STARS-AND-STRIPES GELATIN

Nonstick cooking spray
3 3-ounce boxes blue gelatin
4 1/4-ounce packets unflavored gelatin
4 cups boiling water
4 1/4-ounce packets unflavored gelatin
1 cup cold water
4 cups boiling water
4 3-ounce boxes red gelatin
2 1/4-ounce packets unflavored gelatin
1/2 cup cold water
1 14-ounce can sweetened condensed milk
11/2 cups boiling water

Steps:

  • We used a 9-inch-square, 2 1/4-inch-deep pan for this recipe. If your pan is not as deep, cut out smaller stars and make one less stripe.
  • Make the blue stars: Lightly coat a 9-by-13-inch pan with cooking spray. Stir the blue gelatin, unflavored gelatin and 4 cups boiling water in a large bowl until dissolved. Pour into the pan. Refrigerate until firm, at least 3 hours.
  • Loosen the edges of the blue gelatin with a knife and turn out onto a cutting board. Cut out about 36 stars using a 2-inch star cutter. Refrigerate the stars until needed. Lightly coat a 9-inch-square, 2 1/4-inch-deep pan with cooking spray.
  • Make the first red layer: Sprinkle 1 packet unflavored gelatin over 1/4 cup cold water in a bowl; let stand 1 minute. Add 1 cup boiling water and 1 box red gelatin. Stir to dissolve, pour into the square pan and refrigerate until just set, 15 minutes.
  • Meanwhile, make the white gelatin: Sprinkle the unflavored gelatin over 1/2 cup cold water in a bowl; let stand 1 minute. Combine the condensed milk and 1 cup boiling water in another bowl; stir in the gelatin. Stir in the remaining 1/2 cup boiling water. Let cool 15 minutes.
  • Remove the pan of red gelatin from the refrigerator. It should be just set but not completely firm so the layers will stick to each other. Pour 1 cup of the white gelatin onto the red layer. (Keep the remaining white gelatin at room temperature.)
  • Immediately arrange the blue stars in the liquid white gelatin in 3 evenly spaced rows, pressing the stars against each other and leaving a 1-inch gap between the rows. Carefully transfer to the refrigerator and chill until the white layer is just set, about 15 minutes.
  • Meanwhile, make another red layer (repeat Step 3). Let the red gelatin cool, stirring occasionally, 15 minutes. Gently pour over the back of a spoon into the pan (this prevents damage to the layer below). Refrigerate until just set, 15 minutes.
  • Add another white layer: Stir the remaining white gelatin until smooth. Gently pour 1 cup of the white gelatin over the back of a spoon onto the red layer; refrigerate until just set, about 15 minutes.
  • Meanwhile, make the third red layer (repeat Step 3). Let the gelatin cool, stirring occasionally, 15 minutes. Gently pour over the back of a spoon onto the white layer. Refrigerate until just set, 15 minutes.
  • Add the last white layer: Stir the remaining white gelatin until smooth. Pour over a spoon onto the red layer; chill until just set, 15 minutes. Make the final red layer (repeat Step 3); let cool, stirring occasionally, 15 minutes, then pour over a spoon onto the white layer. Chill until completely set.
  • Loosen the edges of the gelatin with a knife and turn out onto a parchment-lined baking sheet; invert right-side up onto a cutting board. Trim the two opposite sides so the stars are visible.
  • Slice between each row of stars to create 3 rectangles (use the stars to gauge where to cut). Cut each rectangle into pieces.

