Steps:

  • To make custard whisk egg, corn starch and maple syrup together in a pan. Slowly whisk in almond milk over medium heat. Bring to a boil, whisking continuously, remove from heat and cool 5 minutes.
  • Pour custard into tart crust and top with fruit.
  • Refrigerate 30 minutes before serving.

1 ounce pink grapefruit juice
1 ounce orange juice
Dash of grenadine

  • Shake all the ingredients (except the cherry) together in a shaker filled with ice. Strain into a martini glass, drop in the cherry, and enjoy!

  • For those of you out there who don't imbibe, here's a nice variation on the Summer Breeze that won't leave you three sheets to the wind.
  • 3 ounces pink grapefruit juice
  • 5 ounces lemon-lime soda
  • 1 orange wheel, for garnish
  • 1 Maraschino cherry, for garnish
  • Pour the grapefruit juice into a tumbler or highball glass filled with ice cubes and top it off with lemon-lime soda. With a wooden skewer, pierce the orange wheel through both sides of the rind and add the cherry. Add to the drink and serve.

1 c graham cracker crumbs
2 1/2 Tbsp tablespoons unsalted butter
1 1/2 Tbsp white granulated sugar
2 1/2 lb cream cheese, softened
1 1/2 c white granulated sugar
1 lemon, (zest of the peel)
1 orange, (zest of the peel)
1/2 tsp vanilla extract (i prefer pure)
3 Tbsp white all-purpose flour
5 eggs
2 egg yolks
1/2 c sour cream
(sauce of choice)

Steps:

  • 1. Preheat oven to 375° Butter the bottom of a 9" spring form pan. In a mixing bowl, combine graham cracker crumbs, butter and sugar and mix well. Press onto bottom of spring form pan and bake until golden, about 8 minutes. Set aside to cool. When completely cooled, butter the sides of the pan. Increase oven temperature to 500° In a large mixing bowl with an electric mixer, combine cream cheese, sugar, zests and vanilla and beat until light and creamy. Add the flour, then the eggs and yolks 1 at a time, mixing well after each addition. Add the sour cream and mix until smooth. Pour mixture into prepared pan and bake for 12 minutes. Reduce oven temperature to 200° Bake for 1 hour more. Transfer cake to a cooling rack and let cool completely. Refrigerate cake overnight before serving. To serve, top with sauce of choice. Slice with a knife dipped in hot water and wiped with a clean cloth, and serve.

MEDITERRANEAN SUMMER BREEZE COLD YOGURT SOUP



Mediterranean Summer Breeze Cold Yogurt Soup image

You and your friend are sitting at a quaint outdoor café on the Greek Island of Mykonos. The sun is setting and the feel of the summer breeze on your sun tanned skin is so soothing. You have just finished eating a tasty shrimp appetizer, it was mouth watering but a touch on the spicy side. A cold creamy yogurt soup would just hit the spot. Enjoy!

2 lbs yogurt, made from whole milk (3.5% milk fat, 2 lbs = 32 oz.)
cold water
1 pint heavy cream
1 tablespoon salt
2 tablespoons lemon juice
2 tablespoons garlic cloves, minced
8 tablespoons feta cheese, crumbled (French type if possible, less salty)
4 tablespoons olives, kalamata (pits removed and cut up into pieces)
1/2 cup bell pepper (any colors or combo, chopped up)
8 tablespoons spring onions, cleaned and chopped up
8 tablespoons pistachio nuts, shells removed and ground up coarsely (not fine)

Steps:

  • For each individual bowls; Put 1/2 cup of yogurt in a bowl and then add 1/8 to 1/4 cup cold water (depending on the thickness desired), 1/8 cup cream, 1 teaspoon salt, 1 tablespoon lemon juice, 1 teaspoon minced garlic... all to taste; Then blend until creamy smooth.
  • Add to each individual bowl, 2 tablespoons feta cheese, 1 tablespoon olives, 2-3 tablespoons bell peppers, 2 tablespoons spring onions; mix slightly.
  • Sprinkle on top 2 tablespoons of ground pistachio nuts.
  • Chill prior to serving, enjoy.

