ITALIAN STUFFED BREAD

Stuffed bread that is a savory meal. We have had this at Zenari's restaurant. It is great!

1 (1 pound) loaf frozen bread dough, thawed
1 tablespoon olive oil, or to taste
1 teaspoon dried oregano
1 teaspoon dried basil
16 slices mortadella
12 slices provolone cheese
12 thin slices capicola ham
12 slices Genoa salami
1 ½ cups sliced Roma tomatoes
1 ½ cups thinly sliced fresh mushrooms
1 egg, beaten
2 tablespoons sesame seeds

Steps:

  • Place dough in a large bowl. Cover with plastic wrap and let rise in a warm place until doubled, 45 minutes to 1 hour.
  • Roll dough into a 17x20-inch rectangle about 1/4-inch thick on a large piece of parchment paper. Brush olive oil over dough; sprinkle basil and oregano on top. Layer mortadella, provolone cheese, capicola ham, Genoa salami, tomatoes, and mushrooms over dough.
  • Roll dough lengthwise into a log. Brush the top with beaten egg; sprinkle sesame seeds on top. Transfer to a baking sheet. Cover with plastic wrap and let rise until puffy, about 30 minutes.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Bake in the preheated oven until golden brown, about 45 minutes. Let cool for 5 minutes before slicing.

An easy way to dress up a plain loaf of bread! Great as an appetizer or as a side dish to grilled steaks. My local grocery sells a blend of mozzarella and provolone cheese that I use.

½ cup butter, melted
3 tablespoons chopped fresh parsley
2 tablespoons olive oil
3 cloves garlic, minced
1 loaf Italian bread
12 ounces shredded Italian cheese blend

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix melted butter, parsley, olive oil, and garlic together in a bowl.
  • Slice bread diagonally without cutting all the way through; do the same on the opposite diagonal to create cube-shaped sections still attached to the bottom crust.
  • Spoon butter mixture carefully between sections; stuff in shredded Italian cheese blend. Wrap loaf in aluminum foil.
  • Bake in the preheated oven for 15 minutes; unwrap and bake until cheese is melted, about 10 minutes more.

8 ounces bulk Italian sausage (we like the extra spicy one)
1 cup sliced mushrooms
1/2 cup chopped bell pepper
1/2 cup chopped onion
3 -4 garlic cloves, chopped
1 teaspoon italian seasoning
1/2 cup chopped tomato, packed in oil
1/2 cup parmesan cheese
1/2 cup mozzarella cheese
2 -3 slices provolone cheese
pizza sauce, for dipping (I have used left over Marinara)
1 loaf frozen bread dough

Steps:

  • For filling sauté sausage, veggies and seasonings until sausage is no longer pink and liquid has evaporated from pan.
  • Add tomatoes and 1/2 cup of pizza sauce.
  • Roll out bread dough to a large rectangle (stopping once in awhile to let dough rest).
  • Spread filling up to 1 inch from sides of dough. Top with cheeses. Roll to a log. Seal ends (brushing water and pinching).
  • Place log on cookie sheet sprayed with cooking spray.
  • Let rest 30 to 45 minutes.
  • Bake in 350°F oven for 30 to 40 minutes (until loaf is golden brown).
  • Cool at least 30 minutes before slicing.
  • Heat left over sauce for dipping before serving.

This Savory Italian Casatiello Napoletano Bread is a traditional Easter Bread from Naples. Stuffed with salame, pancetta and a selection of cheeses.

Number Of Ingredients 14

1 cup + 1-3 tablespoons water lukewarm ((250-275 grams))
1 teaspoon active dry yeast
3 ½ cups + 5 ½ tablespoons flour (all purpose or bread) ((500 grams))
½ cup + 1 tablespoon lard ((115 grams))
1 teaspoon salt
3-4 dashes black pepper
1 ¼ cups cheese (cubed fontal, provolone, gruyere or even a mixture) ((170 grams))
1 cup salame (milano cubed) ((120 grams))
⅓ - ½ cup pancetta (cubed) ((50 grams))
3 tablespoons pecorino freshly grated* ((40 grams))
3 tablespoons parmesan freshly grated* ((40 grams))
3-4 large eggs
1 egg
1 tablespoon water

