QUICK BANANA PUDDING (SUGAR FREE, LOW FAT)
Not a boiled custard pudding, but certainly a waist-line friendly, diabetic acceptable family dessert. Cooking time is really chilling time.

Steps:
- Prepare pudding following instant pudding directions.
- line glass bowl or casserole dish with waffers and banana slices.
- pour half of the pudding into the dish.
- layer waffers.
- layer banana slices.
- Repeat.
- Crumble waffer crumbs and add to top.
- Chill and serve.

- 2. Next I add the Sugar Free Cool Whip. Mix until all is blended together good

SUGAR FREE COCONUT BANANA PUDDING
With all the talk of celebrities and type 2 diabetes I thought I would share a family favorite dessert. For my Type 2 sweet tooth I needed something luscious. By replacing milk and sugar I reduce the carb content massively without any one noticing. I have even found sugar-free vanilla wafers! You can serve this all the time...

- 1. In a large sauce pan whisk together first 7 ingredients. Be sure to dissolve all corn starch into this mixture.
- 2. Cook over medium heat, whisking constantly, until the custard begins to thicken. When thickened enough to coat the back of a spoon add butter a few cubes at a time. Stirring until all butter is incorporated. Stir in half the coconut at this time as well.
- 3. Remove pan from heat and carefully stir flavorings into custard. Cool completely
- 4. In a 2 quart casserole dish pour 2 Tbs of cooled custard to coat the bottom. Layer wafers to cover bottom. Cover wafers with a layer of bananas. Just cover bananas with more custard.
- 5. Repeat layers until dish is filled. End with custard. Sprinkle remaining coconut over the top of dish.
- 6. Refrigerate for at least 2 hours before serving. Over night is even better. Store any leftovers in the fridge.
ALMOST SUGAR FREE BANANA PUDDING CUPCAKES
Each cupcake contains about 2g sugar. I could not find sugar free vanilla wafers, and there is some sugar in the milk, which is why I called them Almost Sugar Free.

- 1. Preheat oven to 350 degrees.
- 2. Line 24 muffin cups with baking cups.
- 3. Place a vanilla wafer in the bottom of each cup.
- 4. Combine cake mix, water, oil, and eggs into a large mixing bowl.
- 5. Mix at low speed for 1 minute, then medium speed until smooth.
- 6. Fill baking cups 2/3 full. (Easiest way is to use an ice cream scoop.)
- 7. Bake for 20 - 25 minutes. Check each cake with a toothpick to ensure they are baked thoroughly.
- 8. Let cakes cool completely.
- 9. While cakes are cooling, mix your pudding by adding the milk to the mix, and stirring well with a whisk. Refrigerate until set. (Usually 5-10 minutes).
- 10. Once the cakes are completely cooled, fill them with banana pudding, by using one squirt per cake.
- 11. Top with Cool Whip.
- 12. Refrigerate until ready to serve. (For best results, prepare cakes the night before serving.)

- 1. Mix milk and pudding mixes together until they become thickened. Then add the Cool Whip by folding it in.
- 2. Slice bananas into a separate bowl. In a big bowl or casserole dish begin by layering pudding mixture, next a layer of bananas, then a layer of vanilla wafers. Continue until you use all the pudding mix and on the last layer crush cookies to put on top of it to cover all the bananas.
- 3. Cool until served and best served that day. Enjoy

- Mix pudding by direction on box then add sour cream and Cool Whip. Mix together – DON’T BEAT.
- Layer vanilla wafers, bananas, and then mixture. Repeat until the pudding is on top then crush wafers on top.
