These onions are cooked in vegetable broth and stuffed with a delicious blend of cheeses. Experiment to find the blend you like. Instead of goat cheese, try cream cheese or mascarpone cheese. 4 large Vidalia or other sweet onions
3/4 cup crumbled goat cheese
3/4 cup crumbled blue cheese
1 teaspoon minced fresh thyme
2 cups vegetable stock
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup grated Romano or Parmesan cheese
Fresh thyme leaves

Steps:

  • Peel onions. Cut a 1/2-in. slice off top of each onion; remove centers with a melon baller, leaving 1/2-in. shells. Chop removed onion, reserving 3 cups (save remaining onion for another use). Mix together goat and blue cheeses, minced thyme and reserved onion; spoon into onions., Place onions and stock in a 6-qt. slow cooker; drizzle with oil. Sprinkle with salt, pepper and Romano cheese. Cook, covered, on low 4-5 hours or until onions are tender. Cut in half to serve; sprinkle with thyme leaves.

2 medium sweet onions
1/4 teaspoon coarse salt, plus more for cooking water
1 tablespoon olive oil, divided
3 ounces cremini mushrooms, cut into 1/2 inch pieces (4 or 5)
2 ounces ham, cut into 1/4 inch pieces
1/8 teaspoon fresh ground black pepper
1 1/2 tablespoons red wine (Madeira preferred)
2 tablespoons chopped fresh parsley
1 ounce grated gruyere cheese (about 1/2 cup)

Steps:

  • Preheat oven to 400°; peel onions and slice 1/2" from the top of each; discard; slice just enough from the bottoms to allow the onions to stand upright.
  • Use a melon baller to hollow out the inside of each onion, leaving a 1/3" to 1/2" wall; set aside; chop the removed parts and set 1/2 cup aside; save the rest for another use.
  • Gently add onions to a pot of boiling, salted water and boil for 5 minutes; remove with a slotted spoon and set aside to dry on a wire rack.
  • Saute reserved chopped onions in 1/2 T oil until translucent, about 8 minutes; add mushrooms, ham and pepper and saute until browned, about 5 minutes.
  • Deglaze pan with wine and pour mixture into a small bowl; let cool for 2 or 3 minutes; add the parsley and cheese and stir to combine.
  • Stuff the onions; place in a small roasting pan and drizzle with remaining 1/2 T oil; cover with foil and bake until tender, about 50 minutes; remove foil 10 minutes before done and allow to brown.

4 medium sweet onions
1/2 teaspoon coarse salt, plus more for cooking water
2 tablespoons extra-virgin olive oil
6 ounces (about 9) cremini mushrooms, trimmed and cut into 1/2-inch pieces
4 ounces Virginia ham, cut into 1/4-inch pieces
1/4 teaspoon freshly ground pepper
3 tablespoons Madeira wine
1/4 cup chopped fresh flat-leaf parsley
1 cup grated (about 2 ounces) Gruyere cheese

Steps:

  • Preheat oven to 400 degrees. Peel onions; slice 1/2 inch from top of each, and discard. Slice just enough from the root end so that onions stand upright. Using a melon baller, hollow out the insides, leaving a 1/3- to 1/2-inch-thick shell. Set aside. Finely chop removed parts, and set 1 cup chopped onion aside. Discard remaining onion or reserve for another use.
  • Bring a large pot of water to a boil; add salt. Gently submerge onion shells, and boil 5 minutes. Remove with a slotted spoon; transfer to a wire rack to dry.
  • Make the stuffing: In a large saute pan, heat 1 tablespoon oil over medium heat. Add reserved chopped onions, and cook until translucent, about 8 minutes. Add mushrooms and ham, and season with salt and pepper; cook until mixture is browned, about 5 minutes. Add Madeira; deglaze pan, stirring with a wooden spoon to loosen any brown bits on bottom. Remove from heat, and transfer to a small mixing bowl; let cool slightly, 2 to 3 minutes. Add parsley and Gruyere cheese, and stir to combine.
  • Fill boiled onion shells with stuffing. Place in a small roasting pan; drizzle with remaining tablespoon oil. Cover with aluminum foil. Bake until tender, about 50 minutes; remove foil after 40 minutes to allow stuffing to brown.

This innovative recipe for grilled scallop-stuffed sweet onions is from chef Masaharu Morimoto's "The New Art of Japanese Cooking."

