CHEDDAR-STUFFED TURKEY BURGERS



Cheddar-Stuffed Turkey Burgers image

I love burgers that ooze cheese when you bite into them, but turkey burgers typically fall apart when you make them with a chunk of cheese in the center. Instead of working against the ingredients, I work with them.

Number Of Ingredients 23

For The Turkey Burgers
1 pound ground turkey
1/4 cup sharp cheddar, diced small
2 teaspoons Worcestershire sauce
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Olive oil spray
1/4 cup caramelized onions
4 ciabatta rolls or whole wheat buns
4 romaine leaves, halved
1 avocado, sliced
Pickled jalapeño rings (optional)
1/4 cup Salsa Ranch Dip
For The Salsa Ranch Dip
1/2 clove garlic, minced
3 tablespoons minced fresh chives
2 tablespoons minced fresh parsley
1/2 teaspoon minced fresh dill
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 cups 0% Greek yogurt
1 tablespoon white vinegar
1/4 cup salsa

Steps:

  • Salsa Ranch Dip
  • Combine all the ingredients in a blender or food processor and blend until smooth. (If you don't have a blender or food processor, just stir everything together in a bowl-the texture will be different but it will still be delicious.)
  • Burgers and Assembly
  • In a large bowl, combine the ground turkey, cheese, Worcestershire, salt, and pepper. Mix together with your hands until just combined-you don't want tough burgers.
  • Divide the meat mixture into four portions and roll each into a ball. Place each ball on a large plate and squish it down into a flat patty. Press your thumb into the center to create a little well. This will help the burgers keep their flat shape.Spray the grill with olive oil and heat it to medium heat. Grill the patties on direct heat for 5 minutes, covered and undisturbed. Flip once, cover, and grill for another 4 to 6 minutes, until cooked through.To assemble the burgers, smear the caramelized onions on the bottom half of each roll or bun. Top with romaine and place a cooked patty on each. Add avocado slices and jalapeño rings, if using. Smear the top halves of the buns with Salsa Ranch Dip, then place them on the burgers and serve.

1 lb lean ground turkey
1 small sweet onion, finely chopped
1/4 cup red sweet bell pepper, finely chopped
1 large garlic clove, finely chopped
1 teaspoon McCormick's Montreal Brand steak seasoning
4 tablespoons Heinz 57 steak sauce
2 tablespoons fresh basil, chopped
1/4 cup parmesan cheese, finely grated
2 ounces goat cheese
2 tablespoons olive oil
4 kaiser rolls, toasted

Steps:

  • Mix first 8 ingredients in a bowl. Form into 4 balls. Press 1/4 of the goat cheese into center of each ball and enclose; then press into patties. Pour olive oil into non-stick skillet and preheat on medium to medium/low heat. Fry burgers, covered, till done. Never cook poultry to anything less than done. Serve on Kaiser rolls with your favorite condiments.

Pat's Stuffed Turkey Burgers image

2 cloves garlic, finely chopped
1/2 Vidalia onion, finely chopped
1 1/2 pounds ground turkey
2 teaspoons Dijon mustard
1 teaspoon soy sauce
Salt and freshly ground black pepper
8 slices pepper jack cheese, cut from an 8-ounce block
1 beefsteak tomato, sliced into 3/4-inch thick rounds
Olive oil
4 large onion buns or rolls
Spicy Mayo Sauce, recipe follows
Lettuce
1/2 cup mayonnaise
2 tablespoons hot chili sauce (recommended: Sriracha)
1/2 lime, juiced

Steps:

  • Preheat grill over medium-high heat.
  • Add the garlic, onion, turkey, mustard, soy sauce, and salt and pepper, to taste, to a large mixing bowl. Mix well with a wooden spoon. Divide the turkey into 8 equal-sized balls and flatten them into patties. Lay 2 slices of cheese on 4 of the patties and cover each with another patty. Pinch the edges to seal the patties closed, so the cheese will not melt out.
  • Season the tomatoes with salt and pepper, to taste, and brush with olive oil. Grill for 2 minutes per side. Remove from the grill to a plate. Toast the buns on the grill and set aside.
  • Grill the burgers until cooked through, about 5 to 6 minutes per side. Transfer the burgers to the buns and top with Spicy Mayo Sauce, lettuce and grilled tomatoes.
  • Combine all the ingredients in a small bowl.

