1 cup butter, softened
Granulated erythritol equivalent to 1-1/2 cups granulated sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups sugar-free milk chocolate baking chips

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar substitute until light and fluffy, 5-7 minutes. Beat in eggs and extract. Combine flour, baking soda and salt; mix into creamed mixture. Stir in chocolate chips. , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 9-10 minutes or until golden brown around the edges. Remove to wire racks to cool.

½ cup unsalted butter, softened
¼ cup Pyure Organic All Purpose Stevia Blend
1 egg
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
½ cup cornstarch
3 tablespoons Pyure Organic All Purpose Stevia Blend
2 tablespoons unsalted butter, softened
¼ cup milk, or as needed
1 teaspoon vanilla extract
1 drop Food coloring

Steps:

  • Beat butter with Pyure Organic All Purpose Stevia Blend until light and fluffy.
  • Beat in egg until well blended. Beat in vanilla.
  • Whisk flour, baking powder and salt together. Stir into butter mixture in two additions.
  • Wrap dough in plastic wrap and refrigerate for 30 minutes.
  • Roll on lightly floured surface or between sheets of waxed paper to 1/4-inch thick.
  • Using desired cookie cutter, cut out desired shapes.
  • Preheat oven to 350 degrees F. Place cookies 2-inches apart on parchment paper lined baking sheets. Bake for 10 to 12 minutes or until golden. Let cool on racks.
  • Glaze cookies with Pyure Sugar Free Cookie Icing.
  • Icing Directions: Beat cornstarch, Pyure Organic All Purpose Stevia Blend and butter with a mixer on medium-high speed until well combined.
  • Gradually add milk and vanilla until smooth. Add more milk if icing mixture is too dry.
  • If adding food coloring, add a drop at a time until desired color is reached.
  • Refrigerate icing for 10 minutes until set.
  • Spread or pipe over cooled Sugar Free "Sugar" Cookies. Use day of.

3/4 cup unsalted butter
1/4 cup light butter
1 cup Splenda granular
1 tablespoon vanilla
1/4 cup egg substitute
1/4 cup water
3/4 teaspoon vinegar
1 1/2 cups all-purpose flour
1 1/2 cups cake flour
1/4 teaspoon salt
1 teaspoon baking powder

Steps:

  • Preheat oven to 350°.
  • Lightly oil a cookie sheet and set aside.
  • Blend together butters, Splenda and vanilla in a medium size mixing bowl.
  • Blend until butter is softened.
  • Add egg substitute, water and vinegar.
  • Mix briefly.
  • Add flours, salt and baking powder.
  • Mix using low speed (or by hand) until dough is formed.
  • Do not over mix.
  • Remove dough from bowl and place on a floured work surface.
  • Divide dough in half.
  • Pat each half into a circle.
  • Cover with plastic wrap and refrigerate about 1 hour, allowing dough to chill.
  • Remove dough from refrigerator and roll out on a floured work surface to desired thickness (approximately 1/4-inch).
  • Cut with cookie cutters.
  • Place cookies on cookie sheet.
  • Bake in preheated 350° for 7 to 9 minutes or until slightly browned on the back.
  • Cool on a wire rack.

If sugar doesn't fit well into your diet, it shouldn't mean that enjoying a classic comforting cookie is out of the question. These cookies sub the granulated stuff for monk fruit sweetener, which makes them low on the glycemic index and diabetic friendly. (Monk fruit is a small round fruit native to southern China.) As a bonus these cookies are gluten free, made with almond meal as well as flax meal to boost fiber. The result is chewy, nutty and satisfyingly sweet.

4 tablespoons unsalted butter, melted
1/2 cup granulated monk fruit sweetener
3 tablespoons flaxseed meal
1 tablespoon pure vanilla extract
1 1/2 cups almond meal
1 teaspoon baking soda
1/4 teaspoon kosher salt
Flaky sea salt, for sprinkling (optional)

Steps:

  • Preheat the oven to 350 degrees F.
  • Whisk the butter, monk fruit sweetener, flaxseed meal, vanilla and 2 tablespoons water in a medium bowl until smooth. Add the almond meal, baking soda and kosher salt and fold to combine.
  • Use a 1-ounce ice cream scoop (or two tablespoon measures) to scoop 12 balls of the dough onto a baking sheet. Gently flatten each dough ball with your fingers until it is about 2 inches in diameter. Sprinkle the tops with flaky sea salt, if desired.
  • Bake until the tops and bottoms of the cookies are golden brown and the middle is still soft when gently pressed with your finger, 15 to 18 minutes. Let cool completely on the baking sheet, about 30 minutes. Use a spatula to remove the cookies. Serve or store in an airtight container at room temperature for up to 1 week.

2 cups granular no-calorie sucralose sweetener (e.g., Splenda ®)
2 large eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
  • Thoroughly mix together the peanut butter, sucralose, and eggs in a bowl. Drop mixture by spoonfuls onto the prepared baking sheet.
  • Bake in the preheated oven until center appears dry, about 8 minutes.
