SUGAR-FREE OATMEAL COOKIES

Sugar-Free Oatmeal Cookies image

Fast easy oatmeal cookies for the dieter or diabetic in the family. You can add raisins or craisins. This recipe came from a friend and then I changed it to add the splenda instead of sugar. For the oatmeal, I personally used the 3-minute type. I like the cookies because I love cookies and since I am now diabetic I can't have any so of course I think these are great!

SUGAR FREE OATMEAL RAISIN SPICE COOKIES MIX IN A JAR

Sugar Free Oatmeal Raisin Spice Cookies Mix in a Jar image

My personal version of a recipe I found on www.budget101.com. I wanted to do more than just have a good sugar free cookie since the starchy carbs in the flour will also jack blood sugar. This version comes out fantastic! They are more cake like than a standard crisp cookie and stay wonderfully moist in a cookie jar. Not that they will actually last long enough to worry.

Time 1h

Yield 32 cookies, 16 serving(s)

Number Of Ingredients 14

1 1/2 cups rolled oats
1 cup Splenda sugar substitute
3/4 cup flour
3/4 cup almond meal
1/2 teaspoon salt
2 teaspoons baking powder
1 cup raisins
1/2 teaspoon cinnamon
1/4 teaspoon clove
1/4 teaspoon nutmeg
2/3 cup butter, melted
4 egg whites
1/2 cup light vanilla yogurt (1 single serving 4oz cup)
1 teaspoon maple flavoring

Steps:

  • Carefully measure each ingredient into layers in a 1 quart jar. Re-used glass ice tea jars work great as well. Judicious us of a slim rolled paper cone does wonders to keep the layers clean. If mix is to be shipped ingredients may be measured into a clear plastic disposable pastry bag or decorative food safe cello bag to reduce shipping weight and then carefully tied closed.
  • Be sure to attach instruction card or label with the following directions: Combine above listed ingredients (from the list of "additionally to make cookies from mix") with 1 package of "Sugar Free Oatmeal Cookie Mix". Drop by cookie scoopfuls 1" - 2" apart onto parchment lined baking sheets. Bake 10 - 15 minutes at 350oF. Cookies do not spread much so will still be rather round and cake like. Allow to cool 5 minutes on baking sheets before carefully removing to cooling racks to completely cool. Store in a cool dry place.

VEGAN OATMEAL CRANBERRY COOKIES (SUGAR FREE)

Vegan Oatmeal Cranberry Cookies (Sugar Free) image

I was looking for classically delicious vegan oatmeal cookie recipe, that was lower in fat and sugar--I stumbled upon one that needed a lot of tweaking and this is what it has become. Everyone who has tried these loves them and you can't even tell that these are vegan, or sugar free to boot. Happy baking!

Categories     Drop Cookies

Time 17m

Yield 16 serving(s)

Number Of Ingredients 10

1 cup whole wheat pastry flour
1 cup traditional oatmeal (Not instant)
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1 pinch salt
1/4 cup organic dried cranberries
2 tablespoons real maple syrup
1/4 cup agave syrup
1/4 cup canola oil
1 1/2 teaspoons vanilla

Steps:

  • Preheat oven to 375.
  • These can be made with just a bowl and a spoon--overmixing will make them spongy, so start by mixing the dry ingredients together and then add syrups, oil, vanilla and cranberries.
  • Spoon onto lightly greased, parchment or silpat surface. Bake for 10 or less minutes, until just turning slightly brown on edges--cookies may seem a bit too soft, but they will firm up a bit while still maintaining a good soft moist texture.
  • Be careful not to overcook (or yes, they will be dry and hard)!

SUGAR-FREE CRISPY OATMEAL COOKIES

This is a very crispy cookie and reminds me of the granola bar. It's really great, give it a try. Don't deviate from the ingredients, however you may add raisins if desired.