PEACHY TURKEY BURGER OVER GREENS WITH ENDIVE, BACON, AVOCADO, AND GORGONZOLA



Peachy Turkey Burger over Greens with Endive, Bacon, Avocado, and Gorgonzola image

A delicious bun-less grilled turkey burger infused with summer peaches, jalapeno, and onions and served over mixed greens with endive, bacon, avocado, gorgonzola, and some more peaches. I created this recipe for my blog, Celiac and Allergy Friendly Epicurean by Jackie Ourman, however, it is a fantastic meal for all and does not need to be made gluten free. You can just use regular soy and teriyaki sauces. Toss salad with mustard vinaigrette if you like.

1 tablespoon canola oil
½ red onion, chopped
½ jalapeno pepper, seeded and minced
2 cloves garlic, minced
1 pound ground turkey
1 tablespoon gluten-free teriyaki sauce (such as Kikkoman®)
1 tablespoon tamari (gluten-free soy sauce)
1 peach, halved, divided
salt and ground black pepper to taste
1 head endive, chopped
1 (5 ounce) bag spring mix lettuce
1 firm ripe avocado, cubed
¼ cup crumbled Gorgonzola cheese
4 bacon strips, cooked and chopped

Steps:

  • Heat canola oil in a skillet over medium heat; add onion, jalapeno, and garlic. Cook until onions are translucent, 10 to 12 minutes. Cool to room temperature, about 15 minutes.
  • Mix the onion mixture, ground turkey, teriyaki sauce, and soy sauce together in a bowl using a fork. Chop half the peach and mix gently into the bowl with the turkey mixture. Season with salt and pepper. Form into 4 patties.
  • Preheat grill for medium heat and lightly oil the grate.
  • Cook turkey burgers on the preheated grill until no longer pink in the center and the juices run clear, about 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Combine endive and spring mix in a bowl. Top with avocado, Gorgonzola cheese, and bacon. Serve alongside turkey burgers.

I started making these when my husband was on strike from the steel mill and ground turkey was inexpensive. My kids loved them and still do. Got the recipe from Better Homes & Gardens All-Time Favorite Ground Meat Recipes.

1 beaten egg
1/2 cup Stove Top stuffing mix
1 tablespoon dried onion
1 teaspoon chicken bouillon granule
1/4 cup water
1 lb ground turkey
1 cup Stove Top stuffing mix, crushed

Steps:

  • In bowl combine egg 1/4 cup water; stir in 1/2 cup stuffing mix, dried onion, and bouillon. Let stand for five minutes.
  • Add turkey and mix well; shape into 1/2 inch patties.
  • Coat with crushed stuffing mix.
  • Cook patties in skillet coated with oil about 10 minutes per side until thoroughly cooked.

1 cup diced Monterey Jack cheese with jalapeño chile peppers
3/4 teaspoon pepper
1 1/2 cups Old El Paso™ Thick 'n Chunky salsa
12 hamburger buns, split, toasted
12 slices tomato
Additional Old El Paso™ Thick 'n Chunky salsa, if desired

Steps:

  • Heat gas or charcoal grill. In large bowl, mix turkey, chiles, cheese, pepper and 1 1/2 cups salsa. Shape mixture into 12 patties, each about 3/4 inch thick.

1 1/4 pounds lean ground turkey breast
1/2 cup chopped roasted red peppers
1/2 cup shredded part-skim mozzarella cheese
1/4 teaspoons salt
Freshly ground black pepper

Steps:

  • Divide turkey into 4 equal sized rounds. Make 2 equal sized patties out of each round so you have 8 patties total. Sprinkle 4 of the patties with 2 tablespoons red peppers and cheese, and top with remaining patties, working the turkey around the edges to seal burgers closed. Season with salt and a few grinds of pepper. Grill or broil until cooked through, about 5 minutes per side.
