2 cups Corn Chex™ cereal
2 cups Rice Chex™ cereal
2 cups Apple Cinnamon Cheerios™ cereal
3 cups Bugles® original corn snacks
1 1/2 cups dry-roasted peanuts
2 egg whites
2 tablespoons orange juice or water
1 cup sugar
1 teaspoon ground cinnamon

Steps:

  • Heat oven to 300°F. Spray with cooking spray or grease 15x10x1-inch pan.
  • In very large bowl, mix cereals, corn snacks and peanuts. In small bowl, beat egg whites, orange juice, sugar and cinnamon with wire whisk or hand beater until foamy. Pour over cereal mixture, stirring until evenly coated. Spread in pan.
  • Bake 45 to 50 minutes, stirring every 15 minutes, until light brown and crisp. Cool completely, about 1 hour. Store in airtight container.

Due to a prize I won in a recent recipe contest, I found myself with a surplus of pancake mix...and we rarely eat pancakes! I decided to try to find other ways to use up the mix. I found a few ideas online for cookies and muffins and such, but none of them really appealed to me, so I decided to experiment. These are the result...

2/3 c butter, or coconut oil, softened
3/4-1 c brown sugar(i used sucanat)**
2 eggs
1 tsp vanilla
pinch of salt
3 c pancake mix(use a whole grain pancake mix to keep these healthier!)
3t sugar+1 1/2t cinnamon for rolling

Steps:

  • 1. Preheat oven to 350F. Grease a baking tray.
  • 2. Stir together the butter or c.o., sugar, eggs, vanilla and salt. Blend in the pancake mix.
  • 3. Shape into 1 in. balls and roll in the cinnamon/sugar mixture. Place on the tray 2 in. apart.
  • 4. Bake 8-10 min. until golden brown.
  • 5. **I made these with 1c sucanat and they were PLENTY sweet. If I had used regular brown sugar, they would have definitely been too sweet(for me). Next time, I will reduce the sugar.

3 large egg whites
2 tablespoons water
3 cups walnut halves
2 cups pecan halves
1 cup whole unblanched almonds
2 cups sugar
2 tablespoons ground cinnamon
2 teaspoons ground ginger
2 teaspoons grated orange zest
1 teaspoon salt
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1/2 teaspoon ground cloves

Steps:

  • In a large bowl, beat egg whites and water until frothy. Add nuts; stir gently to coat. Combine the remaining ingredients. Add to nut mixture and stir gently to coat. , Spread into two greased 15x10x1-in. baking pans. Bake, uncovered, at 300° for 20-25 minutes or until lightly browned, stirring every 10 minutes. Cool. Store in an airtight container.

3/4 cup shortening
1 cup sugar
1 large egg
1/4 cup molasses
2 cups all-purpose flour
1-1/2 teaspoons ground ginger
1 teaspoon baking soda
1 teaspoon ground cinnamon
3/4 teaspoon ground cloves
1/2 teaspoon salt
LEMON FROSTING:
2 cups confectioners' sugar
3 tablespoons butter, softened
1 teaspoon grated lemon zest
3 to 4 tablespoons lemon juice

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg and molasses. Combine dry ingredients; gradually add to creamed mixture and mix well. , Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 350° for 8-10 minutes. Remove to wire racks; cool. , For frosting, cream the confectioners' sugar, butter and zest in a large bowl. Gradually add lemon juice, beating until frosting achieves desired spreading consistency. 2 tablespoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 tablespoon water
1 egg white
1 cup pecan halves
1 cup whole cashews
1 cup walnut halves
1 cup red and green candy-coated chocolate candies

Steps:

  • Heat oven to 300°F. Spray 15x10x1-inch pan with cooking spray. In large bowl, beat sugar, salt, cinnamon, ginger, cloves, nutmeg, water and egg white with electric mixer on high speed 1 to 2 minutes or until mixture is frothy. With rubber spatula, fold in nuts until evenly coated. Spread mixture evenly in pan.
  • Bake 45 to 50 minutes, stirring occasionally, until nuts are fragrant and toasted. Cool completely in pan, about 30 minutes. Stir in chocolate candies. Store in tightly covered container.
