The best part of summer is the fresh, juicy fruit available in grocery stores or farmers' markets. This pie is my own creation after visiting the market and seeing beautiful berries and peaches for sale. After experimenting with different fruits and sugar levels, I have put together a fresh berry and peach pie that just screams 'summer is here!'

1 pastry for a 9 inch double crust pie
1 egg white, lightly beaten
3 fresh peaches - peeled, pitted, and sliced
1 pint fresh strawberries, hulled and large berries cut in half
1 pint fresh blueberries
2 (6 ounce) containers fresh raspberries
⅓ cup all-purpose flour
3 tablespoons cornstarch
½ cup brown sugar
½ cup white sugar
2 teaspoons ground cinnamon
¼ teaspoon ground nutmeg
2 tablespoons butter, cut into small pieces
1 teaspoon ground cinnamon
1 tablespoon white sugar

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Line a 9 inch pie plate with half of the dough and brush with half of the beaten egg white.
  • Combine the sliced peaches, strawberries, blueberries, and raspberries in a large bowl; set aside. Mix the flour, cornstarch, brown sugar, 1/2 cup white sugar, 2 teaspoons cinnamon, and nutmeg together. Gently fold the flour mixture into the fruit, taking care not to crush the berries. Transfer the fruit mixture into the pastry-lined pie plate. The filling will be piled high but will cook down. Dot with butter.
  • Top the filled pie with a lattice crust or a full top crust (cut decorative slits in the crust to allow steam to escape). Brush the top crust or lattice with the remaining egg white. Combine 1 teaspoon cinnamon and 1 tablespoon sugar and sprinkle the mixture on the crust. Place the pie on a baking sheet to catch drips.
  • Bake the pie until the crust is golden brown and the filling is bubbly, 45 to 60 minutes. Turn off the oven and let the pie set for 30 minutes; transfer to a cooling rack. The filling will be loose if served warm, but will tighten up when the pie is completely cooled.

2 packages (3 ounces each) raspberry or strawberry gelatin

Steps:

3 Tbsp. cornstarch
1-1/2 cups water
1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
1 cup each blueberries, raspberries and sliced strawberries
1 ready-to-use graham cracker crumb crust (6 oz.)
1-1/2 cups thawed COOL WHIP Whipped Topping

Steps:

  • Mix sugar and cornstarch in medium saucepan. Gradually add water, stirring until well blended. Bring to boil on medium heat, stirring constantly; boil 1 min. Remove from heat. Add dry gelatin mix; stir 2 min. until completely dissolved. Cool.
  • Add fruit to gelatin mixture; pour into crust.
  • Refrigerate 3 hours or until firm. Serve topped with COOL WHIP.

Use summer's bounty of gorgeous berries to make this family favourite, just add cream!

350g plain flour
250g butter , diced
140g icing sugar , plus 2 tbsp extra
100g ground almonds
zest 1 orange , plus a squeeze of juice
1 large egg , separated
750g mix of cherries (stoned if you have a stoner, or halved and stoned), blueberries, blackcurrants, redcurrants and blackberries
2 tbsp cornflour
granulated sugar , for sprinkling

Steps:

  • Put the flour, butter, icing sugar, ground almonds and zest in a food processor and whizz to crumbs. Mix the yolk with 1 tbsp cold water, then add to the processor and pulse until the dough comes together.
  • Split the pastry in half, wrap in cling film, then chill for 30 mins.
  • Heat oven to 190C/170C fan/gas 5. Line a 20cm pie dish with half the pastry, add a sheet of greaseproof paper and baking beans and bake blind for 30 mins. Remove the paper and beans. Mix the berries and cornflour with the extra 2 tbsp icing sugar and a squeeze of orange juice, then pile into the pie base.
  • Roll out the remaining pastry until big enough to cover the pie with a slight overlap. Whisk the egg white with a fork, then brush a little around the pastry rim. Carefully lift on the pastry lid, trim the edges and press with fork prongs to seal. Use a 2cm cutter, the large end of a piping nozzle or a bottletop to stamp out a few pastry polka dots - discarding the pastry circles you stamp out. Brush all over with more egg white, then sprinkle generously with granulated sugar and bake for 30 mins until golden and the syrupy fruit has started to bubble out of the polka dots.
  • Allow the pie to cool for a few mins before serving hot, or warm or at room temperature, with a dollop of clotted cream, ice cream or drizzle of single cream, if you like.