Steps:

  • In the stand up mixer add the water and sprinkle the yeast on top, let it sit for 5-10 minutes, then stir, add the flour and start to knead, add the lard a little at a time and continue to knead add the salt and pepper with the last addition of lard.
  • Knead the dough for 10-15 minutes, it should be smooth and not sticky. Form the dough into a ball, place in a clean bowl, cover it and let it rise in a warm draft free area for 2-3 hours or until it triples in volume.
  • Move the dough to a flat surface and pat into small rectangle, fold the top of dough to the middle the the bottom up and over the middle like an envelope. Remove a small amount of dough to be used as the strips to cover the eggs, you need to roll out 6-8 strips. Cover and let the dough rest for 30 minutes.While the dough is resting cut up the pancetta, salami and cheese into cubes
  • Roll the dough into a rectangle 1/4 inch (1 cm) thick about 16x10 inches (40x27 cm) in size, sprinkle with 1/2 the grated pecorino or parmesan, then top with the cubed salami, pancetta and cheese, sprinkle again with the remaining pecorino.
  • Roll the dough lengthwise, but not too tightly, form into a circle and place it in a greased 10 inch tube or bundt pan. Place 3-4 eggs on the dough spread apart and keep them in place with strips of rolled out dough, wet the ends of the dough with a little water to help it stick.
  • Cover the pan and let it rise in a warm draft free area for approximately 2 hours.
  • Pre-heat oven to 350F (180C).
  • Brush the risen dough with the egg wash and bake for 45-50 minutes or until golden. If the bread is browning too much cover with foil and continue baking. Cool on a wire rack. Eat warm or room temperature. Enjoy!

1 lb frozen bread dough (need 3 loaves)
1 lb ground chuck
1 lb ground pork sausage (hot or mild)
6 ounces sliced pepperoni
8 ounces grated parmesan cheese
8 ounces sliced mozzarella cheese
6 green onions, chopped
5 mushrooms, sliced
1 green bell pepper, chopped
1/4 cup black olives, sliced
1/4 cup green olives, sliced

Steps:

  • Thaw the 3 loaves of bread.
  • Brown ground beef and sausage in skillet. Season with salt and pepper. Drain.
  • Add grated parmesan cheese. Mix well with meat.
  • Remove from heat and cool.
  • Add mushrooms, onions, bell pepper, black olives, green olives and mix well.
  • Cut each thawed bread loaf into thirds. Will have 9 sections.
  • Take one section of dough at a time and roll into rectangle on floured surface.
  • Spoon about 1 cup of filling onto rectangle of dough.
  • Top filling with 4 to 6 slices of pepperoni and 2 to 4 slices of mozzarella cheese. Your choice of how much to add.
  • Brush edges of bread dough with egg whites.
  • Fold 2 edges so they are overlapping. Crimp remaining edges with fork to seal.
  • Bake Stuffed Italian Loaves on rimmed, ungreased cookie pan at 350 degrees until browned.
  • Makes 9 loaves which after cooled can be individually wrapped in foil and frozen. Thaw in foil, reheat in 350 oven for about 20 - 25 minutes. I don't recommend reheating in microwave as bread may be tough.

If you like strombolis, you will love this. It is bread stuffed with meats and cheese. This is a favorite in my family, and always has been.

hard salami (all your meats should be about equally thick)
pepperoni
ham
green pepper
onion
parmesan cheese
mozzarella cheese
frozen bread dough
cheese or vegetables

Steps:

  • Thaw out bread dough.
  • Dice a green pepper and onion (I make my pieces very small).
  • Roll out dough on a floured surface.
  • (your dough should be just wide enough to put your meats on) Stack the dough with a layer of each meat, cheese, and vegetable.
  • bring edges of dough together.
  • Using a little water will help the dough stick together.
  • Be sure you leave no cracks in the dough, or your cheese will run out when cooking.
  • Bake at 350 until golden brown (usually about 20-26 minutes depending on your oven and thickness of dough).