RIBBAND JELLY

Raspberries, optional
1 pound fresh ripe raspberries, rinsed
Heaping 1/3 cup superfine sugar
Juice of 1/2 lemon
5 sheets gelatin, each cut into pieces
4 sheets gelatin, each cut into pieces
1 tablespoon superfine sugar
Zest of 1/2 lemon
1 3/4 cups whole milk

Steps:

  • Place a 4-cup mold in a freezer until well chilled.
  • Make the raspberry jelly: Place raspberries and sugar in a heatproof bowl. Cover bowl with plastic wrap and place over (but not touching) simmering water. Let heat release juices from berries for about 30 minutes.
  • Place a fine mesh sieve over a large liquid measuring cup. Strain berry mixture into measuring cup. Add lemon juice and enough water to berry mixture to make 2 cups.
  • Place gelatin in heatproof bowl. Add enough berry mixture to just cover gelatin; let stand 10 minutes. Place bowl over (but not touching) simmering water; stirring occasionally, until gelatin has melted. Stir in remaining berry mixture and strain through a fine mesh sieve into a liquid measuring cup or pitcher; set aside.
  • Make the blancmange jelly: Place gelatin in a heatproof bowl and add 2 tablespoons water, sugar, and lemon zest; let stand for 10 minutes. Place bowl over (but not touching) simmering water and heat until gelatin has melted.
  • Remove bowl from heat and stir in 1/4 cup plus 2 tablespoons water and milk. Strain through a fine mesh sieve into a liquid measuring cup or pitcher.
  • Remove mold from freezer. Pour a 1/2-inch layer of blancmange jelly into mold and transfer to refrigerator to set, about 15 minutes. Repeat process, alternating with raspberry jelly. When all layers are complete, transfer to refrigerator and let chill for 2 hours.
  • Moisten a serving plate with water. To unmold, set the mold in a bowl filled with warm water until the jelly around the edge has melted just slightly (this can take anywhere from 2 to 30 seconds). Invert mold onto prepared serving plate. Serve immediately with whipped cream and raspberries, if desired, or refrigerate until ready to serve.

5 different coloured small packages Jello gelatin
2 1/2 cups vanilla yogurt
boiling water
fresh fruit

Steps:

  • Decide the order of colours you want. Make one jello at a time.
  • For each jello, dissolve it in 1 cup boiling water and stir until it is all dissolved.
  • Mix in ½ cup of yogurt and a little less than ½ cup of water. Stir this until it is well blended.
  • Pour one cup of this into a glass bowl and place in the fridge to set(or freezer if you want it faster). Leave the rest in cup but don't refrigerate it.
  • Repeat with the next jello. Pour 1 cup of it onto the top of the first layer once it has set. Reserve the rest.
  • Keep repeating with the rest of the jellos until you have 5 layers in your bowl.
  • Now you have 5 stripes which have set and 5 remaining cups of unset jellos. (If they set up, just microwave them for a couple of seconds.
  • Repeat the order of layers.
  • If desired, top with fresh fruit.

This is my favorite dessert. I got this recipe from my mother-in-law. It has just the right amount of sweetness. The crust gives this the perfect crunch. This is a guaranteed hit at a dinner/party or just at home. This recipe can be easily doubled or halved. Everyone will want seconds so be sure to make copies of this recipe or you may end up making it for all future dinners. Enjoy!

1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/3 cup melted butter or 1/3 cup margarine
1 (8 ounce) package cream cheese, softened
1/4 cup sugar
2 tablespoons milk
3 cups thawed whipped topping, divided
2 (3 1/2 ounce) packages chocolate instant pudding
3 1/2 cups milk

Steps:

  • For Crust: combine graham cracker crumbs, sugar and butter.
  • Press firmly into bottom of 13-by-9-inch pan.
  • Chill 15 minutes.
  • For Filling: Beat cream cheese, sugar and 2 tablespoons milk until smooth.
  • Fold in 1 1/2 cups thawed whipped topping.
  • Spread mixture over prepared crust.
  • Prepare instant pudding and pie filling mixes as directed on package, using 3 1/2 cups milk.
  • Pour over cream cheese layer.
  • Chill several hours or overnight.
  • Before serving, spread 1 1/2 cups thawed whipped topping over pudding.
  • Note: A layer of chopped fruit that complements the pudding flavor can be placed on top of the crust before adding the cream cheese mixture.

