⅓ cup ground Italian sausage
1 (8 ounce) package cream cheese, softened
¾ tablespoon garlic salt
3 tablespoons grated Romano cheese
1 teaspoon dried oregano
1 teaspoon dried basil
⅓ cup Italian-style dry bread crumbs
1 tablespoon olive oil
6 Hungarian hot peppers, cored and seeded

Steps:

  • Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together the sausage, cream cheese, garlic salt, Romano cheese, oregano, basil, bread crumbs and olive oil.
  • Stuff the peppers with the sausage mixture. Place on a baking sheet, and bake in the preheated oven 20 to 25 minutes, until the stuffing is lightly brown and bubbly.

PICKLED STUFFED CHERRY HOT PEPPERS

One day my hubby and I were at one of our local grocery stores which has a lot of nice things on their salad bar. I saw these and tried them and wow they were amazing but so expensive. So I took one home and took it a part and this is what I came up with. We grew Cherry Hot Peppers this year so that even made them cheaper!

10 fresh hot cherry peppers
3 oz italian prosciutto
1 c extra virgin olive oil
3 large fresh garlic cloves, peeled and smashed
3 Tbsp balsamic vinegar, good quality
3 Tbsp apple cider vinegar or white vinegar
3 sprigs of fresh oregano
1 tsp kosher salt

Steps:

  • 1. Combine the oil, garlic, vinegars, oregano and salt in a small sauce pan. Bring to just a simmer and simmer for 2 minutes and turn off the heat. This will help the flavors marry. Set aside to cool.
  • 2. In the meantime take a small knife, cut the top off as you would a pumpkin. Remove the seeds by either using your knife or a small measuring spoon.
  • 3. Now cut a cube of provolone and a piece of the prosciutto to the size of your hot cherry pepper. This will most likely change for each pepper depending on their size and shape.
  • 4. Wrap the prosciutto around your cubed cheese and place inside the cherry pepper. Continue with all the remaining peppers.
  • 5. Place your stuffed peppers in a container which has a secrued lid. Pour the cooled vinegar and oil mixture over your peppers. If you do not have enough liquid you can always add additional olive oil. My peppers were a little small so I didn't have to add any liquid.
  • 6. Put the lid on and gently tip your container upside down af few times. Place in the frig for at least 24 hours the longer the better as the flavors will improve!

80 -90 large banana peppers
1 gallon cabbage, chopped
6 teaspoons salt
5 teaspoons celery seeds
1 teaspoon black pepper
8 cups white vinegar
7 cups water
5 lbs sugar

Steps:

  • Seed and de-vein peppers.
  • Mix together cabbage, salt, celery seed and black pepper.
  • Stuff peppers and pack into jars.
  • Mix together vinegar, water and sugar.
  • Bring to a boil.
  • Pour over peppers.
  • Wipe edges of the jars with a clean cloth, place lids and screw bands on fingertip-tight.
  • Turn jars upside down for 5 minutes, then turn right-side up and allow to seal**.
  • **Inversion is an heirloom method no longer recommended by the USDA/NCHFP (National Center For Home Food Preservation). To meet current guidelines, the filled jars should be processed in a boiling water bath for 10 minutes up to 1000 feet in elevation, 15 minutes from 1000 to 6000 feet, and 20 minutes at over 6000 feet.

5 cups shredded mozzarella cheese, divided
1 (24 ounce) carton ricotta cheese
1 cup diced stick pepperoni
3 eggs, lightly beaten

1 teaspoon garlic powder
¼ teaspoon freshly grated nutmeg
20 hot banana peppers, tops and seeds removed, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Set aside to cool.

4 ounces young pecorino or provolone cheese, cut into 1/4 inch cubes
14 small sprigs fresh marjoram
1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 garlic clove, minced
2 teaspoons coarse salt
1/4 teaspoon freshly ground black pepper
Crusty bread, for serving

Steps:

  • Stuff each pepper with cheese and a sprig of marjoram. Transfer stuffed pepper and pepper tops to a glass loaf pan.
  • Whisk oil, vinegar, garlic, salt, and pepper in a small bowl. Pour over peppers. Let marinate at room temperature 1 hour.

4 bell peppers, tops cut off, seeded
½ pound ground beef

  • Cook the hashbrown patties according to package directions. Mash with a fork and set aside.

