Time 27m

Number Of Ingredients 10

1 1/2 cups Flour ( see post for gluten free alternative)
1 tsp Baking Soda
1 tsp Ground Cinnamon
3/4 cup Splenda
1/2 cup Surkin Gold
1 cup Butter
1 tsp Vanilla Extract
2 Eggs
3 cups Rolled Oats
1 cup Raisins

Steps:

  • Preheat your oven to 350. Prep a pan for nonstick- I use parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and ground cinnamon. Set this bowl aside.
  • Now in a mixing bowl, cream together the granular sugar alternative and the butter. Then add the vanilla and the eggs, gently stirring them into the mixing bowl
  • For the next step, we will add the dry ingredients from the first bowl (flour etc) to the mixing bowl. Do this by adding half of the dry ingredients at a time, mixing gently between additions. Then continue mixing the cookie dough until the ingredients are mixed together.
  • Next, stir in the oatmeal and raisins by hand. Bake these cookies for 10-12 minutes or until the edges begin to brown

Country Oatmeal Cookie in a Jar image

My boyfriend and I made 2 dozen of these jars as Christmas gifts this year, and they were a big hit. You can substitute raisins for chocolate chips, but the chocolate makes for a nice change.

COOKIE MIX IN A JAR III

Cookie Mix in a Jar III image

Oatmeal Raisin Spice cookie mix in a jar with tag attached with directions on how to prepare the mix. These make wonderful gifts to give any time of year, and also for wedding favors, hostess gifts, baby showers, or take to a cookie exchange. Make sure to bake some up so people know what they taste like. Store in a cool dry place away from a heat source so condensation and clumping does not occur. Enjoy.
