I've been using this recipe for the last three years and my family loves it. The original recipe calls for green peppers but if red, yellow or orange peppers are affordable in your area I highly recomend them. I live in Germany and the peppers here are pretty cheap. I guess when I go back to the states I'll just have to have a garden. I got this recipe from the Attapulgus United Methodist Church Historical Cookbook 2000. Credit goes to a Ms. Doris Cameron. 6 large bell peppers
1 cup mushroom, chopped
1 cup zucchini, sliced and quartered
1/4 teaspoon basil, dried
2 cups cheddar cheese, grated
1 lb ground beef
1/2 cup onion, chopped
1 garlic clove, crushed
1/2 teaspoon salt
1 cup cooked rice
1 (15 ounce) can tomato sauce

Steps:

  • Cut peppers in half lengthwise.
  • Remove stem, seed and membrane.
  • Wash well.
  • Cook in boiling salted water 5 minutes and drain.
  • Set aside.
  • Brown ground beef and drain off fat.
  • Add mushrooms, zucchini, onion, garlic, salt and basil to the ground beef.
  • Cook until vegtables are tender, stirring often.
  • Remove from heat and cool slightly.
  • Stir in rice and 1 1/2 cups of cheese.
  • Lightly stuff the pepper halves with mixture.
  • Place cut side up in a shallow baking dish.
  • Spoon tomato sauce over the peppers.
  • Cover and bake 30 minutes at 350 degrees.
  • Uncover: add remaining cheese and bake another 5 minutes or until cheese is melted.

5 medium green, red or yellow peppers
2 teaspoons olive oil
1-1/4 pounds extra-lean ground turkey (99% lean)
1 large onion, chopped
1 garlic clove, minced
2 teaspoons ground cumin
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
2 medium tomatoes, finely chopped
1-3/4 cups shredded cheddar-flavored lactose-free or other cheese
1-1/2 cups soft bread crumbs
1/4 teaspoon paprika

Steps:

  • Preheat oven to 325°. Cut peppers lengthwise in half; remove seeds. Place in a 15x10x1-in. pan coated with cooking spray., In a large skillet, heat oil over medium-high heat. Cook and crumble turkey with onion, garlic and seasonings over medium-high heat until meat is no longer pink, 6-8 minutes. Cool slightly. Stir in tomatoes, cheese and bread crumbs., Fill with turkey mixture. Sprinkle with paprika. Bake, uncovered, until filling is heated through and peppers are tender, 20-25 minutes.

There are so many casseroles with bell peppers in it, this has the ingredients IN the bell pepper. A great light dinner, or an appetizer.

6 green bell peppers
1 1/2 lbs lean ground beef
1/2 cup chopped onion
3/4 cup cooked rice
1 egg
2 (15 ounce) cans Italian stewed tomatoes, divided
1 teaspoon seasoning salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 teaspoon Worcestershire sauce
1 (8 ounce) package shredded cheddar cheese, divided

Steps:

  • Cut off portion of tops of bell pepper, and remove seeds, and membranes.
  • Place in roaster with salted water and boil.
  • Cook 10 minutes so they will be only partially done.
  • Drain and set aside to cool.
  • In a large skillet,, brown ground beef and onion and drain. Add rice,egg, 1 can tomatoes, worcestershire and seasonings, and simmer for 5 minutes.
  • Remove from the heat and add 1 cup cheese and mix well.
  • Stuff peppers with mixture and set upright in buttered, round baking dish(you may have to trim little slivers off bottoms of peppers so they will sit upright.).
  • Pour remaining can of tomatoes over top and around peppers.
  • Bake uncovered at 350 degrees for 25 minutes.
  • Remove from oven and sprinkle remaining cheese on top and return to oven for 10 minutes.

1-1/2 pounds ground beef
1 medium onion, chopped
1/2 teaspoon salt
2 cups shredded cheddar cheese
2-1/2 cups chopped tomatoes (3 medium)
1-1/2 cups cooked rice

Steps:

  • Cut tops off peppers and remove seeds. In a Dutch oven, cook peppers in boiling water 6-8 minutes or until crisp-tender., Meanwhile, brown beef, onion and salt in a skillet; drain. Cool slightly. Stir in the cheese, tomatoes and rice., Drain peppers and stuff with meat mixture. Place in a baking dish. Bake, uncovered, at 350° for 20 minutes or until heated through.

I made up this recipe about 30 years ago while attending Weight Watchers meetings. we were each given a list of ingredients and told to make up some recipes. We were to come back the following week with the recipe. It is meatless but very filling, and tasty. Enjoy

4 large green bell peppers, tops sliced off and seeds & veins removed. slice tops off leaving them intact with the little stem left on if possible. they should look like little hats.
8 slice(s) tosated day old white bread cut in cubes
1 large vidalia onion diced fine
2 cup(s) cubed chedar cheese
1 teaspoon(s) garlic powder
1/2 teaspoon(s) ground black pepper
1 teaspoon(s) salt
1/2 teaspoon(s) ground oregano
4 cup(s) vegetable juice such as v8
1/4 cup(s) white table wine
2 teaspoon(s) grated parmesan cheese

Steps:

  • After slice tops off peppers and removing seeds and veins set aside with the little tops of peppers.
  • put bread cubes in a bowl with the diced onion, cheese cubes, seasonings, salt, pepper, and oregano. Add 2 cups vegetable juice to the bread mixture and mix by hand. Divide the mixture evenly and fill each pepper sprinkle a little parmesan cheese on top of each pepper. pour a little drizzle (about a tablespoonful of vegetable juice on top of each pepper) cover each pepper with its own little hat. Set the four peppers in a small pot standing upright. Pour the rest of the vegetable juice in the pot around the peppers with the wine. season a little salt pepper and garlic powder over everything. sprinle another teaspoonful of parmesan over everything. Cover and put on low flame for one hour or until done. Do not distrub while cooking Enjoy
  • You can serve this with a nice crispy salad or as a side to a meat dish. Sometimes if I have lots of peppers I make a whole pot full . I will warm the next day for lunch or for a left over meal. They are better the next day.
  • Above I have four peppers two green , one red, and one yellow. I have split the red one to show the cheese and bread filling. These peppers are truly delicious. They are falling apart but so good. Enjoy
