INDIVIDUAL ITALIAN MEAT LOAVES
These little meat loaves from Better Homes and Gardens anyone can cook are a nice cheese change from your everyday meatloaf.

Steps:
- Preheat oven to 400°F In a medium bowl combine egg, 1/4 cup of the pasta sauce, the bread crumbs, salt, and pepper. Add ground beef; mix well.
- Cut mozzarella cheese block into four 2 1/4x3/4x1/2 inch logs or cut each string cheese stick in half crosswise. Wrap a lice of prosciutto around each cheese log. Shape one-fourth of the beef mixture around each cheese log to form a loaf. Flatten the four meat loaves to 1 1/2 inches thick and place in a shallow baking pan.
- Bake for 20 minutes or until internal temperature registers 160 F on an instant-read thermometer. Meanwhile, prepare fettuccine according to package directions; drain well and keep warm. In a small saucepan heat remaining pasta sauce over medium heat until bubbly.
- Arrange meat loaves over hot fettuccine. Spoon sauce over top and sprinkle with shredded parmesan cheese.
POLKA DOT MEATLOAF

Steps:
- Heat oven to 375°F. In large bowl, mix ground beef, 1/4 cup of the ketchup, the bread crumbs, Worcestershire sauce, salt and egg. Press 1/3 of mixture in bottom of ungreased 8x4-inch loaf pan.
- Place 2 pieces of the string cheese lengthwise and evenly spaced over beef mixture, with one end of the cheese about 1/2 inch from one end of pan. Cut 2 pieces of string cheese in half crosswise. Place 2 half pieces on beef mixture so cheese extends full length of pan. Press cheese into beef mixture.
- Top with half of remaining beef mixture; pat evenly in place. Top with remaining string cheese in 2 rows; press in. Press remaining beef mixture over cheese. Press ends and edges of beef mixture well to seal in cheese; smooth top.
- Bake 45 minutes. Meanwhile, in small bowl, mix remaining 1/4 cup ketchup, the mustard and brown sugar.
- Remove meatloaf from oven. Spoon juices from meatloaf; spoon ketchup mixture evenly over top.
- Return to oven; bake 30 to 45 minutes longer or until thermometer inserted in center of meatloaf reads 160°F. Let stand 15 minutes before cutting into slices.

Steps:
- in bowl, combine 1/2 c spaghetti sauce, egg, bread crumbs, galric and rosemary.
- Crumble meat over mixture and mix well.
- Presss half into greased 8x4x2" loaf pan.
- Place two pieces of cheese, side by side, near one end of loaf.
- Cut the remaining piece of cheese in half.
- Place side by side on opposite end of loaf.
- Top with remaining meat mixture.
- Press down firmly to seal.
- Bake uncovered at 350 for 1 and 1/4 to 1 and 1/2 hours or until meat is no longer pink and a meat themometer reads 160°F
- Drain.
- Drizzle with the remaining spaghetti sauce.
- Bake 10 minutes longer.
- Let stand for 10 minutes before slicing.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine the beef, pork, soup mix, eggs, bread crumbs, pepper and water. Stir in 1/2 cup of the cheese. Mix well and spread half of mixture into a 9x5 inch loaf pan. Spread remaining 1 1/2 cups cheese over meat loaf mixture. Top with remaining half of meat loaf mixture.
- Bake in preheated oven for 60 minutes. Let cool 10 to 15 minutes before serving.

- In a large bowl, combine the first 10 ingredients. Crumble beef over mixture and mix well. On a large piece of heavy-duty foil, pat beef mixture into a 14x10-in. rectangle. Spread sour cream to within 1/2 in. of edges. Sprinkle with cheese and olives. , Roll up, jelly-roll style, starting with a short side and peeling away foil while rolling. Seal seam and ends. - Preheat an oven to 375 degrees F (190 degrees C).
- Combine ground beef, eggs and 2 tablespoons of ketchup in a large bowl. Mix well, then add bread crumbs, Parmesan cheese, garlic powder, salt, oregano, basil, pepper, and onion. Set mixture aside. Line the bottom of a 9x13 inch pan with bacon, widthwise. Place half of the meat mixture across the top of the bacon. Lay 3 of the 4 pieces of Cheddar cheese across the center of the meat, lengthwise. Cover the cheese with the second half of the meat mixture and mold the meat into a loaf shape. Pull the ends of the bacon up and around the loaf. Spread 1 tablespoon of ketchup thinly over the loaf.
- Bake in the preheated oven until no longer pink in the center, about 60 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove from the oven.
- Cut the final piece of Cheddar cheese into slices and place on top of the meat loaf. Return the meat loaf to the oven and continue baking until the cheese is melted, about 5 minutes. Remove from the oven and allow the meat loaf to rest for 5 minutes before serving.
