2 cups nonfat dry milk powder
½ cup low-fat powdered non-dairy creamer
½ cup unsweetened cocoa powder
1 tablespoon granular sweetener (such as Equal®)
¾ teaspoon ground cinnamon

Steps:

  • Combine milk powder, creamer, cocoa powder, sweetener, and cinnamon in a bowl; mix until thoroughly blended. Transfer to a jar with a tight lid.

2 c nonfat dry milk powder
1/2 c fat-free powdered nondairy creamer
1/2 c baking cocoa
sugar substitute equivalent to 1/2 cup sugar
3/4 tsp ground cinnamon

Steps:

  • 1. In a bowl, combine all of the ingredients; mix well. Store in an airtight container in a cool dry place for up to six months. Yield: 2-3/4 cups (about 8 servings).
  • 2. To prepare hot cocoa: Dissolve 1/3 cup mix in 1 cup boiling water; stir well. Yield: 1 serving.
  • 3. Nutritional Analysis: One serving (1 cup prepared hot cocoa) equals 101 calories, 1 g fat (trace saturated fat), 3 mg cholesterol, 94 mg sodium, 17 g carbohydrate, 2 g fiber, 7 g protein. Diabetic Exchange: 1 fat-free milk.
  • 4. To give as a gift. Put into one of the spring top jars found at "Michaels" or other craft shops. and give with a couple of mugs. Copy step 2 for a tag to go on the jar

I make this at the beginning of the cold weather, and have it ready all winter. Vary the flavor of your mix by trying flavored nondairy creamer; I like the cinnamon.

10 cups dry milk powder
4 ¾ cups sifted confectioners' sugar
1 ¾ cups unsweetened cocoa powder
1 ¾ cups powdered non-dairy creamer

Steps:

  • In a large mixing bowl, combine milk powder, confectioner's sugar, cocoa powder, and creamer. Stir till thoroughly combined. Store cocoa mixture in an airtight container. Makes about 15 cups mix, or enough for about 45 servings.
  • For 1 serving, place 1/3 cup cocoa mixture in a coffee cup or mug, and add 3/4 cup boiling water. Stir to dissolve. Top with dollop of whipped cream or a few marshmallows, if desired.

1 cup Splenda sugar substitute
1/2 cup cocoa
1 tablespoon cinnamon
1 (40 g) package fat-free sugar-free instant chocolate pudding mix (Jello brand)

Steps:

  • Mix all ingredients together and place in an airtight container.
  • To make hot chocolate, use 1/4 c mix and 1 C hot water.
