1 (15 ounce) can pumpkin
3/4 cup Splenda granular
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon clove
1 (12 ounce) can evaporated milk
1 -9 inch unbaked pie shell

Steps:

  • Pre-heat oven to 425 degrees.
  • Combine ingredients.
  • Pour into pie crust.
  • Bake 15 minute at 425.
  • Reduce heat to 350 degrees and bake 45 minutes.
  • Cool and garnish with whipped cream.

2-1/2 cups cold fat-free milk
2 packages (1.5 ounces each) sugar-free instant vanilla pudding mix
1 can (15 ounces) solid-pack pumpkin
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 reduced-fat graham cracker crust (9 inches)
Reduced-fat whipped topping and additional cinnamon, optional

Steps:

  • In a large bowl, combine milk and pudding mix. Beat for 1 minute (mixture will be thick). Add pumpkin and spices; beat 1 minute longer. Pour into pie crust. , Cover and refrigerate for 2 hours or until firm. If desired, garnish with whipped topping and sprinkle with cinnamon.

1 (12 ounce) can evaporated skim milk
1/2 cup egg substitute (equivalent to 2 eggs)
2 egg whites
3/4 cup artificial sweetener (equivalent to 3/4 cup sugars)
1 teaspoon cinnamon, ground
1/4 teaspoon allspice, ground
1/4 teaspoon ginger, ground
1/8 teaspoon salt
1/2 cup reduced-fat graham cracker crumbs
light whipped topping (optional)
cinnamon (optional)

Steps:

  • In a mixing bowl, combine the pumpkin, milk, egg substitute, egg whites and sweetener, beat until smooth.
  • Add the spices and salt, beat until well mixed.
  • Stir in graham cracker crumbs.
  • Pour into a 9-in. pie plate that has been coated with nonstick cooking spray.
  • Bake at 325°F for 50-55 minutes or until a knife inserted near the center comes out clean.
  • Cool.
  • If desired, garnish with a dollop of whipped topping and sprinkling of cinnamon.
  • Store in the refrigerator.
  • Sweet 'N Low or Sweet One are recommended for baking.

1 deep dish pie shell (unbaked)
1/3 cup pasteurized liquid egg-whites
2/3 cup Splenda sugar substitute
1 dash salt
1 (15 ounce) can pumpkin
1 teaspoon cinnamon
1/2 teaspoon ginger
1 (12 ounce) can fat-free evaporated milk

Steps:

  • Preheat oven to 425°F.
  • In a large bowl mix egg whites, splenda & salt.
  • Add the Pumpkin to egg mixture, along with the Cinnamon & Ginger.
  • Mix til well blended. (I use a whisk).
  • Add FF Evap Milk. Blend well.
  • Pour into unbaked pie shell.
  • Bake at 425 for 15 minutes
  • Reduce heat to 350 & bake for an additional 35 minutes.

12 ounces pumpkin (1 can)
12 ounces fat-free evaporated milk
3 eggs
3/4 cup artificial sweetener
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon salt

Steps:

  • Roll pastry on floured surface into a circle 1-inch larger than inverted 9-inch pie plate. Ease pastry into pan; trim and flute edge.
  • Beat pumpkin, evaporated milk and eggs in a medium bowl; beat in remaining ingredients. Pour into pastry shell. Bake in a preheated 400-degree oven for 35-40 minutes or until a knife inserted near the center comes out clean.

8 ounce(s) sugar free cool whip
1 large package sugar free french vanilla or cheesecake pudding mix
1 1/2 cup(s) lowfat milk
1/2 cup(s) canned pumpkin
1 teaspoon(s) pumpking pie spice

Steps:

  • Combine milk, pudding mix, pumpkin and pumpkin pie spice. Mix with mixer or blender for 2-3 minutes.
  • Gently fold Cool Whip into pudding mixture. Mix well.
  • Pour pudding/Cool Whip mixture into the pie crust.
  • Refrigerate at least 1 hour before serving.

I have not tried this recipe. I got this recipe from Obesity Help. This recipe was posted by cajungirl. Well that's the name of it but I disagree it's Sugar Free since the graham cracker crust has sugar in it. If a small amount of sugar doesn't bother you then I say go the easy way. If sugar bothers you, it's pretty simple to crush Sugar Free Shortbread cookies, crushed pecans and butter to make your own crust.

2 tablespoons sugar-free caramel topping, divided (found on ice cream asile in store)
1 (9 inch) honey maid graham cracker pie crust
1/2 cup planters pecan pieces, plus
2 tablespoons planters pecan pieces, divided
1 cup cold milk
6 ounces jell-o sugar-free instant vanilla pudding mix (2 packages)
1 cup canned pumpkin (not the pie filling, just the pumpkin)
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
16 ounces sugar-free Cool Whip, thawed, divided (2 tubs)

Steps:

  • POUR 1/4 cup Sugar Free caramel topping into crust; sprinkle with 1/2 cup pecans. BEAT milk, pudding mixes, pumpkin and spices with whisk till blended. Stir in 1 tub SF COOL WHIP. Spread into crust.
  • REFRIGERATE at least 1 hour. Top with other tub COOL WHIP, Sugar Free caramel topping and pecans just before serving.
