1 pound ground beef
1 cup sliced fresh mushrooms
1 small green pepper, finely chopped
1 small onion, finely chopped
1 envelope ranch dip mix
3/4 cup sour cream
1 loaf (about 8 ounces) French bread
2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat broiler. In a large skillet, cook beef, mushrooms, pepper and onion over medium-high heat until beef is no longer pink, breaking up beef into crumbles, 8-10 minutes; drain. Stir in dip mix and sour cream., Cut French bread horizontally in half; place halves on a baking sheet, cut side up. Broil 3-4 in. from heat until lightly toasted, 1-2 minutes. Remove from broiler., Spoon beef mixture over bread. Sprinkle with cheese. Broil until cheese is lightly browned, 1-2 minutes longer. To serve, cut each into 3 pieces.

2 lb ground beef, browned
1/2 c onion, chopped
1 tsp salt
1/2 tsp garlic powder
1/2 tsp pepper
1/2 c mushrooms, chopped
1 green pepper, diced
1 1/2 c sour cream
2 French bread loaves
2 c shredded cheddar cheese

Steps:

  • 1. Mix together your first 7 ingredients and sautée until browned.
  • 2. Add sour cream.
  • 3. Cut bread loaves in half lengthwise and butter.
  • 4. Toast slightly.
  • 5. Spread hamburger mixture on top.
  • 6. Sprinkle 1 cup shredded cheddar cheese on top.
  • 7. Enjoy!

1-1/2 pounds ground beef
1 medium onion, chopped
1/2 cup sliced fresh mushrooms
6 to 8 bacon strips, cooked and crumbled
2 garlic cloves, minced
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon paprika
1/8 teaspoon ground nutmeg
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup sour cream
8 hamburger buns, split

Steps:

  • In a large cast-iron or other heavy skillet, cook beef, onion and mushrooms over medium heat until meat is no longer pink; drain. Add bacon and garlic. Combine the flour, salt, paprika and nutmeg; gradually stir into beef mixture until blended., Stir in soup (mixture will be thick) and heat through. Add sour cream. Cook until heated through, stirring occasionally (do not boil), 3-4 minutes longer. Serve on buns., Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add water if necessary. Serve on buns.

1 cup sour cream

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add bacon and garlic.

Great served with a tossed salad. A real guy pleaser if you serve it with a stein of cold beer! NOTE: Times shown below do not include marinating time. DO marinate this overnight -- it really makes for a great tasting steak sandwich!!

1 cup beer (preferably dark, but any beer will do)
1/3 cup vegetable oil
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper, course ground
4 1/2 lbs flank steaks
2 tablespoons butter
1/2 teaspoon paprika (we use Smoked Spanish Paprika)
4 cups sliced onions
12 ounces sour cream
1 teaspoon horseradish (more or less, to taste)
12 slices French bread (Thick cut, we buy whole loaves and slice, on the diaganol, into 3/4-inch slices)

Steps:

  • Combine beer, oil, garlic powder, salt and pepper. Place Flank Steak in marinade. (A gallon Ziploc bag works great). Refridgerate overnight, turning occassionally.
  • In a skillet, melt butter; add paprika and a dash of salt, then add onions and saute until tender. In a small saucepan, mix sour cream and horseradish and heat on low until sour cream is warm.
  • Drain steak and barbeque (or broil) 5 - 7 minutes per side for medium rare. Cover and let rest for 10 minutes before slicing.
  • Toast French Bread slightly. (I toast them under the broiler with door slightly open , but you have to WATCH carefully. Don't think you can do anything else, or you'll forget about them and have burned toast!).
  • Slice meat very thin across the grain, and on an angle. Pile meat on toast, cover with onions, some sour cream and a sprinkle of paprika, then top sandwich with other toast.

I cook for one anymore and love to find ways to 'morph' recipes into a new and different meal. This dish uses leftovers and is really satisfying. I've only made it with leftover roast beef, but I imagine that leftover hamburger would work as well.

4 oz mushrooms, sauteed , or canned, drained
1 1/2 c leftover beef gravy
1/2 c sour cream
8 thick slices cooked roast beef
4 slice bread, toasted if desired

Steps:

  • 1. If using fresh mushrooms, saute for about 4-5 minutes until they release their moisture and start to turn lightly brown. Or, if using canned mushrooms, drain.
  • 2. In a large skillet over medium heat, stir mushrooms (fresh or canned) and gravy until hot.
  • 3. Stir in sour cream until smooth.
  • 4. Add roast beef and cook until heated through.
  • 5. Top each slice of bread with roast beef slices and some gravy and serve open-faced.

I ran across this wonderful recipe several years ago in a Taste of Home magazine (I think). I made a few changes to suit our taste and my family and friends love them. I have served them many times to many people and they always ask for the recipe. I usually serve a tossed salad as a side. Leftovers heat up well in the big oven...

Number Of Ingredients 8

1 lb ground beef
1/4 c onion, chopped
1/2 tsp salt
1/2 tsp garlic powder (i use more)
1/4 tsp black pepper
1 c sour cream, plus more
1 1/2 c shredded cheese, your choice
1 box garlic texas toast

Steps:

  • 1. Brown beef & onion in skillet, drain & leave beef in skillet. Add salt, garlic powder & pepper.
  • 2. Remove skillet from heat and add sour cream.
  • 3. Spoon good amount (use your own judgement) onto the Texas toast. Sprinkle cheese (again, use your own judgement) over beef mixture.
  • 4. Bake @ 350 for approximately 15-20 minutes or until bread edges begin to lightly brown.
  • 5. Serve with a dollop of sour cream on top. You can also sprinkle diced tomatoes &/or bell peppers on top. Sauted mushrooms would also be good.