  • Notes: This soup is best when using whole creamy milk yogurt which can be found in Greek and Middle Eastern grocery stores; or use your own home make yogurt. You can also serve INDIVIDUAL CUPS instead of bowls of this soup. Simply, reduce the amount of ingredients in each cup. Finally, you can add or substitute some of the vegetables. For example, cut up strawberries (add a pinch of sugar in individual bowls), tomatoes or chopped up hard boiled eggs (Arabic style).

Everyone Always asks for the recipe, so I thought I would share it here as well. Simple and Scrumptious ! The following recipe is enough for a party, but you can always scale it down for your family.

2 large cucumbers, clean and dried
2 large green bell peppers (red or yellow can substitute or you can mix and match to suit; clean and dried)
2 large firm tomatoes or 5 firm roma tomatoes, clean and dried
2 (1 ounce) packages hidden valley ranch dip mix

Steps:

  • Chop Cucumbers, Peppers, and Tomatoes into manageable bite size hunks, and place in large mixing bowl.
  • Pour both packs of the dry dip mix over veggies and mix to coat.
  • Fold in cottage cheese and mix to distribute dip mix and veggies throughout then Chill until ready to go to party.

You and your friend are enjoying a spectacular sun set while eating at a quaint outdoor café on the Greek Island of Mykonos. The sun is now low on the horizon, a bright orange and the summer breeze is so delightful. You had a tasty shrimp appetizer and a delicious cold yogurt soup. For an entrée you have decided to get the "signature" dish at this café, which many have said is one of the best on the Island. A charcoal grilled Tuna Steak on a bed of Couscous with orange slices, kalamata olives and feta cheese on the side.... A nice bottle of white wine to go along. What more can you ask for! All right, how about a RSC #7 strawberry, chocolate dessert... perhaps it's on the menu. Enjoy!

3/4 cup couscous
4 cups vegetable stock (College Inn Garden Vegetable Broth 14 1/2 oz. equals two cups)
5 tablespoons butter
4 teaspoons salt
3 tablespoons olive oil
1/8 teaspoon turmeric
1/8 cup pistachio nut, shells removed
3/4 cup bell pepper, chopped up (multi-colored)
2 spring onions, cleaned and chopped up (1/2 inch lengths)
1/8 cup kalamata olive, pits remove, coarsely chopped up
2 tablespoons fresh tarragon (substitute 1 tablespoon dry tarragon)
4 tuna steaks, 2 lbs, cut into 4 small pieces (substitute 4 lbs, 4 large pieces)
4 tablespoons lime juice (marinade) or 4 tablespoons lemon juice (marinade)
1/8 cup marsala wine
2 tablespoons flour
2 tablespoons tarragon, 2 sprigs
2 tablespoons capers
1 teaspoon pepper
2 valencia oranges, cut up into 1/2 round slices, wedges
3 tablespoons orange zest
16 kalamata olives
1/4 cup feta cheese, crumbled (French, less salty)

Steps:

  • COUSCOUS- Place couscous in a pot and add 2 cups of vegetable stock, 1 tablespoons butter, 1 teaspoon salt, 1 tablespoon olive oil, 1/8 teaspoon turmeric, and cook until almost done; stir and add water as needed (read instructions on package, do not add spice pack if included); Remove from heat.
  • Add and mix into cooked couscous pistachio nuts, bell peppers, spring onions, 1/8 cup chopped kalamata olives, tarragon, 1 tablespoon orange zest and keep warm.
  • VELOUTE SAUCE- Make a Roux by melting 1-2 tablespoons of butter in a pan. Gradually add some flour and stir constantly until smooth (to achieve the proper consistency, do not burn, no lumps); Then slowly add to the HOT Roux 1 cup COLD vegetable stock, stir and make sure there are no lumps, add 1/8 cup marsala wine; Season with 1 teaspoon salt to taste, add 1-2 tarragon sprigs. Continue to stir until the proper consistency for a thick sauce is achieved; Add 2 tablespoons capers; Set aside and keep warm.
  • FISH- Marinate the fish in a large bowl by adding 2 tablespoons lime/lemon juice, toss and leave for 1/2 hour; Then place the tuna steaks on a charcoal grill, baste with butter and/or an olive oil combo, season to taste with 1 teaspoon salt and 1 teaspoon pepper. Turn only once on the grill (or frying pan) and again season to taste; DO NOT OVERCOOK TUNA STEAKS, making sure the inside is slightly pink. Remove.
  • PLATE- In the center of a large plate add about 3/4 to 1 cup or more of the cooked couscous, and form into a circle; Around the sides add, whole kalamata olives, crumbled feta cheese, sliced oranges and some of the Veloute Sauce; On top of the couscous place one cooked tuna steak, a little of the Veloute Sauce and sprinkle orange zest on top.
  • Serve with a white wine and enjoy!
  • .
  • Notes: Again do not overcook the tuna steaks. Instead of grilling you can pan fry or broil the steaks by adding butter/olive oil and season to taste. Finally, if you prefer you can substitute 2 lbs of shrimp instead of tuna steaks; remove the shells, tail, devein and then cut lengthwise slightly.

So now in the late afternoon you are sitting at a quaint outdoor café overlooking the bay, watching the sail boats go by...the summer breeze is so nice. In the far distance you can hear the tune of "The Lemon Tree" song. A mouth watering tasty shrimp appetizer with lemon and hot spices is just what you have been craving for. You place your order and then you and your friend start singing; "Lemon tree, very pretty and the lemon flower is sweet, but the fruit of the poor lemon is impossible to eat...". Enjoy!

3/4 lb large shrimp, shell and tail removed, deveined, cut lengthwise slightly (12 pieces)
1/2 teaspoon salt (or less optional)
2 teaspoons vinegar
6 garlic cloves, chopped finely
1/2 cup chopped tomato, chopped finely
3 tablespoons olive oil
1 teaspoon black pepper (peppercorns ground fine)
1/4 teaspoon cayenne pepper (or less optional)
1 teaspoon ground cumin
1 teaspoon dried tarragon
2 tablespoons dried oregano
4 tablespoons kalamata olives, pits removed and coarsely chopped
2 tablespoons capers
4 tablespoons feta cheese, crumbled
4 tablespoons lemon juice
1 teaspoon ouzo (optional)
2 lemons, cut up into wedges

Steps:

  • Place cleaned shrimp in a mixing bowl, add 1/2 teaspoon salt, vinegar and toss.
  • Make a spice mixture of; 1/2 teaspoon salt, black pepper, cayenne pepper, ground cumin, tarragon, 1 tablespoon of oregano; set aside.
  • On individual plates place some chopped up olives, capers, crumbled feta cheese and lemon wedges on the side.
  • Place 3 tablespoons olive oil in a pan, when slightly hot add garlic and chopped tomatoes; Stir for about 30 seconds until garlic smell is released.
  • Add shrimp to pan, sprinkle on top of each shrimp part of the spice mixture; When shrimps starts to turn pink, turn them over (only once) and fry second side; add the balance of spice mixture to the top of the shrimp; put some of the garlic/tomato from the pan on top as well; When shrimp on second side appears pink, sprinkle with a generous amount of dry oregano on each shrimp. Place shrimp on top of chopped olives, capers, feta cheese in individual plates.
  • From the pan scrap up the tomatoes and spices (add 1-2 tablespoons of water to make it moist). Then add on top and on sides of the shrimps.
  • Add some lemon juice to each shrimp and a very tiny amount of ouzo(option).
  • Serve and enjoy!

  • mix puddng and milk until thick add cream cheese blend till smooth
  • spread all over cake like frosting