I use Anaheim Chillis or Hot Banana Peppers for this recipe, but you can use any pepper of your choice. Be very careful when seeding the peppers. It is important to wear gloves and not touch your face. If you do get pepper burn on your skin, rub olive oil on the affected area. I make these to freeze.

Some like it hot, some not so hot! These little (about 2 1/2" x 1 1/2" high) red peppers are just right for medium hot. They look lovely on your plate. I served them with broccoli. cauliflower, browned potatoes and lamb chops. They also come as green cherry tomatoes and are great served as an appetizeer - perhaps only an inch across & an inch high - The green ones i found were hotter than the red!

4 tablespoons onions, minced fine
2 medium mushrooms, minced fine
2 garlic cloves, minced fine
1 teaspoon Worcestershire sauce
1/2 teaspoon dried oregano
8 teaspoons sour cream or 8 teaspoons yogurt

Steps:

  • Cut the top off the peppers and remove the membranes and seeds.
  • Sauté the onion, garlic and mushrooms on a non stick skillet (use a bit of oil if you wish but not necessary) about 4 minutes. Sprinkle in the oregano.

2 (32 ounce) bottles ketchup
2 garlic cloves
4 lbs vienna sausages (or hot dogs)
1 gallon whole banana pepper (hot or sweet)

Steps:

  • Mix tomato juice, vinegar, sugar, ketchup and garlic.
  • Cook 30 Minutes.
  • Cut stem end off of banana peppers and remove seeds (use rubber gloves if making hot peppers).
  • Stuff 1 Vienna sausage (or hot dog) into each pepper.
  • Pack peppers tightly into pint or quart jars.
  • Bring sauce to boiling.
  • Pour over peppers.
  • Wipe rims of jar with a clean cloth; place llids and screw on rings fingertip-tight.
  • Set the jars on lids for 5 minutes and then set right-side up until lids pop.**.
  • **This is an heirloom recipe that uses the inversion method, which is no longer recommended by the USDA/NCHFP (National Center for Home Food Preservation) because it can affect the ability of the lid to form a good, secure seal to the jar. 1/3 c italian bread crumbs
1 tsp dried basil
3 Tbsp grated romano cheese
3/4 Tbsp garlic salt
1 tsp dried oregano

8 large banana peppers
1 lb hot Italian sausage
1 cup breadcrumbs
1 egg
1/2 cup parmesan cheese, grated
2 garlic cloves, minced
1/2 teaspoon pepper

Steps:

  • Preheat oven to 400 degrees.
  • USE RUBBER GLOVES when handling the banana peppers! I usually use disposal latex gloves since i have to go back and forth between the sausage and the peppers. Cut the tops and bases off the peppers essentially making a tube.
  • Place the peppers on a large baking sheet(with sides) in the oven with apprx 1/4 c of olive oil. I usually spread the oil on the sheet adn roll the peppers in it. Allow them to soften an blister slightly apprx 15 minutes Turn once during cooking.
  • While they are cooking, I put the hot sausage in a large frying pan and cook apprx 3/4 way done(rest will get done in oven as you don't want to dry it out too much). Let cool and crumble.
  • Remove peppers from oven and allow to cool slightly. Turn oven down to 350.
  • While the peppers are cooling, in a large mixing bowl add the egg, cooled crumbled sausage, garlic, pepper, breadcrumbs and cheese. Mix with hands.
  • Take the peppers cut lengthwise down middle. Remove the ribs and seeds with paring knife.
  • Place in apprx 4 tbsp of olive oil in 9x13 casserole dish with apprx 4 tbsp of sausage mixture each. Line up side by side until all are in pan. Top with apprx 1 c shredded mozzarella mixed with shredded(not grated) parm or romano cheeses. You can also cover with sausage spaghetti sauce if you wish. I like just the plain rolls.
  • Bake covered for apprx 20 mins or until cheese bubbly.

1/2 lb ground turkey
1/2 cup onion, chopped
1 garlic clove, minced
2 tablespoons fresh sage, finely chopped

1/2-1 cup marinara sauce

  • Preheat oven to 375 degrees F.
  • Cut top ends off of peppers, remove seeds and slice them down the middle to form two halves each and rub each with olive oil (you might want to wear gloves to prepare the peppers).
  • Combine turkey, sage, breadcrumbs, salt and pepper in medium bowl.
  • Heat small skillet over medium-high heat and saute onions until softened, about 4-5 minutes.
  • Add garlic and saute for one minute.
