1-1/2 cups uncooked elbow macaroni
1 rotisserie chicken, skin removed, shredded
3/4 cup fresh or frozen peas
5 green onions, finely chopped
2 celery ribs, thinly sliced
1/3 cup loosely packed basil leaves, thinly sliced
1/4 cup lemon juice, divided
1 teaspoon kosher salt
3/4 teaspoon coarsely ground pepper
3/4 cup plain yogurt
3/4 cup reduced-fat mayonnaise
3 medium peaches, peeled and sliced
1 cup sharp cheddar cheese, shredded
1/2 cup crumbled Gorgonzola cheese
3/4 cup pistachios

Steps:

  • Cook macaroni according to package directions. Meanwhile, mix chicken, peas, onions, celery, basil, 2 tablespoons lemon juice, salt and pepper. Drain macaroni; rinse with cold water, then drain again. Add to chicken mixture., Mix yogurt, mayonnaise and remaining lemon juice. Add to salad and mix well. Add peaches and cheeses; toss gently. Refrigerate at least 2 hours. Sprinkle with pistachios before serving.

1 package (16 ounces) elbow macaroni
1 cup reduced-fat mayonnaise
3 to 4 tablespoons water or 2% milk
2 tablespoons red wine vinegar
1 tablespoon sugar
1-1/2 teaspoons salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1 small sweet yellow, orange or red pepper, finely chopped
1 small green pepper, finely chopped
1 small onion, finely chopped
1 celery rib, finely chopped
2 tablespoons minced fresh parsley

Steps:

  • Cook macaroni according to package directions. Drain; rinse with cold water and drain again., In a small bowl, mix mayonnaise, water, vinegar, sugar and seasonings until blended. In a large bowl, combine macaroni, peppers, onion and celery. Add 1 cup dressing; toss gently to coat. Refrigerate, covered, until cold, about 2 hours. Cover and refrigerate remaining dressing to add just before serving., To serve, stir in reserved dressing. Sprinkle with parsley.

Hope I will get around to making it some day. I think the colored noodles would be fun with all the other colors.

7 ounces elbow macaroni (2 cups dry)
2 tablespoons salad oil
2 tablespoons vinegar
1 tablespoon onion, minced
1/2 teaspoon seasoning salt
1/4 teaspoon seasoned pepper
1 cup cheddar cheese, diced in chunks
1 (12 ounce) can Spam, cubed
1/2 cup mayonnaise (or salad dressing)
1 cup celery, diced
10 ounces frozen sweet peas or 17 ounces peas

Steps:

  • Cook macaroni according to directions. Drain, do not chill.
  • While hot drizzle with oil and vinegar.
  • Add onion, seasonings and cheese, toss well.
  • Chill throughly. Serve on salad greens to dress up (optional).

This is my family's go to meal during the summer. I make a huge batch of it and we all eat it around the pool all Memorial weekend. I've used Cavatappi pasta instead of elbow macaroni this time so that the cute curly Cavatappi's ridges can grab more tuna. Enjoy!

1 box 1 lb macaroni, elbow or cavatappi pasta
2 can(s) 12 oz water packed tuna
1 jar(s) 14 oz sweet pickle relish
1 jar(s) 15 oz. miracle whip
salt & pepper to taste

Steps:

  • 1. Bring pot of salted water to a rapid boil. Add pasta to boiling water. Stir and let boil for 8-10 minutes. Remove Pasta from pot, drain well then rinse while in colander with cold water from your tap. After pasta is completely cooled, drain well and pour into large bowl.
  • 2. While pasta is boiling, rough chop a large sweet onion.
  • 3. Empty the contents of the sweet relish into bowl with pasta and stir. Add the chopped onion and mix into pasta mixture.
  • 4. Open both cans of tuna and drain well. Empty the cans of tuna, breaking up the tuna as you do. Mix well into pasta mixture. Add the jar of Miracle Whip and mix completely with pasta, relish and onion.
  • 5. Refrigerate the pasta salad until very cool. Before serving, stir again and add salt and pepper to taste. I like to use sea salt for the taste.
  • 6. Hint: Sometimes the salad becomes dry (due to the pasta absorbing the liquid), so before serving if it is a little dry, add a small amount of milk to the pasta salad and mix well.

1 lb salad macaroni (cooked)
1 cup frozen peas
4 sweet pickles, finely minced (baby gherkins)
1/2 cup diced celery
1/2 cup diced sweet onion
6 ounces albacore tuna in water, drained
1 cup sharp cheddar cheese, cubed (about 1/4-inch pieces)
1 cup mayonnaise
granulated sugar
white vinegar
salt and pepper

Steps:

  • Drain the macaroni.
  • Pour a mixture of 3 tablespoons vinegar and 2 tablespoons sugar over the drained (still in the colander) macaroni.
  • Drain the macaroni (again).
  • In a large bowl mix salad macaroni, peas, baby gherkins, celery, sweet onion, tuna, cubed cheese.
  • Dressing: Take the mayo, sugar, some vinegar, salt and pepper to taste; mix into the macaroni mixture. You may want to add more dressing.
  • This is a very forgiving salad. You can sub salad shrimp, ham or chicken for the tuna or ditch the meat/fish and add some grated carrots (if using carrots you might want to cut back on the sweet pickles), diced zucchini and diced red peppers.
  • Chill, check the dressing and enjoy.

CLASSIC HOMEMADE COOL SUMMER SHRIMP MACARONI SALAD
1 Box - small elbow macaroni or shell macaroni, cooked , drain and cool.
1 Lb - fresh (cooked) salad shrimp, rinsed. (save a handful for the top of the salad.)
3-4 stalks - celery, sliced and chopped
4 - eggs, boiled, cooled , will be sliced for around the top of salad
2 sm - cans of chopped olives, drained
1/2 C - fresh parsley, chopped small ( optional)
1/2 cup - sweet relish
DRESSING . . . . MIX THE FOLLOWING TOGETHER, SET ASIDE.
1/2-1 C - mayonaise, ( best foods)
1 TBS - yellow mustard or djon mustard
1 Tsp - onion powder, or 1/2 cup chopped and diced onion
2 Tbs - sweet pickle juice , (from any pickle jar)
- last but not least; add; salt and pepper to taste.
NOTE: THIS RECIPE CAN BE EASILY DOUBLED FOR A LARGE CROWD.

Steps:

  • Cook Macaroni, per Package directions in salted water. Rinse, Drain, Cool, and set aside. Boil eggs, peel, & Cool set aside. Rinse the Shrimp, Drain, Cool. DRESSING: Mix all ingredients for the Dressing Set this aside.
  • Add Chilled Shrimp to Mixed Dressing above. Toss well and Chill. Chop, celery, onion, . Place in a large Bowl. Add; Olives, Parsley & 1/2 Cup Pickle Relish. Toss well. ADD; This to Chilled Macroni. Add; Shrimp with the dressing to Macaroni. Toss well, add 2 Tbs Pickle Juice, Toss again.
  • Top with Boiled Eggs Sliced around the Top edge of your Bowl. Place Handfull of the Shrimp (This You saved above) to the top of this salad and Serve. ENJOY A COOL SUMMER SALAD. Tip: Can be made Day ahead, Just top with Boiled eggs and shrimp just before serving. TIP: Can Serve on a bed of Lettuce or Just as a full Cool Summer meal, or Side Dish.
