1 1/2 lbs ground smoked ham
1 tablespoon prepared mustard
1/4 cup chopped onion
1 tablespoon chopped parsley
1/2 cup quick-cooking oats
3/4 cup evaporated milk or 3/4 cup half-and-half
1 egg, beaten
1/4 cup light brown sugar
1/4 cup vinegar

Steps:

  • Combine ground ham, mustard, chopped onion, parsley, oats, milk and egg; mix well to blend and form into a loaf. Place in greased loaf pan.
  • Combine brown sugar and vinegar in saucepan; heat till sugar is dissolved. Pour mixture over ham loaf.
  • Bake at 350 degrees for 60 minutes.

2 beaten eggs
1/2 cup milk
1/2 cup finely chopped saltine
1/2 cup finely chopped onion
1/2 teaspoon dry mustard
1/8 teaspoon pepper (i like a little more)
1 lb fully cooked ground ham
1 lb ground pork
1/2 cup brown sugar
2 tablespoons vinegar
1/2 teaspoon dry mustard

Steps:

  • combine eggs, milk, saltines, onion and 1/2 tsp dry mustard, and pepper.
  • Add ham and pork.
  • Mix well.
  • Shape into loaf and place in a 13x9x2 baking pan.
  • Bake at 350 for 1 hours
  • For Glaze: combine Brown sugar, vinegar, and 1/2 tsp dry mustard.
  • Spoon glaze over loaf.
  • Bake additional 20 minutes, basting with glaze.

2 ½ pounds ground ham
½ pound ground pork
½ onion, chopped
2 cups rolled oats
2 eggs
2 ½ tablespoons chopped fresh parsley
1 teaspoon ground mustard
½ teaspoon ground black pepper
1 ½ cups evaporated milk
1 ½ cups brown sugar
¼ cup cider vinegar
¾ cup mayonnaise
¼ cup sour cream
5 tablespoons prepared horseradish
1 tablespoon lemon juice
salt and black pepper to taste

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Combine the ground ham, ground pork, onion, oats, eggs, parsley, ground mustard, pepper, and evaporated milk in a large bowl. Mix well. Form in to 2 loaves; place into 9x13 inch baking pans.
  • Bake loaves in preheated oven for 30 minutes. Stir the brown sugar and vinegar together in a small saucepan; boil for 1 minute. Remove loaves from oven, and pour brown sugar mixture over. Return loaves to oven; baste frequently with the pan juices until browned and cooked through, 30 to 45 minutes longer.
  • Combine the mayonnaise, sour cream, horseradish, and lemon juice in a small bowl. Season to taste with salt and pepper. Serve sauce over sliced ham loaf.

This was a favorite recipe of our Mom's for Sunday dinner. We all loved it, and I'm sure you will too. Ground ham is formed into a meatloaf and baked in the oven.

2 pounds ground ham
1 ½ pounds ground pork
2 eggs
1 cup dried bread crumbs
1 cup evaporated milk
⅛ teaspoon salt
⅛ teaspoon ground black pepper
1 cup brown sugar
1 tablespoon mustard powder
¼ cup cider vinegar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the ham, pork, eggs, bread crumbs, evaporated milk, salt and ground black pepper. Mix all together well and form into a loaf. Place loaf into a lightly greased 9x13 inch baking dish.
  • Bake at 350 degrees F (175 degrees C) for 90 minutes.
  • While the loaf is baking, combine the brown sugar, mustard powder and vinegar. Mix well and pour over the loaf in the final 15 minutes of baking.

NANCY'S HAM LOAF (USING LOTS OF HAM)

There are many ham loaf recipes around but this one uses a much higher ratio of ham to ground pork which I happen to like. It produces a very tasty loaf with a nice tangy sauce on top. Here's a good way to use up leftover Easter ham.

2 lbs ground ham (may be done in food processor)
1 lb ground pork
2 eggs
3/4 cup homogenized milk
1/2 cup condensed tomato soup
3/4 cup breadcrumbs (3 slices of bread with no crusts)
1/2 cup condensed tomato soup
1 teaspoon dry mustard
3/4 cup brown sugar, lightly packed
1/3 cup vinegar
2 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F. Have ready 2 8-x4-inch loaf pans.
  • Mix all ingredients (except sauce ingredients) together. Divide among loaf pans. (It may also be made in a 9- x 13-inch pan.).
  • Bake 1 hour in preheated oven. Remove from oven and pour the sauce over the tops of the loaves. Return to oven and continue baking 1/2 hour longer.
  • To make sauce: Combine sauce ingredients in a saucepan and bring to a boil, stirring to make sure everything is combined well and sugar is melted.

My mom's recipe. This recipe can easily be halved, and 4 lb of ham loaf mixture may be substituted for the ground ham and ground beef. When I made this, I used only ground ham and it was also good that way.

2 cups crushed graham crackers
1 1/2 cups milk
1 1/2 cups brown sugar
10 1/2 ounces tomato soup
1/2 cup vinegar

  • Preheat oven to 350°F.
  • Mix ground meats, eggs, graham crackers, and milk together.
  • Form into loaf or balls.
  • Spread topping on meat.

2 pound(s) ground ham
4 large eggs ( i use duck eggs )
1 cup(s) buttermilk
2 cup(s) crackers ( i use ritze crackers )
SAUCE
1/2 cup(s) white wine
1/2 cup(s) apple cider vinegar
1 1/2 cup(s) brown sugar, firmly packed
3 tablespoon(s) dry mustard

Steps:

  • You will need (1) 14' deep cast iron dutch oven (2) 10' cast iron skillet.in a mixing bowl beat eggs. in a plastic bag crush crackers. In a large mixing bowl, blend together milk and beaten eggs;add cracker crumbs,then meat.Mix well and shape into a loaf.
  • Place ham loaf in Dutch oven,cover and bake for abought 45 min over med-high heat.
  • In the 10'skillet combine sauce ingredients and heat the sauce to the boiling point. After the loaf has baked for 45min. Remove lid,and pour sauce over meat, cover with lid,remove from fire under bottom.replace lid. cover lid with coals, bake for 15-20 min. ham loaf should be brown on top. serve with tipsy sweet taters.