4 large sweet onions, such as Vidalia, Maui, or Walla Walla
2 tablespoons olive oil
Salt and freshly ground black pepper
1/2 cup sake
1/4 cup soy sauce, plus more for topping onions
2 tablespoons mirin
4 very large diver or day-boat sea scallops
4 thin slices prosciutto
2 tablespoons unsalted butter

Steps:

  • Preheat oven to 325 degrees. Place onions in their skins in an 11 1/2-by-8-inch metal baking pan. Rub onions with oil and season with salt and pepper. Cover pan tightly with parchment paper-lined aluminum foil. Roast until onions are tender, but still retain their shape, about 2 1/2 hours. Remove onions from baking pan, reserving pan; let stand until cool enough to handle.
  • Cut off the top third of each onion; set aside. Cut a hole in the center of each onion large enough to hold a scallop.
  • Place baking pan on the stove over high heat. Add sake, and stir using a wooden spoon, scraping up the browned bits. Add onion centers, soy sauce, and mirin; cook, stirring, until onions are soft. Pour mixture into a small saucepan; set aside.
  • Season scallops with salt and pepper. Preheat a grill pan over high heat. Reheat sake mixture and season with salt and pepper; keep warm until ready to use.
  • Place scallops on grill and cook, turning once, just until grill marks appear on prosciutto, about 30 seconds per side. Wrap each scallop in a piece of prosciutto, enclosing completely. Stuff a scallop into each onion. Top each with 1/2 teaspoon butter, cover with reserved onion tops, and place on grill pan. Cook onions until heated through and skin is blackened, 6 to 8 minutes.
  • Remove blackened skin and divide onions among 4 serving plates. Drizzle each with sake mixture and serve immediately.

I have a few WALLA WALLA onions left. So I decided to combine a few recipes...and came up with my own for a delicious baked onion. This is a nice side dish to be served as is...or with sour cream. I think I might name it: Nancy,s "MOON OVER SPOKANE, BAKED ONIONS" LOL...just kidding! Please enjoy... 9/29/12

3-4 large sweet onions
1/2 can(s) canned creamed broccoli soup .
2 Tbsp butter...melted
buttery crackers... crushed
1/2 - 3/4 c coooked chicken.....i used canned breast
pepper & paprika
1/2- 3/4 c sour cream..........when serving.....

Steps:

  • 1. SKIN paper skin off ONIONS. CUT OFF ROOT BOTTOM. CUT OFF TOP 1/2 INCH OR MORE. PUT IN PAN OF WATER BRING TO A BOIL, TURN HEAT TO MEDIUM, pre boil FOR ABOUT 30 MINUTES. TILL SOFT BUT FIRM. REMOVE FROM PAN. DRAIN.
  • 2. On a cutting board, insert the end of a butter knife to punch out the center of the onions. Leave about 2or 3outer onion rings for filling.
  • 3. Crunch the buttery crackers. Put crackers on a plastic bag, and crush. I use the side of the soup can. Mix soup,chicken, and cracker crumbs.
  • 4. STUFF ONIONS. Sprinkle with paprika. PUT IN A BUTTERD DISH, ADD 1/3 CUPS OF WATER. COVER DISH. PLACE IN A PRE-HEATED OVEN set at 400 F. for 30 minutes. Remove cover for the last 10 minutes.
  • 5. Drain save a little water to mix with the sour cream. Serve with sour cream, sprinkle pepper and parsley on when serving....if desired. *** TIP: with the left over insides of the onions try my other recipe on JAP "CREAMED ONION SOUP, better than canned" Remember.......WASTE NOT..WANT NOT !

You can get just about everything necessary to make tamales over here, except for that essential tamale ingredient, dried corn husks. Never mind, sweet bell peppers make a delicious substitute!

2 tablespoons extra virgin olive oil
2 small onions, diced
3 garlic cloves, minced
1 cup dry sherry
1 cup grated manchego cheese
3 1/2 cups masa harina
2 1/4 cups chicken stock
1 1/4 cups unsalted butter, softened
2 tablespoons ground cumin
1 tablespoon kosher salt
1 1/2 teaspoons baking powder
1 teaspoon crushed red pepper flakes
1 tablespoon smoked paprika
6 whole red bell peppers, tops, removed and seeded
fresh cilantro stem (to garnish)

Steps:

  • Prehat the oven to 350*F.
  • to prepare the filling, heat the oil in a large saute pan until very hot.
  • Add the onions and cook, without stirring for 6 to 8 minutes.
  • Toss and continue to cook until wellc aramelized and golden brown,about 20 minutes total cookign time.
  • Add the garlic and cook for about 1 minute, then add the sherry and cook until the mixture is almost dry, about 4 minutes.
  • Remove from the heat and let cool.
  • When cool, fold in the cheese and set aside.
  • In a medium bowl, combine the masa harina and stock and whisk until smooth,add hot water if the mixture is too thick.
  • In the bowl of a mixer, combine the butter, cumin, salt, baking powder, red pepper flakes and 2 tsp of the paprika.
  • Whip on high speed until fluffy.
  • Lower the speed and add the reconstituted masa, a tablespoon or so at a time, and beat until well blended.
  • Next add the cooled onion mixture and mix well.
  • Distribute the filling among the peppers.
  • Place the stuffed peppers in a 9 by 13 inch baking dish.
  • Bake for about 30 minutes, until the fillingis hot.
  • To serve, place each pepper on a plate, garnish with cilantro sprigs, dust the edge of the plates with the remaining 1 tsp smoked paprika.
  • Serve hot.

