1 tablespoon brown sugar, packed (-- FOR KETO: use brown sugar substitute)
1 1/2 teaspoons paprika
1 teaspoon dried oregano, ((or thyme, parsley, rosemary))
1 teaspoon salt, ((use seasoned salt, Adobo or chicken salt for extra flavour))
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cracked black pepper, (to taste)
1 teaspoon chili powder, ((or 1/2 teaspoon cayenne pepper) -- optional for a kick of heat)
4 large chicken breasts (7oz | 200g each)
1 tablespoon olive oil
3 tablespoons butter
2 cloves garlic, (minced or finely chopped)
2 teaspoons fresh chopped parsley

Steps:

  • Preheat oven to 425°F | 220°C (standard ovens) or 390°F | 200°C (fan forced or convection ovens).
  • Using a meat mallet or rolling pin, pound each chicken breast to 0.8-inch | 2cm at the thickest part. Make sure your fillets are all the same thickness to ensure even cooking.
  • Combine sugar, paprika, oregano, salt, powders, pepper and chili (if using).
  • Line a baking pan with aluminnium foil (or parchment/baking paper). Transfer chicken to the pan and toss chicken in the seasoning. Drizzle with the oil and rub seasoning all over to evenly coat.
  • Bake chicken in preheated oven for 16-18 minutes, or until internal temperature is 165°F (75°C) using a meat thermometer. It should be golden with crisp edges.*
  • Remove parchment paper. Broil (grill) on high heat during the last 2-3 minutes of cooking until golden and crisp.
  • Remove pan from oven, transfer chicken to serving plates and let rest for 5 minutes before serving.
  • OPTIONAL STEP: While chicken is in the oven, melt butter in a small skillet. Sauté garlic until fragrant (30 seconds), and remove pan from heat. Stir in parsley, then pour butter mixture into pan juices, stirring well to combine all of the flavours together.
  • To serve, drizzle pan juices over the chicken and garnish with freshly chopped parsley.

Got this from my cousin-in-law Doreen. The chicken cooks for 2 1/2 hours and comes out so moist. There will be plenty of juice from the meat to make a gravy. Serve with mashed potatoes and your favorite veggie. Great weekend meal for those upcoming cold evenings. Cooking time includes the 20 minute sitting time in step 11.

1 large whole chicken
1 -2 teaspoon parsley
1 -2 teaspoon thyme
1/2 teaspoon rosemary
1 lemon, wedged
salt and pepper
1 lemon, sliced
2 -3 tablespoons butter
1 onion, sliced
1 -2 teaspoon paprika

Steps:

  • Preheat oven to 180C/350°F
  • Line a 9" X 13" glass baking dish with a very large piece of foil, big enough to wrap up the chicken.
  • In a small bowl, mix the parsley, thyme and rosemary.
  • Rinse the chicken and pat the outside dry with paper(kitchen)towels. Place in the lined baking dish.
  • Squeeze the juice from the wedged lemon inside the chicken and then put the lemon wedges inside the chicken. Sprinkle the inside of the chicken with 1/3 of the herbs and salt and pepper.
  • Squeeze the juice from the lemon slices on the chicken and lay the slices on top of it. Dot with butter.
  • Sprinkle with the remaining herbs, the paprika, salt and pepper.
  • Arrange the sliced onion around the chicken.
  • Fold up the sides of the foil on the chicken and roll up the foil like a parcel.
  • Place in the preheated oven for 2 1/2 hours. Do not open the oven until the time is up.
  • Remove the dish from the oven and let sit for about 15-20 minutes before opening the foil.
  • Transfer the chicken to a cutting board. You can then use the juice in the pan to make a gravy.

1/2 cup shredded mozzarella cheese (about 2 oz.)

Steps:

  • Preheat oven to 425 degrees F.
  • Combine bread crumbs with Parmesan cheese in shallow dish; set aside.

1 lemon, zested
2 sprigs fresh rosemary, chopped
3 sprigs fresh thyme, chopped
2 cloves garlic, minced
1 teaspoon olive oil
1 pinch sea salt and pepper to taste
1 (3 pound) whole chicken
4 whole garlic cloves

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C). Combine the lemon zest, rosemary, thyme, and minced garlic in a small bowl; stir in the olive oil, then season to taste with salt and pepper.
  • Separate the skin around the breast and thighs from the meat. Rub the herb mixture onto the meat, underneath the skin. Cut the zested lemon in half, and place half of the lemon into the cavity of the chicken along with the whole garlic cloves. Place the chicken into a roasting pan, and squeeze the remaining lemon half evenly over the skin of the chicken.
  • Bake the chicken in the preheated oven until no longer pink at the bone and the juices run clear, about 1 hour, 35 minutes.
