Soft, bakery style sugar cookies with no rolling required. Perfect for holiday decorating.

1/2 cup butter, room temperature
4 ounces cream cheese, softened
1 teaspoon vanilla extract
1/4 teaspoon salt
4 cups powdered sugar
5 tablespoons milk
1 cup butter, softened
1/2 cup powdered sugar
1/2 cup sugar
1 egg
1 teaspoon vanilla
1/2 teaspoon cream of tartar
1/2 teaspoon baking soda
1/2 teaspoon salt
2 1/4 cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees.
  • Combine butter and sugars in a medium bowl. Using an electric mixer, beat at medium speed, scraping bowl often, until light and fluffy. Add egg and vanilla; continue beating until well mixed. Mix in cream of tartar, baking soda and salt. Gradually mix in flour
  • Shape dough into 1 1/2 inch balls. Place 2 inches apart onto cookie sheets. Flatten to about 1 1/2 inches with bottom of glass (if the glass sticks, dip it in sugar first).
  • Bake for 7-9 minutes or until edges of cookies are lightly browned. Do not over-bake. Let cookies stand for 2-3 minutes on cookie sheet before removing to a cooling rack. Cool completely.
  • To make frosting, combine butter and cream cheese until smooth. Stir in vanilla extract and salt. Add powdered sugar in 1-2 cup increments until combined, then add milk one tablespoon at a time until frosting is desired spreading consistency. You may not use all the milk.

This sugar cookie dates back to a Swedish woman born in 1877! Her daughter, Esther Davis, shared the recipe with me and she came up with all the exact measurements, since the original cookies were mixed by feel and taste. 1/2 cup butter, softened
1/2 cup shortening
1 cup sugar
1 large egg, room temperature
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
Additional sugar

Steps:

  • Preheat oven to 350°. Cream butter, shortening and sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. In another bowl, whisk flour, baking powder and baking soda; gradually beat into creamed mixture., Shape into 1-in. balls. Roll in additional sugar. Place on greased baking sheets; flatten with a glass. Bake until set, 10-12 minutes. Remove to wire racks to cool.

Whenever you make these cookies for someone, be sure to bring along several copies of the recipe! You will be asked for it, I promise! NOTE: I make icing with confectioners' sugar and milk. I make it fairly thin, as I 'paint' the icing on the cookies with a pastry brush. Thin enough to spread easily but not so thin that it just makes your cookies wet and runs off.

1 ½ cups butter, softened
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
5 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt

Steps:

  • In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
  • Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
  • Bake 6 to 8 minutes in preheated oven. Cool completely.

A recipe that my Mom got off a bag of flour. I am typing it as the drop cookie method (that's the way I made them). For roll and cut-out version sub 1 1/2 cups POWDERED sugar for the granulated sugar.

1 cup white sugar
1 cup butter, softened
3/4 teaspoon vanilla
1/2 teaspoon almond extract
1 egg
2 1/3 cups flour
1/2 teaspoon baking soda
extra sugar, for pressing top

Steps:

  • Preheat oven to 350. Lightly spray cookie sheets w/ nonstick spray.
  • In a mixing bowl, beat together granulated sugar and butter. *If planning to roll and cut out, use 1 1/2 cups of powdered sugar instead.
  • Beat in the extracts and egg.
  • Sift together flour and baking soda; gradually beat into the creamed mixture.
  • Drop by rounded spoonfuls on to the cookie sheets.
  • Place some extra sugar on a plate. Dip a flat-bottomed glass in the sugar and lightly flatten the dough.
  • Bake at 350 for 8-9 minutes or until edges just slightly turn golden.
  • *If doing roll out method, chill dough for at least 3 hours. Roll on to lightly floured surface to about 1/4" thick. Cut out with cookie cutters and bake 9-11 minute.

MOM'S CRACKED SUGAR COOKIES

This is a sugar cookie that you don't have to roll and cut. I always use a cookie scoop when making these. The last time I made them I had some organic cane sugar that I used to roll them in, it really seemed to add some extra sparkle to the finished cookies. The note my Mom had on the recipe is DO NOT double or flatten the cookies. The cookies will turn out slightly differently if you use a hand mixer or a big stand mixer. I use my KitchenAid stand mixer & bake the cookies for 10 minutes. They turn out flatter, slightly soft & chewy, just the way I like them. If you use a stand mixer you could chill your dough or add 2 tsp of instant clearjeI to it to stop the cookies from spreading as much. I think they would make a wonderful icecream sandwich.

2 cups flour
2 teaspoons cream of tartar

Steps:

  • Cream butter & sugar.
  • Mix in egg.
  • Mix in flour, cream of tartar & baking soda till well combined.
  • Drop tablespoon size balls in sugar, roll to coat.
  • Place 12 cookies on a parchment lined cookie sheet, do not flatten.
  • Bake at 350 for 10 - 15 minutes.
  • Slide parchment with cookies onto wire rack to cool.
  • Store in airtight container.
