Mild broccoli gets energized by this textured, rich dressing spiked with sweet miso and soy sauce. Crushed toasted sesame seeds create the intense flavor base for this rich, super nutty sauce. The dish is a great side to accompany any grilled or roasted protein; it can be made a few hours in advance and is equally tasty chilled or at room temperature. Any leftovers can be chopped and tossed with warm pasta and grated Parmesan the next day.

Kosher salt (such as Diamond Crystal)
Ice, as needed
1/3 cup toasted white sesame seeds
2 tablespoons neutral oil, such as safflower or canola
1 tablespoon white miso
1 tablespoon low-sodium soy sauce
1 tablespoon unseasoned rice vinegar
1 1/2 pounds broccoli florets (1 1/2- to 2-inch pieces, about 10 cups)

Steps:

  • Bring a large pot of salted water to a boil and prepare an ice bath.
  • While the water comes to a boil, in a small nonstick skillet over low heat, refresh the toasted sesame seeds, stirring frequently, until oils are released and seeds are warmed through, about 3 minutes. Transfer to a mortar and pestle and grind until half the seeds are coarsely crushed. Alternatively, pulse once or twice in a food processor until half of the seeds are crushed.
  • Transfer sesame seeds to a large bowl and add the oil, miso, soy sauce and vinegar; mix or whisk well.
  • Once the water is boiling, blanch the broccoli by cooking it until bright green, about 1 minute, then drain and transfer to the ice water to cool. Drain well and pat dry.
  • Add the cooked broccoli to the dressing, season with salt and pepper and toss to evenly coat. Serve at room temperature or refrigerate and serve chilled.

3 tablespoons minced peeled fresh ginger

Steps:

  • Whisk together soy sauce, vinegar, oyster sauce, cornstarch, and sesame oil.
  • In a wok or large skillet, heat vegetable oil over high. Add chicken and cook until browned, 10 minutes. Add ginger, garlic, scallions, and broccoli and cook, stirring frequently, until broccoli is bright green, 3 minutes. Add 1/4 cup water, scraping up browned bits with a wooden spoon. Stir in soy sauce mixture and cook, stirring, until thickened, 1 minute. Serve warm with rice.

1 cup extra-virgin olive oil
2 tablespoons white-wine vinegar
1 tablespoon dark sesame oil
1 teaspoon Dijon mustard
1/4 teaspoon freshly ground pepper
2 large bunches broccoli (about 3 pounds)
1 tablespoon sesame seeds, toasted

Steps:

  • Bring a large pot of water to a boil; add salt. In a small bowl, whisk olive oil, vinegar, sesame oil, mustard, salt, and pepper; pack vinaigrette into 8 small airtight containers.
  • Cut off broccoli stems about 1 inch below the florets. Cut florets into flowerettes by slicing through stem and pulling florets apart. You should have 8 to 9 cups of flowerettes.
  • Fill a large bowl with ice and water; set aside. Add broccoli to boiling water; stir for 1 minute. Drain, then plunge into ice bath to stop cooking. When cool, drain well; toss with sesame seeds. Pack into containers with a small container of vinaigrette.

1 tablespoon minced garlic (from 2 cloves)
1 tablespoon minced fresh ginger (from a 1 1/2-inch piece)
1 tablespoon cornstarch
Coarse salt and freshly ground pepper
1 1/4 pounds skirt steak, sliced 1/4 inch thick against the grain
1 head broccoli, cut into florets, stems peeled and sliced
1 can (8 ounces) sliced water chestnuts, drained
Steamed rice and toasted sesame seeds, for serving

Steps:

  • Preheat broiler with rack 4 inches from heating element. Stir together oyster sauce, soy sauce, sesame oil, garlic, ginger, cornstarch, and 1 tablespoon water in a large bowl. Season with salt and pepper. Stir in beef and broccoli to evenly coat. Spread mixture in a single layer on a rimmed baking sheet.
  • Broil, rotating sheet halfway through, until beef is sizzling and browned in places and broccoli is charred and crisp-tender, 8 to 10 minutes. Stir in water chestnuts. Serve over rice, drizzled with pan juices and sprinkled with sesame seeds.

FRESH BROCCOLI AND CHEDDAR SOUP

This soup is easy comfort food using fresh (not frozen) broccoli and real cheddar cheese. It takes about half an hour to forty minutes to make, but it's so much better than any soup from a can. I like to leave some of the broccoli in large chunks rather than pureeing it all.

1 large head of broccoli
2 tablespoons butter
1 yellow onion, diced
1/4 cup flour
5 cups chicken broth
1/2 teaspoon dried thyme
1 tablespoon lemon juice
2 cups milk
1/2 lb sharp cheddar cheese, shredded
salt and pepper

Steps:

  • Chop broccoli into coarse chunks. You can use stems; just be sure to peel the tough outer layer.
  • Melt butter in a large sauce pan or dutch oven. Add the onion and saute about 5 minutes, until soft.
  • Add the flour and saute one minute longer mixing thoroughly with the butter and onions.
  • Add the chicken broth, broccoli, thyme and lemon juice and bring to a boil. Bring the heat down and simmer for about 20 minutes, until the broccoli is tender.
  • Puree the soup with an immersion blender (or in small batches in a food processor).
  • After pureeing, add the milk and bring the soup to a simmer.
  • Sprinkle half of the cheddar cheese into the soup and stir until smooth. Keep the heat on low to prevent curdling.
  • Season to taste with salt and pepper and top with remaining shredded cheese.
