Stuffed Chicken Breast Roll-Ups image

Three recipes were combined to make these chicken roll-ups. I've made this twice for the Bunco ladies and they always rave about how wonderful it is. I'm not 100% sure about the quantities and cooking time since I'm usually making a much larger batch. I used the flat side of a metal meat pounder and was able to flatten out a piece of chicken in less than 10 whacks. If needed, I trim some of the edges to make it look a little neater.

4 boneless chicken breasts, skin removed
4 slices muenster cheese
4 slices cooked bacon
2 cups French-fried onions
1 egg, beaten
meat seasoning (preferably Gordon's Grub Rub)

Steps:

  • Preheat oven to 350.
  • Lightly grease a baking sheet.
  • Place French Fried Onions in a plastic bag and crush into small pieces.
  • Place chicken breasts between sheets of waxed paper and pound to ¼ inch thickness.
  • Season chicken breast with Grub Rub.
  • On slick/smooth side of chicken place 1 slice of cheese. (the onions stick to the rough side better).
  • Half bacon slice and place both pieces on top of cheese.
  • Roll chicken to enclose filling and secure with toothpick.
  • Coat chicken in egg.
  • Roll chicken in crushed French Fried Onion.
  • Place on prepared baking sheet.
  • Bake for 30 minutes or until cooked through.

A great last minute, easy to prepare entree. Chicken and veggies all rolled up into a cylinder, breaded, baked in the oven and topped with warm cheese sauce.

6 large boneless, skinless chicken breast cutlets, pounded to 1/4 inch thickness
1/2 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp chicken seasoning powder
1/2 c fresh mushrooms, thinly sliced
4 oz cream cheese, softened
1/4 c prepared pesto sauce
1/2 c chopped roasted sweet red peppers
1 c panko bread crumbs
3 Tbsp grated parmesan cheese
1/2 tsp paprika
2 c cheese sauce of choice

Steps:

  • 1. Preheat oven to 400 degrees F.
  • 2. Coat a 9- x 13-inch baking dish with cooking spray. Sprinkle chicken evenly with salt, pepper and chicken seasoning.
  • 3. In a medium bowl, combine cream cheese, pesto, mushrooms and red peppers. Mix well. Spread cheese mixture over chicken, roll up jelly-roll style, and secure with wooden toothpicks.
  • 4. In a shallow dish, combine Panko, Parmesan cheese and paprika. Place chicken rolls in Panko mixture, coating completely.
  • 5. Place chicken in prepared baking dish and bake un-covered for 25 to 30 minutes, or until no pink remains and juices run clear. Remove toothpicks, Serve with warmed cheese sauce on the side.

Chicken is filled with cream cheese and green onions and topped with tangy BBQ sauce and crisp bacon for a creamy, crunchy, flat-out delicious dinnertime.

4 small boneless skinless chicken breasts (1 lb.)
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
3 green onions, thinly sliced
1 Tbsp. chopped fresh parsley
1 clove garlic, minced
1/3 cup KRAFT Original Barbecue Sauce
3 Tbsp. apricot preserves
1/4 tsp. hot pepper sauce
4 slices OSCAR MAYER Bacon, cooked, chopped

Steps:

  • Heat oven to 375ºF.
  • Pound chicken to 1/4-inch thickness; place, top-sides down, on work surface. Mix cream cheese, onions, parsley and garlic; spread down centers of chicken breasts. Roll up, starting at one short end of each. Place, seam-sides down, in single layer in shallow pan.
  • Mix barbecue sauce, preserves and hot pepper sauce; brush 1/4 cup evenly onto chicken.
  • Bake 35 min. or until chicken is done (165ºF), brushing with remaining barbecue sauce mixture the last 5 min. Top with bacon.
