These pretty fruit pizzas have been a hit every time I've served them. They start with pre-made cookie dough making them super simple! -Janet O'Neal, Poplar Bluff, Missouri

1 tube (16-1/2 ounces) refrigerated sugar cookie dough
1 package (8 ounces) cream cheese, softened
1/4 cup confectioners' sugar
1 carton (8 ounces) frozen whipped topping, thawed
2 to 3 kiwifruit, peeled and thinly sliced
1 to 2 firm bananas, sliced
1 can (11 ounces) mandarin oranges, drained
1/2 cup red grape halves
1/4 cup sugar
1/4 cup orange juice
2 tablespoons water
1 tablespoon lemon juice
1-1/2 teaspoons cornstarch
Pinch salt

Steps:

  • Pat cookie dough into an ungreased 14-in. pizza pan. Bake at 350° for 15-18 minutes or until deep golden brown; cool. , In a bowl, beat the cream cheese and confectioners' sugar until smooth. Fold in whipped topping. Spread over crust. Arrange fruit on top. , In a saucepan, bring the sugar, orange juice, water, lemon juice, cornstarch and salt to a boil, stirring constantly for 2 minutes or until thickened. Cool; brush over fruit. Chill. Store in refrigerator.

COOKIE CRUST
1/2 c butter, room temperature
1/4 c shortening
3/4 c sugar
1/4 tsp salt
1 1/3 c all-purpose flour
1 tsp cream of tartar
1/2 tsp baking soda
1 egg
TOPPING
8 oz pkg cream cheese, room temperature
1/2 c sugar
1 c juice drained from canned fruit
2 Tbsp corn starch
your favorite chunked fruit {pineapple, bananas, strawberries, peaches, etc}
1 can(s) fruit cocktail, canned (14.5 oz)

Steps:

  • 1. Combine butter, shortening, and sugar. Add egg and mix well.
  • 2. Add dry ingredients.
  • 3. Spread on a greased cookie sheet. Bake at 400 degree for 8-10 minutes and cool.
  • 4. Mix cream cheese with 1/2 cup sugar. Spread on cooled crust.
  • 5. Drain fruit and add juice to a saucepan. Combine juice with corn starch and cook until thick. Add fruit cocktail.
  • 6. Place fruit cocktail and any other desired fruit on top of the cream cheese. Refrigerate 2 hrs before serving.