1 1/4 cups all-purpose flour
3/4 stick (6 tablespoons) cold unsalted butter, cut into bits
2 tablespoons cold vegetable shortening
1/4 teaspoon salt
3 cups blackberries, picked over and rinsed
3 cups blueberries, picked over and rinsed
2-1/2 cups raspberries or other summer berries such as red currants or boysenberries picked and rinsed
1/3 cup cornstarch
1-1/2 cups sugar plus additional for sprinkling the pie
1/4 cup fresh lemon juice
1/8 teaspoon freshly grated nutmeg
1/8 teaspoon cinnamon
1 tablespoon unsalted butter, cut into bits
1/4 cup half-and-half
peach and brown sugar ice cream as an accompaniment if desired

Steps:

  • To make pâte brisée:
  • In a large bowl blend the flour, the butter, the vegetable shortening, and the salt until the mixture resembles meal. Add 2 tablespoons ice water, toss the mixture until the water is incorporated, adding more ice water if necessary to form a dough, and form the dough into a ball. Dust the dough with flour and chill it, wrapped in wax paper, for 1 hour.
  • Roll out half the dough 1/8-inch thick on a lightly floured surface, fit it into a 9-inch deep-dish (1 quart) pie plate, and trim the edge, leaving a 1/2-inch overhang. Chill the shell while making the filling. In a large bowl toss together the berries, the cornstarch, 1-1/2 cups of the sugar, the lemon juice, the nutmeg, and the cinnamon until the mixture is combined well, mound the filling in the shell, and dot it with the butter bits.
  • Roll out the remaining dough into a 13- to 14-inch round on a lightly floured surface, drape it over the filling, and trim it, leaving a 1-inch overhang. Fold the overhang under the bottom crust, pressing the edge to seal it, and crimp the edge decoratively. Brush the crust with the half-and-half, make slits in the top crust, forming steam vents, and sprinkle the pie lightly with the additional sugar. Bake the pie on a large baking sheet in the middle of a preheated 425°F. oven for 20 minutes, reduce the heat to 375°F., and bake the pie for 35 to 40 minutes more, or until the crust is golden and filling is bubbling. Serve the pie with the ice cream.

2 1/4 cups all-purpose flour, frozen
2 teaspoons salt
14 tablespoons unsalted butter, cut into 1/2-inch cubes-9 tablespoons frozen, 5 tablespoons chilled
2 tablespoons red wine vinegar mixed with 6 tablespoons of ice water
FILLING
1 cup plus 1 teaspoon sugar, plus more for sprinkling
1/4 cup quick-cooking tapioca
Pinch of salt
2 cups pitted sweet cherries
3/4 pound raspberries (3 cups)
1/2 pound blueberries (1 1/2 cups)
1 teaspoon all-purpose flour
2 tablespoons heavy cream

Steps:

  • 1. In a food processor, pulse the flour and salt. Add the chilled butter and pulse until it's the size of small peas. Add the frozen butter and pulse until it's the size of small peas. Drizzle the vinegar mixture over the flour mixture. Pulse just until the dough starts to come together. Turn out onto a lightly floured surface and knead gently to form a smooth dough. Divide the dough in half and flatten into 2 disks. Wrap in plastic and refrigerate until firm, at least 2 hours. 2. On a lightly floured surface, roll out one disk of dough to a 12-inch round, 1/8 inch thick. Transfer to a 10-inch metal pie plate and freeze for 20 minutes. Roll out the remaining dough 1/8 inch thick. Transfer to a baking sheet and freeze for 20 minutes. 3. In a small bowl, whisk 1 cup of sugar with the tapioca and salt. In another bowl, toss the cherries with the raspberries and blueberries. Sprinkle with the sugar mixture and toss gently. 4. Mix the flour and the remaining 1 teaspoon of sugar. Sprinkle in the crust; tap out the excess. Spoon the filling into the crust. 5. Using a fluted pastry wheel, cut the remaining dough into 3/4-inch-wide strips. When pureeing the berries, be sure to process them for a full minute; otherwise, the yield on the puree may be too small. Apple jelly can be substituted if red currant jelly is unavailable. If you have a salad spinner, line the basket with paper towels, add the berries, and spin until dry.

9 graham crackers, broken into rough pieces
2 tablespoons sugar
5 tablespoons unsalted butter, melted and warm
2 cups raspberries (about 9 ounces)

1/2 cup granulated sugar (3 ½ ounces)
3 tablespoons cornstarch
1/8 teaspoon salt

  • For the crust: Adjust an oven rack to the middle position and heat the oven to 325 degrees.
  • In a food processor, process the graham crackers until evenly fine, about 30 seconds (you should have 1 cup crumbs).

