If you like the sugary flavor of candied yams you will love these sugar-free sweet potatoes. I have not found anyone who doesn't just love the flavor.

2 large sweet potatoes, peeled and cubed into 2-inch pieces
2 large sweet apples - peeled, cored, and sliced thin
2 (8 ounce) cans no-sugar-added crushed pineapple

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a casserole dish with nonstick cooking spray.
  • Place sweet potatoes into the prepared dish. Layer apples on top, followed by pineapple with can juices.
  • Bake in the preheated oven until potatoes are soft, 30 to 45 minutes.

A sweet, creamy, but light-tasting take on sweet potato casserole. The orange adds a bit of zing that is needed and missing from most recipes, in my opinion.

4 large sweet potatoes, peeled and chopped into 1-inch cubes
1 cup brown sugar, divided
½ stick butter, cut into pieces, divided
½ orange, zested and juiced
1 teaspoon vanilla extract
½ cup heavy whipping cream
1 tablespoon ground cinnamon
½ teaspoon salt
1 pinch ground cloves
1 pinch ground nutmeg
2 large eggs
1 cup chopped pecans
½ cup all-purpose flour
aluminum foil

Steps:

  • Place sweet potatoes into a large pot and cover with water. Add enough salt so that the water tastes like seawater. Bring to a boil and cook potatoes until fork tender and mashable, 20 to 30 minutes. Drain.
  • Preheat the oven to 375 degrees F (190 degrees C). Butter a casserole dish.
  • Transfer potatoes to a large mixing bowl and mash with a potato masher. Add 1/2 the butter, 1/2 of the brown sugar, orange zest, orange juice, and vanilla extract; mix until well combined. Allow mixture to cool slightly, then add cream, cinnamon, salt, cloves, and nutmeg. Taste and adjust spices to your liking. Mix in eggs until well combined. Transfer to the prepared casserole dish.
  • Mix remaining 1/2 cup brown sugar with flour in a small bowl. Sprinkle pecans over the potato mixture, and then do the same with the brown sugar-flour mixture. Sprinkle remaining butter pieces on top of the casserole and cover with aluminum foil.
  • Bake in the preheated oven for 20 minutes. Remove aluminum foil and continue to bake until topping is crispy, about 20 minutes longer. Serve once cooled.

3 lb sweet potatoes or yams
1-1/2 cups pecan pieces, divided
sugar substitute
2 teaspoon s cinnamon, divided
1 teaspoon salt, divided
5 tablespoons butter, divided
1/2 teaspoon nutmeg
1/4 teaspoon pepper
1 egg

Steps:

  • Poke the sweet potatoes/yams several times with a sharp knife and roast at 400 degrees F until soft - about 45-60 minutes.
  • To make the topping, pulse 1 cup of the pecans in food processor or blender until it is ground into a meal. Add about 1/4 cup worth of sugar substitute, 1 teaspoon cinnamon, a pinch of salt, and 2 tablespoons of the butter and process until blended. Mix the rest of the pecans pieces in by hand. Set aside.
  • Let the sweet potatoes cool for 10-15 minutes. Split them and remove the pulp. Put them into the food processor or blender (no need to wash between topping and sweet potatoes.) and process with the rest of the butter. Mashing with a potato masher is also fine, but the texture will be somewhat smoother if you blend/process. Add the rest of the seasonings. The amount of sweetener you add will be up to your taste and the sweetness of the sweet potatoes. When the seasonings are to your taste, add the egg and blend.
  • Put the sweet potato in a buttered baking dish and sprinkle pecan topping over the top. Bake at 375 degrees F until the top is browned.