6 cups boiling water, divided
2 packages (3 ounces each) orange gelatin
2 envelopes unflavored gelatin
1/3 cup cold water
1-1/2 cups white grape juice
1 carton (12 ounces) frozen whipped topping, thawed

Steps:

  • In a bowl, dissolve the lime gelatin in 3 cups boiling water. Pour into an 8-in. square dish coated with cooking spray. In another bowl, dissolve orange gelatin in remaining boiling water. Pour into another 8-in. square dish coated with cooking spray. Refrigerate for 4 hours or until very firm., In a small saucepan, sprinkle unflavored gelatin over cold water; let stand for 1 minute. Add grape juice. Heat over low heat, stirring until gelatin is completely dissolved. Pour into a large bowl; refrigerate for 45 minutes or until slightly thickened. Fold in whipped topping., Cut green gelatin into 1/2-in. cubes and orange gelatin into 1-in. cubes. Set aside 8-10 cubes of each color for garnish.   • Strawberry gelatin: Toss 1 pint hulled and quartered strawberries with 2 tablespoons sugar. Let stand 1 hour, then puree in a blender. Sprinkle one 1/4-ounce packet gelatin over 1/4 cup water in a bowl; let stand 1 minute. Heat the strawberry puree in a saucepan over medium heat until hot; whisk into the gelatin mixture until smooth. Cool to room temperature.
  • Lime gelatin: Combine 2 tablespoons each lime juice and water in a bowl and sprinkle one 1/4-ounce packet gelatin on top; let stand 1 minute. Combine 3/4 cup boiling water and 1/2 cup sweetened condensed milk in a bowl, then whisk in the gelatin mixture until smooth. Cool to room temperature.
  • Melon gelatin: Puree 4 cups honeydew melon chunks and 2 tablespoons each water and sugar in a blender. Strain through a fine-mesh sieve without pressing the solids. Sprinkle two 1/4-ounce packets gelatin over 1/2 cup of the juice in a bowl; let stand 1 minute. Heat the remaining 1/2 cup juice in a saucepan over medium heat. Whisk into the gelatin mixture until smooth. Cool to room temperature.
  • How to assemble: Spray a 9-by-5-inch loaf pan with cooking spray, wiping out the excess. Pour in 1/2 cup strawberry gelatin; refrigerate 20 minutes. Repeat with 1/2 cup lime gelatin, 1/2 cup melon gelatin, 1/2 cup lime gelatin and 1/2 cup strawberry gelatin, chilling between layers. Refrigerate the finished mold until fully set, at least 3 hours or overnight.
  • How to unmold: Bring 2 inches of water to a simmer in a wide saucepan. Run a butter knife or offset spatula around the top edge of the gelatin. Dip the bottom of the pan in the hot water for about 10 seconds, then invert the pan onto a platter. (Redip if it doesn't release after a minute.) Cut into squares.

This fun, red-and-white holiday treat features layers of flavored gelatin topped with whipped cream and crushed peppermints.

2 boxes (4-serving size each) Jell-O™ cherry-flavored gelatin
2 1/2 cups hot water
7 oz (half 14-oz can) sweetened condensed milk (not evaporated)
1 envelope unflavored gelatin
1 cup hot water
Whipped cream, if desired
4 crushed peppermints, if desired

Steps:

  • In large bowl, mix cherry gelatin and 2 1/2 cups hot water until well combined. Cool to room temperature.
  • Pour 1/4 cup cherry gelatin into each of 4 (1-cup) glass containers. Place glasses on small tray; refrigerate about 20 minutes.
  • Meanwhile, in medium bowl, mix condensed milk, unflavored gelatin and 1 cup hot water until well combined.
  • When cherry layer is set, slowly pour 1/4 cup milk mixture on top of cherry layer in each glass. Refrigerate about 20 minutes.
  • When milk layer is set, slowly pour 1/4 cup cherry gelatin on top of milk layer in each glass. Refrigerate about 20 minutes.
  • To serve, garnish with whipped cream and crushed peppermints.