4 medium Vidalia onions (about 3 pounds)
1 1/2 cups chicken stock
1/2 cup dried apricots (about 16), cut into 1/4-inch pieces
1 teaspoon finely grated lemon zest
5 tablespoons unsalted butter
1/2 pound ground lamb
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 or 4 shakes Habañero Hot Sauce (page 244) or store-bought hot sauce
2 tablespoons coarsely chopped fresh flat-leaf parsley
2 tablespoons coarsely chopped fresh mint
2 tablespoons fresh bread crumbs
Arugula leaves

Steps:

  • Without peeling the onions, cut about 1 inch off the top of each and just enough off the bottoms so that the onions stand upright. Reserve the onion tops and discard the bottoms. Remove all but the outer two layers of each onion by scooping out the centers with a spoon or melon baller. Set the onion shells in a baking dish, along with the tops. Set aside. Finely chop the insides.
  • Preheat the oven to 400°F.
  • In a small pot, combine the stock, apricots, and zest over medium heat. Gently simmer until the apricots are plump and the liquid is reduced to 1/2 cup, roughly 10 minutes.
  • Melt 3 tablespoons of the butter in a skillet over medium-low heat. Stir in the chopped onions and cook until soft, about 12 minutes. Add the lamb, cinnamon, and cumin to the onions. Raise the heat to medium-high; season with the salt and pepper. Cook, continually stirring with a wooden spoon, until the lamb is crumbly, 7 to 8 minutes. Do not drain the rendered fat; you need it to keep the onions moist. Remove the pan from the heat. Stir in the apricot mixture with its liquid, hot sauce to taste, the parsley, and mint. Let cool slightly. The lamb filling can easily be prepared a day in advance, covered, and refrigerated.
  • Spoon the lamb mixture into the hollowed-out onions, pressing down with your hands to pack it in, and mound it over the onions. Sprinkle the bread crumbs on top and dot with the remaining 2 tablespoons butter. Cover the pan tightly with aluminum foil and bake for 30 minutes. Remove the foil and continue to bake for 10 minutes, until the bread crumbs are brown. Serve immediately with a few leaves of arugula on the side.

1/4 teaspoon pepper
1/8 teaspoon garlic powder
1/2 cup soft bread crumbs, divided

Steps:

  • In a large saucepan, bring water to a boil. Add onions; cover and boil for 9-11 minutes or until tender. Drain; cool for 5 minutes. Cut a thin slice off the top of each onion; carefully hollow out, leaving a 1/2-in. shell. Chop removed onion., In a nonstick skillet coated with cooking spray, cook the chopped onion, green onion and parsley in 4 teaspoons butter for 3 minutes. Add the ham, salt, celery seed, pepper and garlic powder; cook until onions are tender and ham is lightly browned. Stir in 1/4 cup bread crumbs; heat through. Stuff into onion shells., Melt remaining butter; toss with remaining bread crumbs. Sprinkle over stuffing. Broil 6 in. from the heat for 3-4 minutes or until crumbs are lightly browned and onions are heated through.

This is a unique recipe and quite good. The sweetness of the onions really make this tasty.

4 large onions peeled
1 cup(s) cottage cheese, small curd
2 - scallions minced
1/2 cup(s) shredded cheddar cheese
1/4 cup(s) bacon cooked and crumbled
4 clove(s) garlic minced
1 teaspoon(s) salt
2 cup(s) water
1 bottle(s) dark beer
2 tablespoon(s) butter melted
1/2 cup(s) bread crumbs

Steps:

  • using a steamer. I used a bamboo steamer. Add water and beer to pan and place the onions in the steamer and steam over the water and beer for about 30 minutes until tender.
  • Remove the onions and set aside to cool.
  • Mix all remaining ingredients except butter and breadcrumbs together.
  • Remove the insides of the onion only leaving 2 outer layers intact. Place a small piece of onion onto the bottom of each onion to seal the hole. Chop 1/2 cup of the removed onions and add to the stuffing mixture.
  • Stuff each onion with equal amounts of filling.
  • Mix melted butter with breadcrumbs and sprinkle over top each onion.
  • Bake at 350 degrees for 30 minutes
