EASY SPICED SUGAR COOKIES
These easy spiced sugar cookies are so simple to make, the kids can make them all by themselves. And "Santa" will be overjoyed to eat them this year!

Steps:
- In the bowl of a mixer, cream together the butter and sugar until light and creamy.
- Beat in the vanilla and egg scraping down the bowl after mixing in.
- Sift together the dry ingredients then add to the butter mixture. Mix on medium speed until incorporated.
- Divide the dough into two then roll each piece out between two sheets of parchment paper.
- Using a cookie cutter, cut out cookies then place on cookie sheets.
- Place the cookies in the fridge for 30 minutes.
- Pre-heat the oven to 180ºC/350°F.
- Place the baking sheets into the oven and allow to bake for 12-15 minutes until golden brown.
- While the cookies are baking, stir together the sugar and spices and set aside.
- Remove from the oven and allow to chill for 10 minutes before coating in the sugar and transferring to a cooling rack to cool completely.

- In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg and molasses. Combine dry ingredients; gradually add to creamed mixture and mix well. , Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 350° for 8-10 minutes. Remove to wire racks; cool. , For frosting, cream the confectioners' sugar, butter and zest in a large bowl. Gradually add lemon juice, beating until frosting achieves desired spreading consistency. - Beat butter and sugar in a large bowl with an electric mixer on medium speed. Add egg and vanilla; beat well. Mix flour, baking powder, cinnamon, ginger, nutmeg, cloves and salt in a medium bowl. - 1. Preheat oven to 350F. Grease a baking tray.
- 2. Stir together the butter or c.o., sugar, eggs, vanilla and salt. Blend in the pancake mix.
- 3. Shape into 1 in. balls and roll in the cinnamon/sugar mixture. Place on the tray 2 in. apart.
- 4. Bake 8-10 min. until golden brown.
- 5. **I made these with 1c sucanat and they were PLENTY sweet. If I had used regular brown sugar, they would have definitely been too sweet(for me). Next time, I will reduce the sugar.
