

6 ounces heavy cream
6 ounces coconut milk
1/4 cup toasted coconut
12 ounces ahi tuna loin
12 Thai basil leaves

Steps:

  • Curried Squash: Place sliced squash, onion, and garlic into a saucepan and sweat with grapeseed oil. Stir in curry powder, add lime leaves, coconut milk, and stock. Simmer for 5 to 8 minutes. Remove lime leaves and blend. Finish by seasoning with ginger juice, salt, and ground cumin. Chill.
  • Chayote Slaw: Toss all ingredients together and season with salt.
  • Ahi Poke: Toss together in a bowl. Chill.
  • Coconut Cream: Reduce cream. Add milk and reduce. Add toasted coconut. Chill.
  • Ahi Tuna: Char the tuna loin in a wok, remove from a pan, and let rest. Place poke, charred tuna (sliced) and slaw in a bowl. Pour in squash puree and garnish with coconut cream and basil.

1/4 pound green beans, trimmed

Steps:

  • In a small bowl, whisk together creme fraiche or sour cream, ginger, orange juice, and half the poppy seeds. Season to taste with salt and pepper. Refrigerate until needed.
  • Peel and julienne carrots. Slice fennel bulb crosswise, as thinly as possible. Cut beans into long strips. Combine vegetables in a medium bowl and toss with dressing immediately before serving. Garnish with remaining poppy seeds.

This unconventional sandwich pairs healthier turkey kebabs with bright, low fat slaw and naan bread to make a juicy, messy, can't-stop-eating sandwich.

1/4 c chopped purple onion
1 tsp ground cumin
2 tsp garlic powder
1/4 tsp ground black pepper
1 tsp salt

1/4 c apricot preserves
2 tsp sriracha
SUMMER SLAW
1 c finely shredded cabbage
1/4 c chopped purple onion
2 Tbsp chopped jalapeno
3/4 c finely chopped mango
2 tsp lime juice
1/4 c feta cheese
1 dash(es) salt
SAUCE
8 oz greek yogurt
2 Tbsp chopped purple onion
1/4 c chopped cucumber-no seeds
1 tsp lime juice
1/2 tsp garlic powder
1/2 tsp salt
2 naan-cut in half to make 4 pieces

Steps:

  • 1. In a small bowl, combine apricot preserves and sriracha sauce. Set aside.
  • 2. In a bowl, combine onion, mango, jalapeno, cabbage, lime juice, feta cheese, and a dash of salt. Set aside.
  • 3. In a blender, combine yogurt, onion, cucumber, lime juice, salt, and garlic powder. Blend until smooth. Pour into a bowl and set aside while grilling kebabs.
  • 4. In a bowl, combine turkey, onion, cumin, cinnamon, black pepper, salt, parsley, and garlic powder. Using an ice cream scoop, form large meatballs. Put 2 meatballs per skewer and press to slightly flatten. Heat gas grill to 400 degrees or a charcoal grill until coals burn orange. Place turkey skewers on grill. Grill for 3-5 minutes or until lightly charred. Turn kebabs. Brush grilled side with apricot sauce. Grill for an additional 1-2 minutes. Turn and brush with remaining apricot sauce. Remove from heat.
  • 5. Place naan bread on grill for 30 seconds, just to soften. Cut naan in half to create 4 pieces
  • 6. To serve... Spoon approximately ¼ c. slaw onto each naan. Place 2 kebabs per naan. Drizzle with yogurt sauce. Using a bamboo skewer, pierce the top of each sandwich to hold together or wrap sandwiches in foil. Serve immediately.

2 scallions, thinly sliced

3 tablespoons olive oil
1 tablespoon fresh lemon juice
Kosher salt
Freshly ground black pepper
4 ounces feta, thinly sliced

Steps:

  • Toast buckwheat in a large, dry skillet over medium-high heat, tossing often, until fragrant, about 4 minutes. Transfer to a plate; let cool.
  • Toss squash, scallions, mint, marjoram, oil, and lemon juice in a large bowl; season with salt, pepper, and more lemon juice, if desired. Add feta and toasted buckwheat and toss gently to combine.

2 scallions, sliced
Dressing:
½ cup red wine vinegar
¼ cup sugar
1 tablespoon prepared mustard
1 teaspoon hot pepper sauce
salt and pepper to taste
Salmon steak or fillet, about ¾ lb.
2 tablespoons prepared mustard
1 teaspoon hot pepper sauce
1 teaspoon ground cumin
¼ teaspoon ground black pepper
1 tablespoon olive oil

Steps:

  • Combine cabbage and peppers in large bowl. Combine dressing ingredients and whisk to blend. Pour three fourths of dressing over slaw mixture and set aside in refrigerator. Stir together mustard, pepper sauce, cumin and black pepper and rub over flesh side of salmon (if salmon is skinless, rub on both sides.) Preheat very heavy skillet over high heat. Add olive oil to pan, and add salmon, seasoned side down. Sear for about 10 minutes. Turn salmon over, turn heat down to low-medium and cover pan. Continue to cook until salmon is cooked throughout and begins to flake. (10 to 15 minutes) Remove skin, and set salmon aside to cool to room temperature. To serve, divide slaw mixture on four individual plates and place chunks of salmon on top. Drizzle salmon with remaining dressing.

We eat this all summer long. It's colorful, refreshing, light and delicious.

1 green cabbage
1 red cabbage
1 bunch carrots (5-6)
olive oil
2 lemons
1 bag sliced almonds
salt & pepper to taste

Steps:

  • 1. Cut cabbage in half and core. Slice thinly and put in bowl; repeat with other head of cabbage.
  • 2. Shred carrots and add to bowl. I use 5 or 6, but you can use more. This is a colorful salad so add until you think there's enough orange to mix with the bright purple and green.
  • 3. Drizzle EVOO over salad - as much or little as you like. I use about a half a cup. Then slice and squeeze 1 or 2 lemons, depending on size, and how much lemon you want.
  • 4. Season with salt and pepper. I think Kosher salt and fresh ground pepper taste brightest. Sprinkle with sliced almonds, mix and let sit in the frig for an hour or so so flavors blend. This slaw salad is refreshing and delicious.