  • Heat oven to 350. bake pie shell about 10 mins or until a light golden brown. Let cool.
  • In a large pan, mix berries w/ sugar and cornstarch. Stir in lemon juice & water. Heat over medium heat, stirring often, until thickened. Remove from heat & let cool.
  • In large bowl, Beat cream cheese until smooth. Beat in powdered sugar, lemon extract & sour cream until smooth. Drizzle in the whipping cream( while beating on high) ingredients until fluffy. Spoon mix into pie crust & smooth the top. Refrigerate until firm, about 30 mins. Spoon berry mix onto top. I also place dollops of whipped cream on top and then place a slice of strawberry on the whipped cream to serve.

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
2 Tbsp. sugar
2 cups thawed COOL WHIP Whipped Topping, divided
1 ready-to-use graham cracker crumb crust (6 oz.)
3/4 cup boiling water
1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
1/2 cup ice cubes
1/2 cup blueberries
1-1/2 cups strawberries, halved

Steps:

  • Beat cream cheese and sugar in large bowl with whisk until blended. Stir in 1 cup COOL WHIP; spread onto bottom of crust.
  • Add boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Add ice; stir until melted. Let stand 5 min. or until slightly thickened. Meanwhile, arrange blueberries in single layer in center of pie; surround with strawberries.
  • Pour gelatin over fruit. Refrigerate 3 hours or until firm. Serve topped with remaining COOL WHIP.

For the Pie:
1 pastry for a 9 inch double crust pie
1 egg white, lightly beaten
3 fresh peaches - peeled, pitted, and sliced
1 pint fresh strawberries, hulled and large berries cut in half
1 pint fresh blueberries
2 (6 ounce) containers fresh raspberries
1/3 cup all-purpose flour
3 tablespoons cornstarch
1/2 cup brown sugar
1/2 cup white sugar
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons butter, cut into small pieces
For the Topping:
1 teaspoon ground cinnamon
1 tablespoon white sugar

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Line a 9 inch pie plate with half of the dough and brush with half of the beaten egg white. Combine the sliced peaches, strawberries, blueberries, and raspberries in a large bowl; set aside. Mix the flour, cornstarch, brown sugar, 1/2 cup white sugar, 2 teaspoons cinnamon, and nutmeg together. Gently fold the flour mixture into the fruit, taking care not to crush the berries. Transfer the fruit mixture into the pastry-lined pie plate. The filling will be piled high but will cook down. Dot with butter. Top the filled pie with a lattice crust or a full top crust (cut decorative slits in the crust to allow steam to escape). Brush the top crust or lattice with the remaining egg white. Combine 1 teaspoon cinnamon and 1 tablespoon sugar and sprinkle the mixture on the crust. Place the pie on a baking sheet to catch drips. Bake the pie until the crust is golden brown and the filling is bubbly, 45 to 60 minutes. Turn off the oven and let the pie set for 30 minutes; transfer to a cooling rack. The filling will be loose if served warm, but will tighten up when the pie is completely cooled.

  • Combine cornstarch and sugar in a medium sauce pan; gradually stir in water until smooth. Stirring constantly, cook on medium heat until mixture comes to a boil. Boil 1 minute; remove from heat; stir in gelatin until dissolved. Cool to room temperature; fold berries into cooled mixture and pour into crust. Refrigerate 3 hours or until firm. To serve, garnish with whipped cream

I saw this recipe in a magazine ad for cool whip and Driscoll's berries. I have made it with frozen blueberries and raspberries. I have also made it for diabetics using sugar free jello and splenda. It is a very cool and light dessert for summer.

1 1/2 cups raspberries
1 cup blueberries
1 baked pie shell
3/4 cup sugar
3 tablespoons cornstarch
1 1/2 cups water
3 ounces strawberry Jell-O gelatin dessert
8 ounces Cool Whip

Steps:

  • Mix berries in large bowl and pour into prepared pie shell.
  • Mix sugar and cornstarch in medium saucepan.
  • Gradually stir in water until smooth.
  • Stirring constantly, cook on medium heat until mixture comes to a boil.
  • Boil 1 minute.
  • Remove from heat and add jello.
  • Stir until dissolved.
  • Cool to room temperature and pour over berries in pie shell.
  • Refrigerate for 3 hours.
  • Spread Cool Whip over pie before serving.
